Menu Plan July 26

From last week’s menu, I really enjoyed the new recipes I made. I made Kalyn’s Tomato, Cucumber and Avocado Salad twice. The first time I made it as close to the recipe as possible. It was very good, but thought it needed a little adjustment for our tastes. So, I cut back on the cucumber, tomato, and lime juice a little, and added in about a tsp of cumin. We thought it was great.

I also enjoyed Amy’s Hummus recipe (Not Just Any Old Hummus). My husband isn’t really a big fan of hummus, though I’m winning him over with plenty of garlic flavor. He liked this recipe, but has requested trying it with some other flavors added to it. We may have to do some experimenting….

This week Cheryl is hosting the Gluten-Free Menu Swap. The theme ingredient is almonds. My husband doesn’t care for eating almonds, so I don’t often add it to salads or recipes. I do, however, use almond milk as often as possible as a replacement for cow’s milk. I’ve also been trying almond meal in recipes. Some have turned out great, some not so great. I’m still experimenting with that. I think it’s time to try some other recipes: like Elana’s recipe for Banana Cream Pie Cupcakes (with almond flour) and Cheryl’s recipe for Easier Easy Almond Cookies (with almond butter).

Celiac Family’s Menu This Week:

MondayChicken Tacos
Slow-cooking chicken with Tex-Mex flavors for making yummy shredded chicken. I’ll serve it with corn tortillas and crispy corn taco shells. And, of course, all the fixings: lettuce, shredded cheese, tomato, avocado, olives, etc.

Tuesday – Pork Chops
Grilling pork chops and serving with mashed potatoes and Berry Fruit Salad.

WednesdayEating Out
It’s looking like a busy evening, so we’ll eat out tonight.

Thursday – Beef and Vegetable Kabobs
Grilling skewers stacked with cubes of sirloin and vegetables. Serving with basmati rice.

Friday – Mexican Pizza
I’m thinking that Monday’s leftovers on top of a cheese bread pizza crust sounds good. I’ll serve it with a simple tossed salad.

Saturday – Tilapia
Baking tilapia fish with lemon and basil. I’ll serve it with green beans and rice noodles.

Sunday – Leftover Buffet
Cleaning out the refrigerator so everyone can choose their own meal of leftovers.

Menu Plan July 19

It was a busy weekend for us, with two birthday celebrations. We had lots of fun times with family and friends, but I feel like I’m still recovering from all the excitement. :) I think all the leftovers in the refrigerator will help quicken the recovery.

Renee is hosting the Gluten-Free Menu Swap this week with cucumbers as the theme ingredient. Perfect for this time of year, don’t you think? I added cucumber to my Seven-Layer Salad last week. If the cucumbers have lots of seeds and juice in them, I’ll remove them as I’m chopping them up so the salad doesn’t get too runny. For an alternative to sandwiches, I also like to cut cucumber sticks to put in spring rolls with cheese and chicken strips. MondayLeftovers!
We have lots of yummy leftovers in the refrigerator this week.

TuesdayEgg & Hashbrown Casserole
Making a casserole with eggs, hash browns, bacon, cheese, green chiles, and a little green onion. I’ll serve it with Fruit Kabobs.

WednesdayParmesan Chicken Nuggets
Chicken breasts cut up and breaded with gluten-free bread crumbs and Parmesan. Then, baked until crunchy on the outside. I’ll serve it with tater tots and a Kalyn’s Tomato, Cucumber and Avocado Salad.

Thursday – Salmon with a Balsamic Glaze
I’ll bake salmon with balsamic vinegar and serve with basmati rice.

Friday – Popcorn!
We’ll be at an office picnic most of the day, so for dinner we’ll just eat whatever is left in the frig. I’ll probably put together a tray of vegetables and hummus (Not Just Any Old Hummus) to serve with freshly popped popcorn for movie night at home.

Saturday – Beef and Broccoli Stir Fry
Marinating sirloin strips and stir frying with broccoli, mushrooms, garlic, onions, etc. Serving with leftover rice.

Sunday – Cilantro Lime Shrimp
Shrimp quickly cooked on the stove with cilantro and lime, for a quick and easy dinner. I’ll serve it over rice noodles.

Menu Plan July 12 – Salads!

menu-swap-009I missed last week’s menu plan because of summertime travels. I’m glad to be back to it this week, and the family has been eager to help by giving me their requests. The hot weather has us all thinking of eating cool salads. So, I decided to host the Gluten Free Menu Swap this week with a theme of salads. Here are some of our favorites that didn’t make it into our menu this week:

Celiac Family’s menu this week:

Monday – Grilled Chicken
My son’s request for the week is grilled chicken breasts. I’ll serve them with a Red Potato and Green Bean Salad.

Tuesday – Cheeseburgers
My daughter’s usual request is cheeseburgers without the bun and French fries. I’ll make Broccoli Winter Slaw to serve with it.

Wednesday – Seven Layer Salad
My husband requested a Seven Layer Salad, which I usually make with diced ham, shredded cheese, peas, chopped lettuce, spinach, chopped celery, and a creamy dill dressing.

Thursday – Indian Chicken
My husband also requested an Indian dish. So, I’ll try a Jalfrezi Curry cooking sauce my husband found. I usually prefer to cook with the curry pastes over the sauces, but the sauces make dinner very quick and easy. I’ll serve it over jasmine rice.

Friday – Leftovers
Cleaning out the refrigerator to make room for a birthday cake I’ll be making.

Saturday – Pizza
We’ll make a cheese and pepperoni pizza using the cheese bread recipe for the crust. I’ll have the kids help me make a Berry Fruit Salad to serve with it.

Sunday – Baby Back Ribs
We’ll be making Alton Brown’s recipe for Baby Back Ribs and serving with Nancy’s Tropical Black Bean Salad.

Is it the timing or the salad theme? Not sure. But we’ve got some great gluten-free menus linked up this week!

  • Welcome Susan from I Love Nectarines! She has a corn and asparagus salad on her menu this week, as well as some granola bars that look good. The Sichuan-style egglplant and gujerati green beans sound good, too!
  • Cheryl at Gluten Free Goodness says she’s been big into salads this summer, too. She has plenty of fresh goodies from her garden and the organic produce she picks up at Wegmans to make them. This week she’ll be making Quinoa Broccoli Salad and a Mache salad with tomatoes, avocado and pine nuts.
  • Lisa at Extraordinary Life is also joining us this week. She’s serving salad with lasagna this week, and making a slaw to serve with BBQ Chicken Thighs. I see that she is also a fan of Alton Brown’s recipes. She is making his recipes for BBQ Chicken, Pork Loin and Beef Tacos.
  • You’ll find lots of salad ideas at Beyond Rice and Tofu this week. Renee has Italian Rice Salad and Mediterranean Salad on her menu this week. She also gives links to some others that sound great: Quinoa and Black Bean Salad, Wild Rice Tabouli, and Taco Salad.
