The Gluten Free Menu Swap Roundup is here this week, and the theme is nuts. I’ve got some great menu ideas with nuts linked below, but I’m starting with links to some snacks and treats. You’re bound to find something yummy to make for a Super Bowl party, or maybe even Valentine’s Day. Check out all these tasty ideas I found from some of my favorite gluten-free bloggers.

For my menu this week, I’m starting with some typical Celiac Family meals, and then trying three new ones with nuts. It may be a little ambitious trying three new recipes on my kids in one week, but I’m going to give it a try. Thursday – Pistachio Pork Tenderloin
I’ve been wanting to try this amazing recipe for a while now. Carol’s recipe calls for rolling the tenderloin in ground pistachios after stuffing it with a pistachio, cranberry and goat cheese mixture. Can’t wait to give it a try.
Friday – Almond Tilapia
Gina at Moneywise Moms serves this tilapia dish with a broccoli slaw, which I just might have to try, too.
Saturday – Grilled Chicken with Cashew Sauce
I got my husband Alton Brown’s book Good Eats 2: The Middle Years for his birthday this month. I’m planning to try the simple recipe for Cashew Sauce to serve over grilled chicken.
Sunday – Leftovers
Gluten Free Menu Swap Roundup
Cheryl at Gluten Free Goodness likes to use nut butters in a lot of her baking and cooking, such as Nanaimo Bars Redux, Banana Mac Chip Cookies, and Sniffle Stew. For dinner this week, she’s having Baked Rosemary Chicken and Sweet & Spicy Moroccan Stew. Check it all out on her menu plan this week.
This week, Michelle at Gluten-Free Smiles shares a recipe for Sour Cherry Fudge with Pecans and Macadamia Yoghurt. She also has some very tempting meals on her menu this week, including Dairy-free Butter Chicken, Rice Wraps with Ginger Peanut Sauce, and Amy’s Turkey Burgers.
Wendy says her family doesn’t eat a lot of nuts at Celiacs in the House. But don’t let that stop you from checking out her menu, which should definitely keep her family warm through the winter storm hitting this week. You’ll find Caribbean Fisherman’s Pie, Winter Vegetable Cobbler, Beef and Black Bean Chili, and more hearty meals.
Angela at Angela’s Kitchen has been busy making gluten-free Girl Scout Cookies – Thin Mints, Trefoils, and Do-Si-Do’s! They look amazing. And she’s now on a quest to make the best flaky biscuits gluten-free and dairy free. Can’t wait to see the results from that. For meals this week, Angela is making Coconut-Spiked Pork with Quinoa and Peanuts, California Turkey Burgers, and more.

This week, Angela of Angela’s Kitchen is hosting the Gluten Free Menu Swap. I love that she choose slow-cooking as the theme. I often use the slow-cooker to make dinners easier on nights of after-school activities. I can get the dinner started in the slow-cooker when it’s convenient during the day, and then finish up when we get home.
Almost every month, the most popular post on CeliacFamily.com is my recipe for slow-cooked Mexican Chicken. It is so simple and easy, but so tasty and so versatile, too. I use the shredded chicken for tacos, rice bowls, enchiladas, enchilada soup, tostadas, pizza, quesadillas, Southwestern chicken salad, etc. And yet, I don’t actually have it on my menu this week.
Instead, I’ve got my slow-cooked pulled pork on the menu for Friday. It’s the same idea as the chicken recipe, but with different ingredients. It also makes a huge batch. (It’s hard to find a small pork shoulder!) But, that makes it great for parties or for freezing portions for future dinners. Happy New Year! I know I’m a little late, but I’m finally back. I didn’t intend to take such a long break between posts, but I guess I really needed it. I enjoyed time with family, and managed to get a little rest in between all the holiday activities.
I didn’t want another week to go by without posting a menu plan. But, since I am still trying to get those Christmas decorations put away, I’ve changed this week’s format a little to make it faster for me to post.
Wendy at Celiacs in the House is hosting the Gluten Free Menu Swap this week. She is cooking with lots of Winter Vegetables, so check out her menu plan this week for the roundup of winter vegetable recipes and menu ideas. I think I’m going to have to try Wendy’s tips for roasting root vegetables this week. Any easy evening of cooking: I’ll pop Bell & Evans frozen chicken tenders into the oven. I’ll serve them with French fries and steamed broccoli for a kids’ favorite meal.
