Menu Plan April 18

Last week’s plan of quick and easy meals worked pretty good, even though I didn’t actually make everything on the menu. Fortunately, we had plenty of leftovers to get us through the week. The best part was that the quick and easy meals gave me time to finish some projects and get started on some spring cleaning.

Now for this week. The kids are on Spring Break, my parents are visiting, we celebrate my daughter’s birthday with ALL her friends, and we celebrate Easter with the family. Looks like another busy week. I think I left out play dates, gymnastics, Eater activities, etc. Wow, that list looks long. I guess I better get busy, and keep the menu easy this week, too!

Cheryl at Gluten Free Goodness is hosting this week’s Gluten-Free Menu Swap. She chose a theme of sugar-free delights. Although I keep playing around with the idea of taking sugar out of our diets, I can’t quite commit to eliminating it completely. Instead, I’ve been working on reducing the amount of sugar in recipes. It’s a start, right? I have a Banana Coffee Cake that I revised with less sugar. I’ve also been working on a recipe for cinnamon rolls that is gluten-free, dairy-free, egg-free, and contains less sugar. I’ve been using raw Coconut Crystals to replace the brown sugar. So far, no one has complained, or even noticed the recipes have less sugar. And, for the ultimate in sugar-free delights, I always turn to fresh fruit! The Berry Fruit Salad I make does call for 2 Tbsp of sugar, but it’s really the balsamic vinegar that brings out the wonderful flavors of the fruit. I think I’ll trying using the Coconut Crystals for that recipe, too.

Tuesday - Red Potato & Green Bean Salad, Grilled Chicken

Wednesday - Pork Tenderloin with Wild Rice Salad

Thursday - Flank Steak, Potato Wedges, Green Salad

Friday - Corn & Black Bean Salad, Cilantro Lime Shrimp

Saturday – I’ll be preparing food for Sunday’s Easter celebration. So dinner will be leftovers or maybe Boston Market.

Sunday – For our family Easter Celebration, we’ll be preparing Spinach Salad, Mashed Potatoes, and Carrot Cake.

Menu Plan April 11

My schedule was so busy and hectic last week, that I had trouble following my menu plan. In fact, I had trouble even getting to the grocery store. So, this week, I’ve decided to go back to the quick and easy meals that I know will work for us. Hopefully, that will help me get caught up on all the chores that got neglected last week.

Angela at Angela’s Kitchen is hosting the Gluten Free Menu Swap this week. Her theme is Greens. Spinach has become one of my son’s favorite things to eat. He’ll eat it raw, right out of the fridge. So, greens for our family this week will include a Spinach Salad and Kale Chips. Check out what other gluten-free menu planners are eating this week at Angela’s Kitchen.

Monday - Shredded Chicken Tacos with lettuce and tomato

Tuesday - Beef Kabobs and Spinach Salad

Menu Plan April 4 – Citrus

You may think that it’s a little early in the season to be thinking of citrus fruit, but that’s the theme for this week’s Gluten-Free Menu Swap. If you’re like me, you use citrus juices and zest throughout the year to add to recipes. I’ve listed a few that I’ve been thinking about for Easter. I have even more recipes with citrus juices in my menu plan below. And don’t forget to check below my menu for this week’s roundup of other gluten-free menu plans.

Saturday – We really enjoyed the Socca Pizzas from Amy’s new cookbook: Simply Sugar and Gluten-Free. So, I think we’ll make them again. Pepperoni, Mozzarella and black olives seems to be the family favorite.

Sunday – Gotta love those easy leftover nights. :)

Gluten Free Menu Swap Roundup

Wendy at Celiacs in the House says she bought a bag of lemons this week to make a lemon garlic dressing for salads. She’s also using lemon juice this week to make homemade ricotta cheese. Wendy has an exciting menu this week, starting with the Baked Coconut Curry Chicken and ending with Salmon with Brussels sprouts and caramelized red onion and balsamic vinegar.

There are lots of good ideas at Ginger Lemon Girl this week with a full menu of gluten-free meals, including breakfast and lunch ideas, too. Carrie also offers a list of her Sunday Night Pre-Meal Preparations for the week’s meals, and directions for making a Quick Pantry Casserole. So what else is she eating this week? Roast Chicken, ground Turkey Tacos, ground Turkey Chili, Chicken Stir-fry, and more.

I’m not the only one thinking about lemons. Angela at Angela’s Kitchen is thinking about them, too. She shares a newsletter link for her recipes for gluten-free Lemon Bars and Chicken with Apricot Sauce. Both look fabulous, but I’m also thinking about the Pork and Pineapple kabobs she has on her menu this week. Spinach burgers and Chicken Thai Pizza rounds out Angela’s menu this week.

Like Ginger Lemon Girl, Michelle at Gluten Free Smiles offers lunch and breakfast ideas along with her dinner plan menu. Fresh orange juice, Sweet Lime Hummus, and Wendy’s Kale Pesto and Feta Shells are just a few. For dinners, Michelle’s planning on Kale Avocado Salad over Quinoa, Chicken Fajitas, Steak and Spinach Salad, and more.
