Menu Plan July 18

Light and easy pretty much describes most of our meals during the summer. And that is the theme for this week’s Gluten Free Menu Swap. Renee at Beyond Rice and Tofu is hosting the swap, so be sure to check out what she has planned for meals this week.

A few of my favorite ideas for keeping the cooking heat out of the kitchen during the summer:

  • Leftovers: Cook plenty so you can quickly heat up leftovers in the microwave later in the week.
  • Rely on salads: Fresh fruits and vegetables and even chilled cooked meats will help you stay cooler.
  • Use smaller, or thinner, cuts of meat: They will cook up in a matter of minutes on a hot grill!
  • Use your slow cooker outside: Why not place it on your patio or deck to keep the cooking and heat outside?

On Celiac Family’s Menu This Week:

Tropical Black Bean Salad

Beef Kabobs

Seven-Layer Salad

Monday – Fajitas with small strips of chicken, onions and peppers cooks quickly. I’ll serve them with corn tortillas and rice.

TuesdayPulled Pork served with Tropical Black Bean Salad

Wednesday – Leftovers

Thursday – I think I’ll make Angela’s Santa Fe-Style Quinoa Salad.

Friday – Shrimp, pre-cooked and chilled, served with a simple cocktail sauce and a spicy slaw.

SaturdayBeef Kabobs with small potatoes, peppers, onions.

SundaySeven-Layer Salad with Creamy Dill Dressing

Menu Plan July 11 – Pineapple

The Gluten Free Menu Swap is here this week, and the theme is pineapple. The fresh pineapples in our local stores have been really good recently. It’s definitely a great time to buy a fresh one and chop it up. Plenty of grocery stores have freshly pre-cut pineapple to purchase, but you will pay a price for it. So, I prefer to cut them myself using a method similar to this one illustrated at Dole Fruit Hawaii.

Last week I enjoyed Nancy’s Tropical Black Bean Salad with pineapple and mango. This week I think I’ll make some Chicken and Pineapple Kabobs. Pineapple is great for Fresh Fruit Kabobs, too.  Check the roundup below to see what other bloggers are doing with pineapple.

Monday - Parmesan Chicken Nuggets, Steamed Broccoli

Tuesday - Cilantro Lime Shrimp over Rice Noodles

Wednesday - Balsamic Salmon, Spinach Salad

Thursday - Grilled Chicken Kabobs, Jasmine Rice

Friday - 7-layer Salad with Creamy Dill Dressing

 

Saturday - Burgers, Brussels Sprouts, Sweet Potato Fries

Gluten Free Menu Swap Roundup

Cheryl at Gluten Free Goodness likes to eat pineapple fresh, but also enjoys it frozen and pureed. What a great idea for the summer! Cheryl has Herb Salad with Salmon, Quinoa with wilted Mache and Kalamata Olives, and Roasted Cauliflower on her menu this week.

At Celiacs in the House, they eat pineapple fresh and frozen in smoothies, too. Wendy says they also dehydrate it for snacks. Another great idea! Her menu this week includes BBQ Chicken, Pizza, Grilled Salmon, and Spinach Feta Turkey Burgers with Sea’s Roasted Veggie and Quinoa Salad.

Renee from Beyond Rice and Tofu is starting her week with a couple Indian Vegetarian meals (Red Kidney Beans with Tomatoes and Chickpeas in Tomato, Ginger and Garlic) that sound very good and healthy. But her Spicy Tofu with Vegetables and Cucumber Salad sounds even better to me. And next week, Renee is hosting the Gluten Free Menu Swap with a theme of Light and Easy Meals for Summer. Menu Plan July 4

I hope everyone had a nice 4th of July! This week’s Gluten Free Menu Swap is being hosted by Cheryl at Gluten Free Goodness. She’s chosen the timely theme of Freedom — Culinary Freedom, that is. I think I’ll get the kids back in the kitchen this week to help me prepare some of these salads and meals. Not exactly a freedom, but a step toward a future of culinary freedom. :)
