Menu Plan October 31 – Chili

Happy Halloween! Are you ready for trick-or-treating? Every year, we make chili for Halloween night. It’s just so easy to get it together early and have it warming in the slow-cooker for a quick, warming meal before we head out into the cool night. This year we’re making my favorite Chili Blanco, or White Bean and Chicken Chili.

The theme for this week’s Gluten-Free Menu Swap is Chili, Soups, and Stews. So, check below to see who else has chili or soup on their gluten-free menus. Gluten Free Menu Swap Roundup

Emily at Our Frugal Happy Life is starting her week by making Homemade Cheeseburger Soup, a great addition to our theme this week. She also has on her menu Baked Creamy Chicken Taquitos, Cheesy Salsa Mini Meatloves, Chicken Nuggets, and more.

Renee at Beyond Rice and Tofu got a jump on the week’s meals by making soups on Sunday. She made Black Bean Chili and Corn/Red Pepper/Potato Chowder. Check out the Green Chile and Pinto Bean Enchiladas and Sweet Potato Kale Pizza she also has on her menu.

Samantha at So Simply Good shares her recipes for Cream of Tomato Soup and Chipotle Chili, which she just improved! Also on her menu is a Garlic Beef Stew and a Southwestern Flank Steak that looks tempting. Go check out her full menu to see what else she has to warm you up this week.

Like me, Lisa at Extraordinary Life has White Chicken Chili on her menu this week, too. For Halloween, she’s making cute mummy hot dogs. The rest of week includes Burgers, BBQ nachos, and Spaghetti with Sausage. You might want to check out her recipe for gluten-free Jiffy corn bread, too.

Alta at Tasty Eats at Home made a stew on Sunday and has plenty of chili in the freezer to pull out as needed. Along with Scotch Eggs, Kung Pao Chicken, and Beef Tongue Tacos, it looks like an exciting week of meals at Alta’s house. She’s also made the switch from paper menu planning to electronic, so go read her post if you’ve been considering it, too.

Carrie at Ginger Lemon Girl has Creamy Clam Chowder on her menu plan this week. She has lots of great meals planned for anyone following a Paleo diet: Better Butter Chicken, Meatloaf, Pineapple Chicken Skewers, Cilantro Turkey Burgers, and more.

Amanda at Gluten Free Detroit Metro has the final menu to link up this week. To help with our weekly theme, she’s having CrockPot Chili and Italian Wedding Soup. She also has Baked Chicken with Wild Rice, and Pork Tenderloin with an Herb Rub on her menu this week.

We’re getting ready for Halloween at my house. The kids got their costumes figured out, and we finally pulled out some decorations for the kids to play around with.  We also made some fun meringue cookies in the shape of ghosts, which I thought was perfect for this week’s Gluten Free Menu Swap.

The theme this week is Spooky Delights. Thanks to Angela for designing the fun menu swap logo button this week! Do you make any special or fun foods for Halloween? Here are some of the fun things we’ve done in the past:

Cheryl at Gluten Free Goodness has plenty of Halloween goodness to share with friends this week: Pumpkin Seed Brittle, Pineapple Raspberry Crisp, and a Chocolate Banana Bread, which must be put on my list of recipes to make next. Also on her menu this week is Curried Collard with Beef, Herb Salad with Salmon, and my very own White Bean Chili.

Lisa at Extraordinary Life is making some very fun mummy wrapped hot dogs and worms in dirt to celebrate Halloween. She’s also sharing some new recipes she’s trying from some of her favorite bloggers: Diane’s Chicken Croquettes, Linda’s favorite Chicken Breasts, and my pork and vegetable Egg Rolls. She also her own Salisbury Steak with mushroom gravy that looks very rich and yummy.

At So Simply Good, you’ll find more links to great gluten-free and paleo dishes this week. Samantha has Curried Cauliflower, Savory Almond Muffins, and Grilled Chicken with Rosemary and Bacon on the menu. Oh, and a Leek and Sweet Potato Soup that looks good, too!

Renee at Beyond Rice and Tofu is still harvesting vegetables from their garden, and it sounds like the Kale is plentiful! Along with lots of kale, her menu includes veggie burgers with okra, Tofu Stir Fry, Poblano Pinto Stew, and Pupusas.

Check out the adorable Mummy and Ghost cupcakes at Angela’s Kitchen. Angela made them for Halloween last year. This year she’s making pumpkin whoopie pies, roasted pumpkin seeds, and sweet and spicy pepita popcorn balls. On her menu this week is Spinach Burgers, Mashed Cauliflower, and Pumpkin Waffles with homemade Sausage.

Paige at Not Missing a Thing! is back this week with what looks like another busy week. On her menu is Chili and Cornbread, Slow-Cooker Cashew Chicken Teriyaki, Pizza, and more. This weekend, her family is also planning on eating at Pei Wei’s, which she says is kid-friendly and has a selection of gluten-free items from which to order.

This week, Amanda at Gluten Free Detroit Metro has Meatballs and Pasta, Baked Chicken, Chicken and Broccoli Crepes, and more. I’ve never made crepes myself, so I was happy to see that she had a gluten-free crepe recipe and directions for making them.

Rachel at Rachel Cooks is going to try making some spider cookies for her son’s class this week. Can’t wait to hear how they turn out. Her menu this week includes Pork Chops, Tacos, Baked Potato Soup, Chicken Stroganoff, and more.

Emily at Our Frugal Happy Life has Pizza Chicken (not to be confused with Chicken Pizza) on her menu this week. She’s also making homemade Hamburger Helper, Shepherd’s Pie, and Spanish Rice with hamburger.

Alta at Tasty Eats at Home has Pumpkin Spice Chicken Cacciatore on her menu this week, as well as Pulled Pork, Fresh Black-eyed Peas, and Buffalo Chicken Wings. She also has some great ideas for breakfast and lunch — like acorn squash breakfast porridge.

Menu Plan October 17 – Something New

The Gluten Free Menu Swap is here this week and the theme is “Something New.” If you’re like me, trying to keep the foods simple to please the kids, often feels boring and repetitive. I often try new recipes and products to change things up a bit, but still keep some of our favorites in the week’s menu.

I don’t always have the time and energy for “something new” at dinnertime. So, I’ve decided to put the slow-cooker to good use this week to help me get dinners on the table on time. And I’m starting with a new recipe for Chicken Teriyaki I found at Stephanie O’dea’s Slow-Cooking website. (This weekend, she posted some great tips about using a slow-cooker.)

I’m also trying to increase my kids’ interest in eating fish again. So, I’m going to try a recipe for Fish Sticks at Elana’s Pantry. Are you trying anything new this week? Link up or share them in the comments. Check the roundup below to see if other bloggers are sharing Something New this week.

Gluten Free Menu Swap Roundup

Angela from Angela’s Kitchen just got back from vacation, but she still has a great menu planned for her family. Thanks to the planning she does as Once A Month Mom, she has plenty of meals already prepared to pull out of the freezer: Tangy Tomato Beef, Slow-Cooker Sweet and Sour Chicken, Pork Roast with Apples and Pears, to name just a few. Be sure to check out what she has planned for lunches, too!

Kimberlee at The Peaceful Mom cooks gluten-free for her daughter who has a wheat allergy. This week she’s making GF Lasagna Bake, BBQ Chicken Nachos, Crockpot Chili, Chicken Stirfry, and more. She also shares her delicious ideas for breakfast and lunch.

Rachel of Rachel Cooks is joining us this week with a full menu of tasty gluten-free meals. Tacos, Cheesy Chicken Casserole and Chicken Stroganoff are a few of the gluten-free offerings this week. Like the rest of us, she is using her slow-cooker this week, too. She’s using it to make Homemade Tomato Soup.

Samantha at So Simply Good shares her gluten-free/paleo menu with us this week. I am particularly interested in her Chipotle Chili, but the Rosemary Apple Butter Pork Loin and the Chicken and Vegetable Lo-Mein on her menu look pretty good, too.

Lisa at Extraordinary Life was disappointed to find that the gluten-free food she needed to purchase at the store for lunches this week had been snatched up by another GF family. Fortunately, she has a dinner menu plan that’s going to get her through the week. This week’s menu includes Homemade Hamburger Helper, Chicken and Dumplings, Chicken Fried Steak, and more.

Emily at Our Frugal Happy Life shared a new recipe for a good-looking Stuffed Pepper Casserole that looks like it makes enough to enjoy leftovers for lunch, too. On her menu this week is Grilled Pork, Fiesta Chicken, Cheeseburger Pie, plus a few other good ideas you’ll want to check out.

Paige at Not Missing a Thing! has allergy friendly meals that are gluten-free, dairy-free, and egg-free. This week she and her family are traveling and taking meals with them to reheat at family-members’ homes! She’s taking Spaghetti and Meatballs, Oven-baked Chicken Drumsticks, and another slow-cooker recipe from Stephanie O’Dea – Asian Peanut Butter Pork Tenderloin.

One last entry to the roundup from Amanda at Gluten Free Detroit Metro, who is now trying to remove dairy and egg from their gluten-free meals. So far, her menu this week includes Grilled Fish, Fajitas, and BBQ Chicken Pizza. She could use some help with egg-free/dairy-free meals, so if you’ve got recipes or ideas, send them her way.

Menu Plan October 10

What a great holiday weekend with great fall weather! For us, it was a good time spent with good friends, both new and old. But a lot of miles and meals on the road, and I am happy to be home. Meals this week will be simple and easy while I try to get back to our regular schedule. I’m starting my day by baking bread, doing laundry, and getting myself organized by starting with a meal plan.

Cheryl at Gluten Free Goodness is hosting this week’s Gluten Free Menu Swap with another great theme ingredient to prepare for the upcoming holiday season: cranberries. I don’t have any cranberries in my menu this week, so I’ll have to point you to Cheryl’s roundup and a roundup I did last year for more ideas on cranberries.

And, since I will begin coordinating the Gluten Free Menu Swap from now on, the theme for next week is simply Something New. Menu Plan October 3 – Squash

The Gluten Free Menu Swap is here this week, and the theme is squash. I don’t eat a lot of squash. I usually only buy it when I’m working with a recipe that calls for it. I do like to cook acorn squash, but I haven’t gotten a good response from my kids. So this week, I thought I’d try something different. I’ll try making Linda’s Butternut Squash Bread and Amy’s Slow-Cooker Spaghetti Squash.
