The Gluten-Free Menu Swap is being hosted by Angela at Angela’s Kitchen this week. The theme is Picnic and Camping Foods.

We are on the road, so my post is going to have to be quick. The first thing that comes to mind for camping food is trail mix. Made with a variety of your favorite gluten-free snacks, it’s great traveling food, too!

Menu Plan June 18 – Mango

School is finally out, and now we are on to packing for our big move to Colorado! There is very little food left in our refrigerator — which is good since we’re moving — but I also don’t want to be eating out for the next two weeks. So, a little grocery shopping this week will help me use up some food we still have in the freezer and pantry.

This week’s theme for the Gluten-Free Menu Swap is Mango. I have one mango in the refrigerator that I keep meaning to put into a green smoothie, but I keep forgetting about it. Instead, I think I’ll use it for a Tropical Black Bean Salad this week. I will also be making Indian Chicken with mango chutney this week. And, that should be one less jar in the refrigerator to worry about. :)

Need help figuring out how to cut a mango? A common method is posted at Simply Recipes. I think I’ll give it a try this week, because my method of ‘whatever works’ may be the messiest and least efficient of all. If Elise’s method doesn’t work for you, check out the comments on that post. There are other suggestions from several other readers.

Menu Plan June 11 – Asparagus

We are finally down to our last week of school! I know most kids across the country are already out and enjoying summer break, but we still have five days left. And our schedule is busy: plays, recitals, sports tournaments, performances, school parties, birthday parties…. Everyone is trying to fit in activities before everyone else heads out of town on vacation. Did I also mention that we’re moving in less than two weeks? It’s a little crazy right now. I am so glad that I made a monthly menu plan. My weekly plans just need little adjustments.

This week’s theme for the Gluten-Free Menu Swap is Asparagus. I don’t cook asparagus too frequently. My kids are still getting used to the taste of it. They’ll eat a few bites of it, say “It’s OK,” and then not eat anymore. But, it is the season for it and it’s been looking so good lately, that I brought some home last week. There are lots of ways to prepare asparagus — raw, roasted, steamed, sautéed, etc. We actually dipped it in a thin tempura batter, and deep fried it. We were trying to use up some small portions of food in the freezer and fridge. When I saw the half-empty container of gluten-free tempura mix in the pantry, we decided to give it a try with shrimp, broccoli, asparagus, and a few other things we found in the produce bin. My husband and I thought it turned out really good, and was a nice change to the menu plan. The kids were mixed, but did enjoy the asparagus. It was still nice and crunchy. Menu Plan June 4 – Sweet Bell Peppers

I got an early start on the menu planning this month. Since we’ll be moving this month, I created a menu plan for the entire month. I’ll make any needed updates in my weekly menu plans. I’m hoping it helps us use up the food in our freezer and pantry, so we don’t have to move it or throw it out.

And for the week’s menu…This week’s Gluten-Free Menu Swap is here with the theme being Sweet Bell Peppers. And, I can’t wait to make the Steak Fajitas! I’ve been tweaking my recipe for the marinade, and I plan to get that posted this week. I will also be enjoying some peppers with Chicken Kabobs later in the week. Though, I don’t know if they will be as good as the kabobs we had last night at a friend’s house. They were so delicious, but I’ll give it a try anyway.

Monday -  Steak Fajitas with sweet peppers, onions and corn tortillas, served with Guacamole and Pico de Gallo

Tuesday - Eating Out, probably the Silver Diner

Wednesday - Spaghetti and Meatballs, Spinach Salad

Friday - Easy Garlic Shrimp Pasta served with Broccoli

Saturday - Maple Mustard Grilled Pork Chops (made with GF soy sauce!) served with a Spinach Salad

Gluten Free Menu Swap Roundup

Cheryl at Gluten Free Goodness says peppers don’t agree with her, so they aren’t in her menu plan this week. But what she does have on her menu this week looks delicious: Rosemary chicken with Kalamata Olives, Fennel Stew, Pineapple Chicken with Roasted Cauliflower, and Salmon on a bed of greens. Emily at Our Frugal Happy Life says she is ready for a summer schedule and directing Vacation Bible School. On her menu this week is Buttermilk Chicken Strips, Cheeseburger Rice with Cornbread, Ranch Chicken with Roasted Potatoes, Meatballs, and lots of grilling!

Monthly Menu Plan – June

I’m moving! Not Celiac Family, the blogsite. It will still be at the same place – celiacfamily.com. However, my family and I are moving to Colorado. With about a month left in our current house, I decided I needed a month-long menu plan to make sure I use up as much of our stocked food as I can.

I’ve taken inventory and will start using any frozen foods and opened packages of food in the pantry. I’m sure I’ll have to make adjustments to the meal plan as the month moves along. My weekly meal plans posted on Mondays will reflect the changes. Changes or not, it’s a good start to clearing out as much as I can.

Do you make monthly meal plans? I don’t usually plan meals a month in advance, but I can see how it would be helpful: if you have to drive a distance to find gluten-free items; for keeping food waste at a minimum; or just to save time. Whatever your motive may be, feel free to send me a link of your monthly meal plan. I’ll be happy to add your link to the end of mine.
