Menu Plan July 30 – Blueberries

The theme for the Gluten-Free Menu Swap this week is Blueberries. My daughter and I love to eat blueberries, so I always pick some up when shopping. I often serve them with breakfast — in pancakes, smoothies, fruit salad, cereal, muffins, etc. I also like to put them on my Fruit Pizzas because they add great color and texture. And since I am loving watching the Olympics, I’m going to make one this week with strawberries and blueberries for a Red, White, and Blue look. I made this one earlier this year in a 9×13 pan, and cut it into squares for serving.

Of course, blueberries aren’t just for breakfast. This week, I’m serving them with dinner in salads, and in a sauce to pour over slices of a pork roast. Gluten Free Menu Swap Roundup

Angela at Angela’s Kitchen  was able to get a few blueberries from the bushes she planted last year. But probably not enough yet to make some into her blueberry syrup or jam. Angela likes to add blueberries into her Breakfast Cookies and Muffins. And, WOW… check out that beautiful Lemon Yogurt Blueberry Bread she made! On her menu this week is Chicken and Rosemary Roasted Vegetables, Frittata with Zucchini Fries, Sweet and Sour Meatballs, Ginger Beef and Broccoli Salad, and the Chicken, Blueberry and Mango Salad I’m looking forward to making this week.

Menu Plan July 23 – Salads

The Gluten-Free Menu Swap is being hosted by Angela at Angela’s Kitchen this week. The theme is Salads.

We are on the road again this week. This should be the last of it for the summer. It’s been a fun sumer with the family. I am well rested and ready to get to work unpacking and getting settled in our new home. And after eating out more than usual, I am looking forward to making smoothies and salads (and all things natural) to get myself back to normal.

Menu Plan July 16 – Tomatoes

The theme for the Gluten-Free Menu Swap this week is Tomatoes. I don’t eat a lot of tomatoes myself, but I know a lot of you are growing fresh tomatoes in your gardens this summer. We would love to know what you are doing to add them to your meals.

I don’t usually make many meals or dishes where the tomato is the main ingredient. Instead, I often add it to meals for extra flavor, juicy texture, and/or that bright red color! And, the vitamin C and antioxidants it adds to a meal are a nutritional bonus.

Here are a few dishes with tomatoes that didn’t make it into our meals this week:

Chicken Pizza with Fresh Tomato and Avocado

Corn and Black Bean Salad with diced tomatoes

Greek Pasta Salad with fresh tomato wedges

Monday -  Make-your-own pizzas with Udi’s pizza crust, Spinach Salad

Tuesday - Shredded Chicken Tacos with sliced black olives, shredded cheese, and Avocado Salsa

Wednesday - Grilled Pork Chops, Sweet Potato Fries, Sautéed Asparagus

Thursday - Southwestern Chicken Salad using salad greens from Monday, chicken from Tuesday, and fresh tomatoes from my parents’ garden

Friday - Cilantro Lime Shrimp served over rice with Kalyn’s Vegan Tomato Salad (with Cucumber and Avocado)

Saturday - leftovers

Sunday - Grilled Steaks, Corn on the Cob, Wild Rice Salad (with Cherry Tomatoes from the garden)

Gluten Free Menu Swap Roundup

Brandy at Gluten-Free for Me! is not a fan of tomatoes, but she says she often adds them to meals for her husband and daughters who love them. And this week is no exception, as she will be cooking or serving tomatoes in their salad, Chicken Marinara, Hamburgers, and Cream Cheese Chicken Chili. Brandy says they also like fresh tomato slices with breakfast and lunch, and sometimes even make tomato sandwiches. Also on her menu this week is Crock-Pot Greek Chicken, Spaghetti with Fresh Herbs & Parmesan, and Honey Lime Tilapia.

Angela at Angela’s Kitchen says the tomatoes in her garden aren’t ready for picking, yet. But thanks to the tomatoes at her local farmers’ market, she does have BLT sandwiches and a Tomato Basil Salad on the menu this week. She’s’ also planning on making Roasted Chicken, Slow-Cooker Korean Tacos,  Cilantro Cashew Salad, California Turkey Burgers, and more!

Paige at Not Missing a Thing! has tomatoes in the Oven-Baked Chicken Cacciatore and Pasta Salad on her menu plan this week. She’s also making a Chicken version of Shrimp Scampi, as well as grilling Chicken Drumsticks, Steaks, and Hamburgers. Sounds like  a great summer-time menu to me.

Menu Plan July 9 – Corn

Corn is the theme for the Gluten-Free Menu Swap this week. It’s the perfect season to buy fresh corn-on-the-cob, and my kids usually devour it. However, this year, my kids have not been as excited about eating it (at least not on the cob). They both lost their front teeth this spring, so I’ve been cutting it off the cob with this nifty gadget I got for Christmas one year.

I also buy and keep frozen corn kernels in the freezer. It’s  just so quick and easy to cook up and put into side dishes. My favorite use is in Corn and Black Bean Salad, but we also like to add  corn to our chili. Last week, my aunt and uncle made a wonderful sautéed corn dish (like this simple recipe by the Barefoot Contessa) to have with dinner. Anybody else have any good ideas for preparing corn?

Gluten Free Menu Swap Roundup

Fresh corn is a favorite with the kids at Angela’s Kitchen, too. And Angela says that the family’s favorite road-side stand just set up last week! So, I think she’s going to have to get some to go with her yummy meals this week: BBQ Turkey Sloppy Joes, Spinach and Tomato Frittata, Stir Fry with Quinoa, Zucchini Pancakes, and Korean Beef Tacos with Cilantro Cashew Salad.

Paige at Not Missing a Thing! has a great meal plan to share for a week at the beach. It’s complete with breakfast, lunch, and dinner meal plans, as well as tips for preparing for a vacation. Meals included in her plan are Buckwheat Waffles, Taco Burgers, Chef Salads, Summertime Chicken Salad, and Pulled BBQ Chicken Sandwiches.

We made it to our wonderful new home in Colorado (YAY!), but my furniture and household goods haven’t arrived, yet (boo). And that brings me to this week’s theme for the Gluten-Free Menu Swap — Eating Out.

I almost didn’t choose this as a theme because it seemed contrary to the purpose of a menu plan. But, if you’re like me, eating at a restaurant often requires more planning than cooking. Since moving cross-country this year, we’ve had to eat out a lot more than we usually do. The bad news is that we’ve increased our chances of getting gluten from cross-contamination.

The good news is that Celiac Disease and the gluten-free diet have come to the attention of so many chefs and restaurants. And with all the portable electronic devices, a quick search on the internet can provide you with a lot of information about a restaurant’s menu and what you might be able to eat gluten-free. Of course, not all restaurants have web sites with so much information. However, I have found many new ones and have been updating Celiac Family’s Eating Out page this summer. That does not mean that I would recommend eating at all of the restaurants listed. It simply provides links to restaurants’ web pages that address concerns of eating gluten free in their establishments. It’s a starting point to help you make an informed choice on whether or not to eat there.

There are several other great resources for helping you plan where to dine gluten-free.

  • Gluten Free Maps – Just type in a zip-code and find restaurants that offer gluten-free options on a map of the area.
  • Gluten-Free Registry – “Free, searchable database of over 14,100+ gluten-free friendly business locations to find one near you or your travel destination. Also available to search on your mobile phone, mapped on your iPhone or GPS, and as a full color print magazine.”
  • GlutenFreeTravelSite.com – A database of user-submitted gluten-free dining and travel reviews from all over the world. You can search the reviews of restaurants, stores, hotels/resorts, and college campuses by state or country — or even narrow your search down to the city or zip code level — and map the results. The mobile version also makes it easy to check your dining options with your smart phone while on the go.
  • Triumph Dining – A printed guidebook of thousands of restaurants in the US that provide gluten-free options. They also have a grocery guidebook and dining cards available.
  • Find Me Gluten Free – A website and FREE iPhone and Android apps that help you find gluten-free friendly businesses. Share photos, ratings and reviews with other gluten free diners.

And don’t forget that just because a restaurant has a gluten-free menu, your work is not done! You still need to be careful, and be aware that cross-contamination is a possibility at any restaurant. Cheryl at Harris Whole Health provided some tips to help you safely navigate the hazards of Dining Out G-Free.

Gluten Free Menu Swap Roundup

Paige at Not Missing a Thing! is feeling the summer heat, so is cooking lighter and cooler meals. She has on her menu this week a Garden Salad with Diced Chicken, Cold Chicken Salad, a Broccoli Salad to serve at the 4th of July Cookout, Sausage with Peppers, Jambalaya, and more! Sounds delightfully cool. :)

Angela at Angela’s Kitchen has a great list of restaurants to try in the Twin Cities, Minnesota area, but no eating our for her family this week. Instead, they get to enjoy delicious Turkey Burgers with homemade GF buns, Mexican Cornbread Casserole, BLT Pizza, BBQ Turkey Sloppy Joe’s, and Papaya Coconut Chicken Salad.
