Lamb – Menu Plan March 25

lambWelcome back to the Gluten-Free Menu Swap. This week’s theme is lamb. I don’t know about you, but I don’t typically buy, cook, or eat lamb. Though I don’t often eat it, I do enjoy it when I get the opportunity. I’m certainly not familiar with cooking it.

So, I thought I’d take this week to explore it a little more and find some new recipes to try. I searched through some of my favorite sites and found the tempting gluten-free recipes listed below. Not exactly sure which one I’m going to try first.

Melissa has lamb in the rotation menu for herself. Her family will be eating Black Beans Beef and Rice, Lighter Meatloaf, Sweet and Sour Meatballs, Beef and Cabbage Soup, and Chili with gluten-free pasta.

Angela’s Kitchen: Gluten-Free, Dairy-Free Menu
Angela has linked up Katniss’s Favorite Lamb and Prune Stew this week. She’ll also be making double-batches of Bombay Chicken and Citrus-Kissed Chicken Fingers, so she can stock the freezer. The Peaceful Mom: Simple Gluten-Free Menu
This week, Kimberlee’s family will be eating Turkey Pepper Jack Grilled Cheese Sandwiches, BBQ Pork Sliders, Easy Cheese Quesadillas with Chicken, Taco Bowls, Udi’s Frozen Pizza, Steak, and Spicy Black Beans. Be sure to stop by her blog for recipe links and ideas for breakfast and lunch, too.

Extraordinary Life: Gluten-Free, Paleo Menu
On Lisa’s menu this week is Lettuce Leaf Tacos, Herb Roasted Pork Loin, Corn-free Corn Dogs, Herb Roasted Chicken Breasts, Oven-Roasted Shrimp, and Pizza. Lisa is also sharing her plans for Easter, including a plan to make corn-free candy for her son, Coconut Sugar Ham, Mashed Cauliflower, Deviled Eggs, Fruit Salad, Lemon Meringue Pie, and Coconut Cream Pie. Sounds like a busy week for her!

Our Frugal Happy Life: EaAppearanceting Gluten-Free on a Budget
Congratulations are due to Emily and her husband! Emily finally announced the arrival of her new baby girl, Hannah, with sweet pictures last week. For meals this week, they’ll be eating Pizza with Chebe pizza crust, Miracle Chicken Skillet, Cheeseburger Pie, and Chicken Enchilada Dip.

Awkward Girl Gets Fit: Gluten-Free, Grain-Free, Sugar-Free Menu
Samantha has a busy week ahead, and starting with a meal plan is a perfect way to get off to a great start. Her family will be eating Broccoli Beef, Grilled Chicken, Chick-fil-a Chicken Nuggets copycat recipe, burgers, and more.

Carrots – Menu Plan March 18

CarrotsWe’re talking about Carrots this week for the Gluten-Free Menu Swap.  Carrots are great root vegetables to add to your diet because they are rich in vitamin A and beta carotenes. They support good eye sight, healthy skin, and can help your liver cleanse your body of toxins.

I’m not big on cooked carrots. Although, I used to cook them for my kids every week when they were toddlers. I will occasionally cook them by sautéing sliced carrots with a little butter and brown sugar. Or, perhaps cook them with a roast or in a stew.

img_3235xNow, we mostly eat them raw. I send baby carrots or carrot chips in my kids’ lunches just about every day. I also like to add shredded carrots to salads and slaws. And I can’t forget Carrot Cake! Do you have favorite ways to consume carrots? Carrot juice, perhaps?

Gluten-Free Pies – Menu Plan March 11

PiesYou probably knew that St. Patrick’s Day was at the end of the week, but did you know that Thursday is Pi Day? Because of the date’s (3/14) significant number, it was chosen as a day to observe and celebrate math! Thus, the theme for this week’s Gluten-Free Menu Swap is Pies. You will find the menu roundup and, I suspect, some more gluten-free pie recipes at Angela’s Kitchen.

Quiche is the closest thing to a pie I have on our menu this week. Although, I’m beginning to think I need to make a Mint Chocolate Fudge Pie this week. If you are thinking of gluten-free pies, I can offer you a few places to check out:

Onion – Menu Plan March 4

OnionThe theme for this week’s Gluten-Free Menu Swap is Onion. I think most kitchens and cooks use onions in meals on a regular basis for the wonderful flavor and aroma they added to dishes. But I did a little research and found that they could provide some pretty amazing health benefits, too.

Onions contain vitamins C and B6, folate, calcium, manganese, and anti-oxidants. Without getting too technical on the specifics, studies have shown that onion can help diabetics lower their blood sugar levels and actually improve a diabetic’s tolerance for glucose. Additional studies about onions indicate that their consumption may lower the incidence of osteoporosis, cancer, cataracts, and cardiovascular disease. Hmmm…I wonder how often and how many onions you would have to eat to get those benefits. Get out the mint!

Melissa’s family is eating lots of yummy soups this week, including Southwestern Soup, Taco Soup (red onion and onion powder), Cabbage and Beef Soup, and Hamburger Soup (onion). They also get to enjoy gluten-free pasta with Jamie Oliver’s spaghetti sauce (two small onions),  Black-Eyed Peas and Ham Hock, and Skillet Ginger and Apricot Tilapia. Kimberlee is making Ham and Spinach Pasta this week, as well as Spicy Chicken Thighs, Baked Ham, BBQ Chicken, Chebe Bread Pizza, and more. For breakfast her family will be eating Crustless Quiche (with yellow onion) and Crockpot Granola with yogurt. Lunches will include Peach Mango Smoothies, Apple Sandwiches, and Turkey Lettuce Wraps.

Angela’s Kitchen: Gluten-Free, Dairy-Free Menu
Angela is sharing a great recipe this week for preserving Caramelized Onions. And I can’t wait to try her easy recipe for Faux French’s crispy onions. They would be perfect to top that green bean casserole served for Easter. In fact, it looks like a great idea for onion rings or even a Bloomin’ Onion, too. On her menu this week is Chicken Cacciatore (with onion), Tilapia with Lemony Spinach and Mushrooms (with onion), Italian Pot Roast (with onion), Buffalo Chicken Pizza (with onion), and Individual Apple Sausage Quiches (with shallots or sweet onions). Gluten-Free Monthly Menu Plan – March

SnowBerriesI love getting a jump on the menu planning. Here’s what I’m planning for March. I will undoubtedly make some adjustments each week — as our schedules may change, family members make requests, and new recipes are too tempting not to try — but it gives me a really good place to start each week. The photos I’m including this week are kid-friendly meals.
