Chicken – Menu Plan May 27

ChickenI hope everyone is enjoying the Memorial Day Holiday with friends and family. Thank you to all the men and women who have served to protect our country. I appreciate all you do to preserve our freedoms.

Due to the holiday, I’m keeping my comments even shorter than usual and simply offering some gluten-free recipes with chicken.

Mom’s Plans: Gluten-Free, Dairy-Free Menu
Melissa has Chicken Pesto Soup with Swiss Chard and Bean Soup with Chicken & Veggies on her family’s menu this week. They are also planning on eating Spaghetti, Lighter Meatloaf with homemade fries, Tuna Noodle Casserole, and Mexican Black Bean Chili. Melissa, herself, will be eating a rotation of select foods appropriate for a Paleo Auto Immune diet.

The Girl Who Couldn’t Eat Anything: eating without Gluten, Dairy, Peanuts, Oats, or Meat
Elisabeth is planning for lighter meals this week — partly because her family is recovering from a stomach flu, and partly because of the warming weather. Her menu this week includes Irresistible Grilled Shrimp, Zucchini Frittata, Bacon Broccoli Tomato Salad, Burgers with Corn on the Cob, Fish, and Pizza.

Garden Grown – Menu Plan May 20

Visit Gluten Free Goodness for the Gluten-Free Menu Swap roundup this week. She chose Garden Grown as the theme.

I don’t have a garden, so I’ll have to rely on the herbs in my AeroGarden (mostly basil and mint because that seems to grow best in mine), and the Farmers’ Market. And, since I didn’t make it to the Farmers’ Market last week, I’ll have to try again this week. I’m hoping for spinach, potatoes, onions, and green beans.

Strawberries – Menu Plan May 13

StrawberryI hope everyone had a wonderful Mother’s Day weekend. I was happy to be done with snow and rain, for now, and instead be greeted with a warm, sunny morning.

Visit Angela’s Kitchen for the Gluten-Free Menu Swap roundup this week. She chose Strawberries as the theme.  And the timing of it is perfect for me. I’ve gotten out of my smoothie-for-breakfast routine, and I keep thinking I need to get back to it. I find it’s always a great way to start my day — delicious, hydrating, and energizing.

So…this week, I’ll be starting my days with Banana Berry Smoothies. I like to use half a frozen banana, strawberries, blueberries, a handful of spinach, and pineapple juice. Sometimes I also add some almond milk for protein.

Monday — Eating Out, probably Red Robin. Have you tried their gluten-free buns? I usually go without a bun, but the rest of my family thinks the buns are great.

Wednesday – Bacon-wrapped Chicken, Seven-Layer Salad with Creamy Dill Dressing

Thursday – Grilled Hamburgers, Sweet Potato Fries, Berry Fruit Salad

Friday – Fish Tacos served with Red Cabbage slaw and Tropical Black Bean Salad

Saturday – My husband keeps requesting Chicken Vindaloo, but I can’t find the curry paste for it in the stores. So, instead I’m trying Chicken with Patak’s Jalfrezi Curry Simmer Sauce. I’ll serve it with rice and green beans.

Oranges – Menu Plan May 6

OrangeI hope everyone had a nice weekend, and is starting to enjoy warmer weather. The theme for this week’s Gluten-Free Menu Swap is Orange. I am trying some new recipes for this week’s dinners that include orange segments, orange marmalade, and orange juice.

And, since Mother’s Day is on Sunday, I thought I’d share a couple recipes with orange juice that you might like to prepare for brunch on Sunday: Poppy Seed Bread and Tropical Mimosas. :)

Angela has lots of great recipes with orange to share this week: Smoothies, Dairy-Free Orange Julius, Orange Spice Muffins, Mandarin Orange Chicken, Orange Cranberry Cupcakes, and so much more!  For breakfast this week, she’ll be making Cranberry Orange Scones and Freezer Smoothies with Veggies. For dinners her family will be eating Coconut Lime Tilapia, Sloppy Joe filling over baked potatoes, Sundried Tomato Stuffed Chicken, Tortilla and Black Bean Pie, and Orange-Apricot Pork Chops for the Slow Cooker.

The Peaceful Mom: Simple Gluten-Free Menu
Kimberlee is serving orange slices with a crustless quiche for breakfast this week. For dinners this week, she’ll be fixing Crock Pot Contry-Style Ribs with Baked Beans, Beef Roast with Mashed Potatoes, Seasoned Chicken Thighs, Gluten-Free Pasta with Meat Sauce, Taco Bowls, and BBQ Pepper Jack Bacon Burgers.

Our Frugal Happy Life: Eating Gluten-Free on a Budget
Emily is planning a few days of grilled dinners this week, starting with Grilled Chicken with rice and veggies. She’ll also be making Garlic Cheddar Chicken with Easy Roasted Potatoes with Carrots, Tacos with homemade seasoning, Parmesan Chicken Fingers, and Cheeseburger Rice.
