Our summer is moving fast with lots of activities in July, so I’ve decided to get back to monthly menu planning. I’ll be keeping in mind the July themes for the Weekly Gluten-Free Menu Swap, too.

Apricots – Menu Plan June 24

ApricotsThe theme for this week’s Gluten-Free Menu Swap is Apricots. The roundup of other gluten-free meals will be included below as others link up their menus for the week.

Another visit to the Farmers’ Market this weekend. We picked up fresh apricots along with a bounty of other fruits and vegetables. We’ll eat them raw with lunches and snacks, but I’m reserving some for dinner this week, too. I found a couple dinner recipes that call for fresh apricots, so I’ve added them to our menu this week.

I also have some plans for dried apricots. Last week, I received a copy of Elana’s new cookbook Paleo Cooking from Elana’s Pantry: Gluten-Free, Grain-Free, Dairy-Free Recipes. It has lots of intriguing recipes I’ll be trying over the next few weeks. And I’ll be starting with a recipe for Apricot Muffins. She also has a yummy-looking recipe for Apricot Power Bars on her website that I want to try. It looks like a perfect snack for my kids and myself during our busy summer days to the pool, day camps, hiking adventures, and just running errands around town.

Gluten Free Menu Swap Roundup

Elisabeth says they don’t eat apricots much at her house, other than the occasional fresh, raw indulgence. For dinners this week, she’ll be having Grilled Cheese or Tomato Sandwiches, Quinoa Burgers, Chef Salad, Fish, and Pizza. This week, Angela is dealing with a power outage and preparing for camping meals. The Peaceful Mom: Simple Gluten-Free Menu
I don’t see any apricots on Kimberlee’s menu this week, but she has plenty of gluten-free meals to share with us. This week, she’ll be preparing Crunchy Chicken Salad, Baked Potatoes, Cheeseburger Pasta, Black Bean Chicken Chili, Grilled Cheese Sandwiches, Spicy Black Beans, and Pancakes for dinner. Check out her recipe links to find out how she does it all gluten-free for her daughter.

cucumbersandwichIt’s been so long since I’ve posted a recipe, I almost forgot what to do. It took a little longer than expected, but I managed to figure it out. ;)
I made these years ago for a fun tea party. They are so good, I don’t know why I waited so long to make them again.

Savory Herb Sandwich Spread Recipe

Ingredients:

4 oz. (1/2 Cup)  Tofutti Milk-Free Better Than Cream Cheese (in the yellow tub)
1/3 Cup Mayonnaise
1 tsp Onion Powder
1/2 tsp Garlic Powder
1/2 tsp dried Dill Weed

Directions:

  1. Combine all ingredients in a small bowl.
  2. Chill in a sealed container in the refrigerator for a couple hours to let the flavors mingle.
  3. Spread onto your favorite gluten-free bread or crackers, and top with fresh vegetables.

Additional Ideas:

  • For an extra smooth texture use an electric mixer or blender to combine the ingredients.
  • Store leftover spread in a sealed container in the refrigerator.
  • Layer vegetables (cucumbers, sweet peppers, tomatoes, etc.) for a stacked sandwich.
  • Use a variety of finely chopped or julienned vegetables for a festive look. (Carrots and Black Olives for Halloween, Broccoli and Sweet Red Pepper for Christmas, etc.)
  • Use a cookie cutter to cut your sandwich into fun-shaped finger sandwiches.
  • Makes a great dip for you favorite vegetables, chips, and crackers, too.

Cucumbers – Menu Plan June 17

CucumbersThe theme for this week’s Gluten-Free Menu Swap is Cucumbers. The roundup of other gluten-free meals will be included below as others link up their menus for the week.

I’ve been noticing “Cucumbers for Pickling” at the Famers’ Market this month. I’ve never made pickles myself, but would love to try making some Sweet Bread and Butter Pickles. I’m hoping to get the kids to help me with this quick and easy recipe at The Smitten Kitchen. If you’ve got a good recipe, send it my way.

Another cucumber delight I’ve been thinking about is Cucumber Sandwiches with a creamy garlic dill spread. I haven’t made them for years, but I’m thinking it is time. I’ll try to get a quick recipe for it posted this week.

Other ways we like to eat cucumber is fresh slices in salads (like my 7-layer Salad) and fresh cut spears in wraps. I also found a couple new cucumber salad recipes to try with our meals this week.

Gluten Free Menu Swap Roundup

Mom’s Plans: Gluten-Free, Dairy-Free Menu
This summer, Melissa’s family is enjoying a bounty of produce from their local CSA. Their menu this week starts with Chicken Tacos, Sauteed Zucchini and Garlic Scapes, Quinoa and Kale Patties, and Meatballs. It continues with Pasta with Asparagus and Cherry Tomatoes, Roasted Radishes, Ham and Roasted Cabbage, and Chicken Soup with Basil Pesto. She’s also planning to use up the excess produce by freezing an Easy Spinach Frittata and Chicken Apple Sausage and Kale Soup.

Angela’s Kitchen: Gluten-Free, Dairy-Free Menu
Angela says she makes pickles with her cucumbers, and adds fresh slices to salads. Dinners at her house this week will be Roasted Fish with Potatoes, Tomatoes and Olives, Beef and Almond Stir Fry,  Chicken Breasts with Spicy Honey-Orange Glaze, Black Bean & Veggie Pizza, and Spicy Sweet Grilled Pork Tacos.

The Peaceful Mom: Simple Gluten-Free Menu
Kimberlee has a Fresh Tomato and Cucumber Salad on her menu this week. Also for dinner this week is Ham and Spinach Pasta, Crock Pot Ribs, Loaded Baked Potatoes, London Broil, Cheeseburgers, and BBQ Chicken Nachos.

The Gluten Free Week: Gluten-Free
Cucumbers are making a showing in Lori’s menu this week with Salmon with a Cucumber-Dill SauceChicken PitasQuinoa Tabbouleh, and Cucumber Soup. Also on her menu this week is Greek Chicken with Yogurt Sauce and Lamb Burgers.

Food on the Fire – Menu Plan June 10

FoodFireWow, we are expecting some really hot days this week! And, after a long hot day at the rodeo this past weekend, I’m thinking that we need to keep hydrated with lots of salads and cool, refreshing produce this week. To serve with the fresh fruits and vegetables, I’ll be grilling up meat.

That will work great for this week’s Gluten-Free Menu Swap theme of “Food on the Fire.” Visit Angela’s Kitchen for the Gluten-Free Menu Swap roundup this week. 

And since we’re talking about grilling… I often grill indoors using my Lodge Cast Iron Grill on the stove top — not ideal for keeping the heat out of the kitchen on hot summer days. My husband does most of the outdoor grilling. Lately, I’ve been thinking that it’s finally time to retire our beat-up charcoal grill and replace it for Father’s Day. Has anyone tried an Infrared Gas Grill? It seems like an interesting alternative. Any other suggestions or recommendations?
