Green Beans – Menu Plan July 29

Screen-Shot-2013-07-24-at-10.02.18-AMI chose Green Beans as the theme for this week’s Gluten-Free Menu Swap because I need some new ideas for cooking them. My kids have always eaten steamed green beans with dinner without complaint. I usually cook them plain for their sensitive taste buds. Lately, it seems that they are not as willing to eat them (or, at least, not as many). And now that they are getting older, I thought we could dress them up a little and add a little more flavor.

So this week, I picked up some fresh green beans at the farmers’ market and thought I’d try a couple simple recipes with green beans. So, along with my recipe for Red Potatoes and Green Beans Salad, I’m going to try recipes for Green Beans with Zucchini and Green Bean Fries. Do you have any favorite ways to cook green beans?

Angela has a great recipe for Green Bean Casserole that you may want to bookmark for Thanksgiving. She even includes directions for making your own cream of mushroom soup and crispy fried onions. Mom’s Plans: Gluten-Free, Dairy-Free Menu
Melissa continues to receive wonderful produce in her CSA basket. This week, she is making a fresh Tomatillo Salsa to serve with Enchiladas. Also on her menu is Pork Chops with Roasted Broccoli and Cauliflower, Creamy Swiss Chard Pasta made with gluten-free pasta and homemade soy yogurt, Swiss Chard and Penne Soup, Hot Dogs with Zucchini Casserole, and Tomato Beef and Green Pepper Stir Fry.

The Peaceful Mom: Simple Gluten-Free Menu
Kimberlee’s menu this week looks like a Mexican Fiesta! Her family will be enjoying Chicken Enchiladas with Steamed Green Beans, Delicious Steak Fajitas, Taco Cups with Broccoli Slaw Salad, Black Bean Chicken Chili, and Spicy Black Beans with Rice. They also get to enjoy Spaghetti with Italian Chicken one night and Breakfast for dinner another night.

My Extraordinary Life: Gluten-Free, Paleo Menu
Lisa is trying some new recipes this week: Lasagna with her own Bolognese Meat Sauce, Melt in Your Mouth Baked Chicken, and Balsamic Steak Roll-ups. She’s also planning some family favorites: Hamburgers, Green Leaf Lettuce Taco Dinner, Crock Pot Roast Beef, and Meatloaf.

The Girl Who Couldn’t Eat Anything: eating without Gluten, Dairy, Peanuts, Oats, or Meat
Elisabeth is using green beans in this recipe she found for Vegan Tuna-less Nicoise Salad. She’s also enjoying a Peach Coffee Cake recipe she found at the Gluten-Free Goddess. For dinners this week, she’ll be making Tuna Apple Salad, Tomato Sandwiches, Chili and Cornbread, Tacos with Spicy Smoked Portobellos, Chickpea of the Sea, Fish, and Pizza.

Gluten Free Detroit Metro: Gluten-Free Menu
We welcome Amanda back to the GF Menu Swap this week! She’s planning on trying some Baked Green Bean Fries this week, though she hasn’t decided on a recipe, yet. She’ll also be making Turkey Burgers, Slow Cooker Chicken & Black Bean Tacos, Grilled Chicken, Pizza, and a night of breakfast for dinner.

Grapes – Menu Plan July 22

grapesGrapes is the theme for this week’s Gluten-Free Menu Swap. Grapes are always an easy summertime snack. Just rinse and indulge in the sweet juicy fruit, right? I love to pack them in lunches and serve to kids for snacks. But I’ve always thought of them as a sweet treat, rather than a nutritious addition to meals. After doing some reading about grapes, I was surprised to find that they’re considered to be a beneficial berry fruit that’s low on the glycemic index scale. So, I’m buying a bunch this week and adding them to our salads, too.

The Girl Who Couldn’t Eat Anything: eating without Gluten, Dairy, Peanuts, Oats, or Meat
Elisabeth says she avoids grapes because of their reputation for pesticide residue, but does occasionally buy them if grown organically. When she does eat them, she likes them raw or frozen for a cool summer treat. Dinners at her house this week will be Meatloaf, Tomato Sandwiches, Shrimp Stir Fry, Melon Spinach Salad with Fish, Beans & Rice, and Pizza.

The Peaceful Mom: Simple Gluten-Free Menu
Kimberlee’s menu this week starts with GF Rotini and Easy Crockpot Pasta Sauce, Crustless Quiche, and Easy Chicken Stir-Fry. She then finishes up the week’s menu with BBQ Pepper Jack Bacon Burgers, London Broil, and Pork Chops.

Stir-Fry – Menu Plan July 15

stirfryThe Gluten-Free Menu Swap theme this week is Stir-Fry. Visit Angela’s Kitchen for the roundup of gluten-free menus. I just got back from vacation, and after a week of eating on the road, I think Stir-Fry is just what I need. Sugar-filled snacks, sodas, and other processed foods have me feeling the need to adjust my diet. So this week, our meals will mainly be fresh fruits and vegetables with a little meat. Smoothies, Salads, and Stir-Fry meals are just what I need.

Melon – Menu Plan July 8

Melon.jpgThis week, we’re talking about Melon for the Gluten-Free Menu Swap. Summer is here, and so is the summer produce. My family always looks forward to the sweet and juicy melons that are sure to show up in the farmers’ market and the grocery stores this time of year. Cantaloupe, Honey Dew, and Watermelon are all welcome at my house. My biggest problem is that I usually buy too much. So I took a look online and found some additional ways to consume the yummy summer treats.

Elisabeth is making Watermelon Smoothies this week. For dinners, she’ll be making Grilled Portobellos, Chef Salad, Sloppy Joes, Potato Chip Fish, Tuna Salad, and Pizza. She’s also having Chia Pudding, Waffles, and Buckwheat Granola for breakfasts.

Like most of us, Angela’s family usually eats up melon simply sliced up fresh. But she does have a couple yummy recipes to share. Watermelon Slush and Curried Chicken Cantaloupe and Mango Salad would be a refreshing meal for a hot summer day. Also on her menu this week is Fish Tacos with Red Cabbage-Apple Slaw, Slow Cooker Veggies and Orange Beef, Rainbow Quiche, and Pork-Pineapple Kabobs with Quinoa Confetti Salad.

Kimberlee often serves fresh melon slices for breakfast and lunches. This week, it’s cantaloupe slices with Scrambled Eggs. She has delicious-looking Mango Salsa Chicken on her dinner menu this week. She’ll also be making London Broil, Greek Pasta Salad, Steak and Peppers, Taco Bowls, Garlic Shrimp Radiatore, and Pizza.

Red White and Blue – Menu Plan July 1

RedWhiteBlueCan you believe it’s July already? In an effort to keep up with good eating this busy summer, I created a monthly meal plan for July. Check it out if you want some additional meal ideas for this summer.

Red, White, and Blue is the theme for this week’s Gluten-Free Menu Swap. I created a Pinterest board of some fun 4th of July gluten-free foods. I don’t have any big party plans for The Fourth this year. However, my son did request a Fruit Pizza for dessert. So, I’ll be making a smaller version (9×13) with Strawberries, Raspberries, and Blueberries for a festive look. RedWhiteBlue

Angela has a wonderful meal planned for the 4th of July: Country Style RibsBroccoli Salad, watermelon, Crisp Bread Stick Sparklers, and Angel Food Cake topped with Coconut Whipped Topping, strawberries and blueberries. She’s also planning on making a delicious Lemon Blueberry Yogurt Bread for breakfast (or maybe donut holes, muffins, or scones — oh my!). For dinners this week, she’s planning Crock Pot FajitasChicken Blueberry Mango Salad, Eggs with Savory Zucchini Pancakes, and Chicken Sausage Broccolini Quinoa.
