ValentineTreatsIt’s Valentine Week.  You didn’t forget about it, did you? Friday is Valentine’s Day, so if you don’t have a plan you might want to start preparing for Friday. I’m hosting the Gluten-Free Menu Swap this week, so be sure to check out the roundup below for more Valentine ideas.

This week, I’m making gluten-free/dairy-free/nut-free Heart-shaped Sugar Cookies for school celebrations. I’m also making Meringue Heart Cookies and Dairy-free Creme Brulee for the family to enjoy. For Valentine’s Day dinner, my kids get to enjoy their favorite Heart-Shaped Pizza, gluten-free of course.

My picks for Valentine treats this year are YummyEarth Organic Gummy Bears and Angie’s Tutti Frutti Popcorn and Vanilla Cupcake Popcorn, all conveniently packaged to give away to classmates and friends.

Elisabeth has some fun plans for Valentine’s Day this year: Chocolate Covered Strawberries, Soft Sugar Cookies to Frost, and Valentine’s Day Eggs in Toast. For dinners this week, she’s planning Fish with Roasted Beets, Eggs with Banana Donuts, Cauli-power Alfredo, Bean Burritos, Cumin Lime Bean Quinoa Salad, Pizza, and more.

Mom’s Plans: Gluten-Free, Dairy-Free Menu
Melissa’s family has a busy week and needs easy meals so they can watch the Olympics, too! This week, they will be enjoying Pork Chops, Tacos, Southwestern Soup, Lettuce-wrapped Hamburgers, Saucy Vegetable Beef Soup, Hamburger Soup, and Slow Cooker Pumpkin Chili.

The Gluten Free Week: Gluten-Free
Lori is really heating things up in the kitchen this week! She is including as many aphrodisiacs in her meals as she can: pomegranates, basil, avocado, oysters, almonds, red wine, garlic, asparagus, honey, and chocolate. Honey Chicken, Love Potion Salad, Spaghetti and Meatballs, Almond Encrusted Halibut, Chicken and Oyster Gumbo, and Filet Mignon. Whoohoo, that’s a lot of lovin’. :)

The Peaceful Mom: Simple Gluten-Free Menu
Kimberlee’s menu this week starts with Black Bean Chicken Chili, Easy Hot Wings, and Chocolate Chip Pancakes. She finishes the week with Cheeseburgers, Chicken Enchiladas, and Taco Bowls. Check out her full menu to get all the recipe links and ideas for breakfast and lunch, too.

BrusselsThis week’s Gluten-Free Menu Swap theme is Brussels Sprouts.  Why Brussels sprouts? Well, sometimes I just get tired of the usual green beans and broccoli, and need a change. I don’t serve Brussels sprouts at our house very often. The kids haven’t been crazy about them in the past. But when I saw Baby Brussels sprouts at the store, I decided to try it out on the family again.

I don’t really think the baby sprouts tasted any different. They are definitely smaller, and maybe they were a little more tender. I trimmed off the ends, but didn’t bother cutting them in half (which I usually do). They were already bite size. To make it fast and easy, I simply sautéed them in a pan on the stove over medium-high heat. I used Earth Balance Garlic & Herbs Culinary Spread (gluten-free, dairy-free, vegan) added to the pan to give the sprouts a little flavor. Once they were a little browned, I covered them with a lid, turned down the heat, and let them cook an additional 10 min. They were great! The kids even liked them……… Let me say that again: The kids liked them! My son even ate a second big serving of them.

I love it when our family can add another healthy food to our menus. According to many online sources, Brussels sprouts are high in fiber, vitamin C, and protein. In addition, they contain calcium, vitamin A, folic acid, iron, and potassium. Brussels sprouts are going to be showing up at our house a little more frequently now. Elisabeth says everyone in her family enjoys Brussels sprouts. She usually just buys them frozen and warms them up.  She made some Chili and Bean Burritos over the weekend to freeze and have for dinner and lunches this week. She’ll also be enjoying Stephanie O’dea’s Tamale Pie in the slow-cooker, Cumin Lime Black Bean Quinoa Salad, Pizza, Oven-Fried Chicken and Fish, and Potato Chip Fish.

The Peaceful Mom: Simple Gluten-Free Menu
Kimberlee has some fun dinner plans this week. She’s updated her recipe for Easy Chicken Stir-Fry, and has plans for Homemade Gluten-Free Waffles with Ice Cream, Queso Fundido with chips, Cheeseburger Pasta, Mango Salsa Chicken, and Chocolate Chip Pancakes. Yum!

Mom’s Plans: Gluten-Free, Dairy-Free Menu
Melissa is happy that her husband did some bulk cooking this weekend to give the family a head-start on the cooking this week. On their menu this week is Beef Roast, Salsa Meatloaf and Tomato Soup, Beef Stroganoff with Pasta, Saucy Vegetable Beef Soup, and Bacon Burger Rice.

The Gluten Free Week: Gluten-Free
Lori is making a Quinoa and Brussels Sprouts Salad with rubbed chicken this week. She’s also having Chili, Honey Chicken Tenders, Salmon, Chicken Tortilla Soup, and Gluten-Free Rubens.
