This week’s theme for the Gluten-Free Menu Swap is Asparagus. 

I am ready for some spring weather. Mother Nature keeps teasing me with a few warm days, and then sending us cold, wind, and even snow flurries. But I am moving forward with eating fresh spring vegetables, and I’m starting with asparagus.

The Peaceful Mom: Simple Gluten-Free Menu
Kimberlee is starting her week with a Greek Pasta Salad and Tomato and Cucumber Salad. If you wanted to add asparagus to your meals, you could certainly toss it into either salad. For the rest of the week, Kimberlee will be having Baked Pork Chops, Sweet and Spicy Crock Pot Chicken, Slow Cooker Chili, Chili Cheese Fries, Chocolate Chip Pancakes, and Hot Dogs with Baked Beans.

Mom’s Plans: Paleo AIP Candida
No asparagus on Melissa’s menu plan this week. Instead, you’ll find on her menu Pork, homemade fries, Baby Back Ribs, Italian Wedding Soup made with spiraled zucchini instead of pasta, Fabulous Fish Tacos using lettuce for shells, Turkey and Broccoli Bake, Cabbage Wrapped Lamb Burritos, and Lemon Terragon Salmon Fillets.

The Gluten Free Week: Gluten-Free
Lori has a great-looking asparagus with bacon and parmesan on her menu this week. She is also making a  Potato and Asparagus Frittata that looks great. The remainder of her week will include Roasted Chicken, Grape and Craisin Chicken Salad, Cobb Salad, Kid-Friendly GF Hamburger Helper, and Tacos.

The Girl Who Couldn’t Eat Anything: eating without Gluten, Dairy, Peanuts, Oats, or Meat
Elisabeth says her family enjoys eating asparagus steamed or grilled. Her young daughter doesn’t enjoy the harder stems, but does like to eat the tips. Elisabeth also likes to add leftover asparagus to scrambled eggs. This week’s dinner options include Vegan Gluten-Free Waffles, Tacos with a Lentil/Quinoa filling, Beans with Hot Dogs, Veggie Pot Pie (with asparagus, perhaps?), Pizza, Smoothies, and Fish Sticks.

It’s spring break at my house, and it seemed like a perfect time to try artichokes with my kids again. It also worked out to choose another Menu Plan Replay for this week: 

“It is officially spring, and I’ve chosen a spring vegetable for this week’s Gluten-Free Menu Swap theme – Artichokes. Artichokes can be a nice way to slow down your meal. You know…steam it fresh, peel and eat each leaf one at a time. It’s kind of fun. Of course, most of us don’t have time to do that with our busy schedules. We’re rushing around and grabbing the can of artichoke hearts or maybe the jar of marinated artichoke hearts. And that’s good for me, too. I love to add the hearts to a salad or casserole.

According to Ocean Mist Farms, artichokes are a good source of Potassium, Magnesium, Vitamin C, Fiber, and Antioxidants. So don’t forget about this beautiful vegetable when you’re planning your meals this season. For more ideas of including them in your meals, check out the roundup of gluten-free menus below.”

Mom’s Plans: Gluten-Free, Dairy-Free Menu
Melissa has two menu plans posted this week. One is gluten-free and dairy-free for her family. The other one, for her, is further restricted for an anti-candida diet. No artichokes on the menus, but you will find Stuffed Pepper Casserole, Spaghetti with Ground Turkey, Pumpkin Beef Chili, Pork Roast, Chicken “Noodle” Soup, Green Chile Turkey Burgers, and Mexican Chicken and Rice. The Avocado Coleslaw looks good, too!

The Peaceful Mom: Simple Gluten-Free Menu
No artichokes on Kimberlee’s menu either this week. She does have a couple tasty soups, though: Beef and Veggie Soup, and Easy Potato Soup. She is also planning for Roast Beef, Taco Bowls, Waffles, and Cheeseburgers. Don’t forget to check out her full menu for breakfast and lunch ideas, too.

Angela’s Kitchen: Gluten-Free and Dairy-Free Menu
Angela has several recipes with artichokes: Braised Mediterranean Chicken, as a filling in Gluten Free StromboliTuna Noodle Casserole, and Hummus Tostada “Pizza”. For dinner this week, her family will be enjoying Carrot Cake Pancakes, Pineapple Pork Chops, Chicken Breasts with Spicy Honey-Orange Glaze, Tuna Noodle Casserole with artichokes, and Goulash.

The Gluten Free Week: Gluten-Free
Lori has lots of artichokes on her menu this week. She’s starting the week with Roasted Turkey served with steamed artichokes, and then later a Turkey and Artichoke Salad. Also on her menu this week is a Spinach Frittata, Hummus and Veggie Wraps, Asian Peanut Pasta, and Salmon and Capers.

AvocadoThis week’s Gluten-Free Menu Swap theme is Avocado.  It’s been a little busy at our house, and I decided to make it easy on myself this week. I pulled out a menu plan from 2012 to get me started. I had to make a few adjustments, but it was nice to have a quick start.

Here’s what I wrote about avocado two years ago: “Since taking dairy out of my diet, I seem to be using avocado more often. I find that avocado slices can be a good substitute for cheese when I feel like my sandwich or salad is missing a little flavor. And apparently, I’m not the only one: I found this great nutritional comparison of a few slices of avocado with a couple TBSP of butter and mayonnaise. The California Avocados website also has some interesting recipes, including desserts which I’ve never really considered for avocados.”

I’m planning on making egg salad sandwiches with slices of avocado this week. I also like to make up guacamole frequently. I may spread it on sandwiches or add it to a plate of chips with tomatoes and refried beans. Can I call that nachos if it doesn’t have cheese on it? Pizza with fresh slices of avocado, Avocado Salsa, or just half an avocado with a scoop of salsa in the middle…it all sounds good to me. For more ideas of including avocados in your meals, check out the roundup of gluten-free menus below.”

Thursday – California Chicken (grilled chicken breasts with melted slices of Monterey cheese (for some) and slices of fresh avocado) served with yellow rice

Lori is adding avocados to her Chef Salad this week. She’s also celebrating St. Patrick’s Day this week with Corned Beef and Cabbage with New Potatoes. To finish out the week, she’ll be having Chicken Pho, Chicken Kebabs with Greek Salad, Potato and Leek Soup, and Fish and Chips.

The Peaceful Mom: Simple Gluten-Free Menu
This week, Kimberlee is serving Easy Cheese Quesadillas with slices of avocado. She is also cooking Mexican Stuffed Peppers, Steak and Peppers, Gluten-Free Pasta, Cheeseburgers, Greek Pasta Salad, and Chicken Enchiladas.

Salads — Gluten-Free Menu Plan March

SaladsI know February is always a short month, but it really flew by this year! I was really sorry I missed the menu swap last week. Fortunately, I had some meals in the freezer to get me through the week.  

This week’s Gluten-Free Menu Swap theme is Salads. And, I am ready for springtime salads! Now, if only Mother Nature would cooperate with some springtime weather. :) Angela is hosting the roundup at Angela’s Kitchen.
