FallRootVegsRoot Vegetables is the theme for the Gluten-Free Menu Swap this week. I’m sure I don’t need to tell you, but I will: That includes beets, carrots, garlic, ginger, onion, potatoes, rutabagas, turnips, water chestnuts, yams, and many more.

Just looking through my recipe index, it’s easy to see that my favorite root vegetable is potatoes:

I definitely need to expand my menu selections to include some other root veggies, so here’s what I found:

FallQuinceQuince is the theme for the Gluten-Free Menu Swap this week. I am familiar with Okra and Pomegranate, but Quince is new for me, so I had to do some research on it.

I found quince at the grocery store recently and was intrigued. I probably would’ve assumed it was a variety of apple if it didn’t have a sign above it explaining the fruit.

Similar in looks to a pear or apple, it is actually too hard and tart to eat raw. Instead it needs to be poached or stewed to soften the flesh and mellow the acidity. It is often made into jam or paste. Most recipes I found were desserts made with poached quince. I thought it was interesting to find out that the flesh will turn pink after cooking.

FallPomPomegranate is the theme for the Gluten-Free Menu Swap this week. 

I have a love/hate relationship with pomegranates. I love the sweet, juicy arils, but hate it when the seeds are too hard to chew. I love the bright red color it add to recipes, but hate the time it takes to peel and separate the arils.

Fortunately, you can often find pomegranate arils already separated in the produce section of your grocery store. You can also easily find pomegranate juice. So, I guess I better quit complaining, and just start cooking.

I’m starting with these gluten-free pomegranate recipes that got my attention this week.

Elisabeth prefers to use pomegranate juice in smoothies. For dinners this week, she’s making Beef Stroganoff over Rice, Bacon/Mushroom Frittata, Fried Rice, Beans and Rice, Tomato Soup, Pizza, Smoothie and Popcorn. Check out her full menu for breakfast and healthy dessert ideas.

Amanda doesn’t usually buy fresh pomegranates, so she’s done some searching on the Internet for some tips. She shares a link for a great way to Easily Remove Pomegranate Seeds. This week, her menu includes Meatloaf, Lettuce Wraps, Salmon and Quinoa, Italian Wedding Soup, Hawaiian Pork Chops, and Burgers.

Gluten-Free Okra — Menu Plan Sept. 7

FallOkra2Thanks to last month’s quick and easy dinners, we made it through the first weeks of school, and are starting to settle into a routine.

Now it’s time to shake things up with a few new foods and recipes so we don’t get bored. We’re starting the month with Okra as the theme for the Gluten-Free Menu Swap.

Recently, I saw a man sifting and sorting through a basket of okra at a local market. I wondered what he was going to do with the okra –Bread it and fry it, maybe? Pickle it? Add it to some Gumbo? I didn’t get around to asking him, but it got me wondering what more you could do with this veggie. So, I did some looking around the internet again.

Elisabeth says she’s only eaten okra in veggie soup mixes. I don’t see any in her menu this week, but she has plenty of other interesting meals to share: Burgers, Spaghetti & Meat sauce, Bacon/Mushroom Frittata, Clam Chowder, Steak Sandwiches, Balsamic Pork Chops, and Pizza. Amanda has some bad childhood memories of eating okra, so she’s a little apprehensive about trying it again. But she found a recipe for Beef and Okra that she’s going to try. She’s also looking for tips for ways to keep the veggie from getting slimy. (Feel free to share your tips in the comments!) Also on her menu this week is Sausage and Peppers, Baked Chicken, Slow-cooker Pork Loin and Apples, Hawaiian Sliders, and eating out at Wild Red Wings.
