The theme this week at the Gluten-Free Menu Swap is Sweet Potatoes. I love to eat sweet potatoes! Actually, I crave them if they don’t make it in to my weekly menus. They are a powerhouse of vitamins and minerals, especially Vitamin A and beta-carotene. Most of the time, I simply oven-roast peeled and chopped sweet potatoes tossed with a little olive oil and salt. At 375° F, the time to cook depends on the size of the pieces and how crispy or soft you want them.

I like to eat leftover sweet potatoes for breakfast. I may eat them warmed and mashed on toast. Sometimes I like to put them in gluten-free oatmeal drizzled with a little maple syrup. I also like to make Chocolate Chip Sweet Potato Muffins. I simply substitute sweet potato puree for the pumpkin. They are simply delicious. I can’t wait to try these recipes. Since my other addiction is chocolate, I’ll probably start with the Chocolate Sweet Potato Donuts and the Sweet Potato Avocado Brownie Bites.

The theme this week at the Gluten-Free Menu Swap is Pears. Pears can be a healthy addition to your diet. They are a good source of fiber, anti-oxidants, vitamin C, and potassium. For an extra dose of fiber, be sure to eat the skin, which contains most of dietary fiber and nutrients found in pears.

Pears are plentiful this time of year. If you are looking for a new way to add them to your meals, there are lots of recipes posted online. Sweet dessert recipes with pears are easy to find, but I also found several gluten-free entree recipes with pears, too. They all look delicious. Where do I start? Perhaps at the beginning with Cranberry Maple Pear Bars. They’ll be a great afternoon snack this week.

Onion is the theme for this week’s Gluten-Free Menu Swap. Onions are used in a lot of recipes for added flavor. Did you know it also has good nutritional content? According to The World’s Healthiest Foods, Onion is a good source of Vitamins B6 and C, Biotin, Manganese, Copper, Fiber, Folate, and more. Considering its health benefits of being anti-microbial, anti-oxidant, and anti-inflammatory, you shouldn’t be afraid to add plenty of onion to your meals.

Which onions do you buy: Shallots, Scallions, Red Onions, White, Yellow, etc.? And, how do you use them? Yellow Onions are considered all-purpose onions for cooking. They’re good for cooking with meats, stews, soups, sauces, and casseroles. White Onions are a little crunchier and less sweet. Use them in fresh salsas, salads, and stir-fries for a little punch of flavor. Use Vidalia Onions when you want a sweeter flavor: onion rings, roasted, sauces, and vegetable dishes, perhaps? Red Onions add not only flavor, but a little color, too. They are great for eating raw in salads and sandwiches. Scallions, or green onions, are good in salads, in Asian dishes, and garnishing meals. Shallots have a more subtle flavor and are good for adding just a little flavor to dressings and sauces. Of course, that’s just a guide. Use whichever onions taste best to you.

For this week’s Gluten-Free Menu Swap, we are sharing ideas for using Celery in your meals. 

Celery is another fall vegetable that has many wonderful health benefits. High in anti-oxidants, celery supports your digestive system, lowers  inflammation, helps fight infections, and does even more to support your health.

Chop up the stalks for a nice crunch in your salads and stir-fries. Use seeds and leaves in soups and salads for flavor. Or, try a new recipe for a little variety in your menu plan.

It is officially Fall, and time for autumn harvest. At the Gluten-Free Menu Swap this week, we are sharing ideas for using Cauliflower in your meals. 

There are a lot of healthy reasons to eat cauliflower, but perhaps it is the anti-inflammatory benefit that have made it so popular in recent times. These days, you can find recipes for a variety of ways to eat it: Cauliflower Rice, Mashed Cauliflower, Cauliflower Pizza Crust. You can even find Cauliflower Rice already prepared for you — both in the produce and the freezer sections of grocery stores.
