Another visit to the Farmers’ Market this weekend. We picked up fresh apricots along with a bounty of other fruits and vegetables. We’ll eat them raw with lunches and snacks, but I’m reserving some for dinner this week, too. I found a couple dinner recipes that call for fresh apricots, so I’ve added them to our menu this week.
I also have some plans for dried apricots. Last week, I received a copy of Elana’s new cookbook Paleo Cooking from Elana’s Pantry: Gluten-Free, Grain-Free, Dairy-Free Recipes. It has lots of intriguing recipes I’ll be trying over the next few weeks. And I’ll be starting with a recipe for Apricot Muffins. She also has a yummy-looking recipe for Apricot Power Bars on her website that I want to try. It looks like a perfect snack for my kids and myself during our busy summer days to the pool, day camps, hiking adventures, and just running errands around town.

Elisabeth says they don’t eat apricots much at her house, other than the occasional fresh, raw indulgence. For dinners this week, she’ll be having Grilled Cheese or Tomato Sandwiches, Quinoa Burgers, Chef Salad, Fish, and Pizza. She also included in her post this week, some links to great breakfast ideas.
Angela’s Kitchen: Gluten-Free, Dairy-Free Menu
This week, Angela is dealing with a power outage and preparing for camping meals. Even without power, she managed to get her menu plan posted with plenty of apricot recipes for us: Orange Apricot Pork Chops, Chicken with Apricot Sauce, Apricot Quinoa Pilaf, Spicy Sweet Glazed Chicken, Fresh Apricot Thai Salad, No-Nut Granola Bars, Apricot Muffins with Almond Strussel, Gluten Free Crisp Granola Bars, Gluten & Dairy Free Hot Cross Buns, and Sweet and Spicy Chicken. For dinners this week, Angela is using up some meals she already has in the freezer: Slow Cooker Black Bean Salsa Chicken, Orange Beef Lettuce Wraps, Chicken and Veggie Nuggets, and Crockpot Salmon Pot Pie.
The Peaceful Mom: Simple Gluten-Free Menu
I don’t see any apricots on Kimberlee’s menu this week, but she has plenty of gluten-free meals to share with us. This week, she’ll be preparing Crunchy Chicken Salad, Baked Potatoes, Cheeseburger Pasta, Black Bean Chicken Chili, Grilled Cheese Sandwiches, Spicy Black Beans, and Pancakes for dinner.
