Brussels Sprouts — Gluten-Free Menu Plan Feb. 3

BrusselsThis week’s Gluten-Free Menu Swap theme is Brussels Sprouts.  Why Brussels sprouts? Well, sometimes I just get tired of the usual green beans and broccoli, and need a change. I don’t serve Brussels sprouts at our house very often. The kids haven’t been crazy about them in the past. But when I saw Baby Brussels sprouts at the store, I decided to try it out on the family again.

I don’t really think the baby sprouts tasted any different. They are definitely smaller, and maybe they were a little more tender. I trimmed off the ends, but didn’t bother cutting them in half (which I usually do). They were already bite size. To make it fast and easy, I simply sautéed them in a pan on the stove over medium-high heat. I used Earth Balance Garlic & Herbs Culinary Spread (gluten-free, dairy-free, vegan) added to the pan to give the sprouts a little flavor. Once they were a little browned, I covered them with a lid, turned down the heat, and let them cook an additional 10 min. They were great! The kids even liked them……… Let me say that again: The kids liked them! My son even ate a second big serving of them.

I love it when our family can add another healthy food to our menus. According to many online sources, Brussels sprouts are high in fiber, vitamin C, and protein. In addition, they contain calcium, vitamin A, folic acid, iron, and potassium. Brussels sprouts are going to be showing up at our house a little more frequently now. Thursday — Fish & Chips with Peas (Loving these new gluten-free battered fish.)

Friday — Indian Chicken (with curry/cinnamon, mango chutney, and peaches) over Jasmine Rice

Saturday — Chicken Spaghetti

Sunday — Pancakes, Chicken Apple Sausage, Berry Fruit Salad

Elisabeth says everyone in her family enjoys Brussels sprouts. She usually just buys them frozen and warms them up.  She made some Chili and Bean Burritos over the weekend to freeze and have for dinner and lunches this week. She’ll also be enjoying Stephanie O’dea’s Tamale Pie in the slow-cooker, Cumin Lime Black Bean Quinoa Salad, Pizza, Oven-Fried Chicken and Fish, and Potato Chip Fish.

The Peaceful Mom: Simple Gluten-Free Menu
Kimberlee has some fun dinner plans this week. She’s updated her recipe for Easy Chicken Stir-Fry, and has plans for Homemade Gluten-Free Waffles with Ice Cream, Queso Fundido with chips, Cheeseburger Pasta, Mango Salsa Chicken, and Chocolate Chip Pancakes. Yum!

Mom’s Plans: Gluten-Free, Dairy-Free Menu
Melissa is happy that her husband did some bulk cooking this weekend to give the family a head-start on the cooking this week. On their menu this week is Beef Roast, Salsa Meatloaf and Tomato Soup, Beef Stroganoff with Pasta, Saucy Vegetable Beef Soup, and Bacon Burger Rice.

The Gluten Free Week: Gluten-Free
Lori is making a Quinoa and Brussels Sprouts Salad with rubbed chicken this week. She’s also having Chili, Honey Chicken Tenders, Salmon, Chicken Tortilla Soup, and Gluten-Free Rubens.
