Brussels Sprouts — Gluten-Free Menu Plan Feb. 3

Brussels [2]This week’s Gluten-Free Menu Swap theme is Brussels Sprouts.  Why Brussels sprouts? Well, sometimes I just get tired of the usual green beans and broccoli, and need a change. I don’t serve Brussels sprouts at our house very often. The kids haven’t been crazy about them in the past. But when I saw Baby Brussels sprouts at the store, I decided to try it out on the family again.

I don’t really think the baby sprouts tasted any different. They are definitely smaller, and maybe they were a little more tender. I trimmed off the ends, but didn’t bother cutting them in half (which I usually do). They were already bite size. To make it fast and easy, I simply sautéed them in a pan on the stove over medium-high heat. I used Earth Balance Garlic & Herbs Culinary Spread [3] (gluten-free, dairy-free, vegan) added to the pan to give the sprouts a little flavor. Once they were a little browned, I covered them with a lid, turned down the heat, and let them cook an additional 10 min. They were great! The kids even liked them……… Let me say that again: The kids liked them! My son even ate a second big serving of them.

I love it when our family can add another healthy food to our menus. According to many online sources, Brussels sprouts are high in fiber, vitamin C, and protein. In addition, they contain calcium, vitamin A, folic acid, iron, and potassium. Brussels sprouts are going to be showing up at our house a little more frequently now. And I found some new recipes to try, too:
