GFPumpkinsPumpkin is the theme for the Gluten-Free Menu Swap this week. Pumpkin is a terrific source of anti-oxidants, vitamin A, vitamin B complex, and minerals. Perfect for supporting your health during the season, right? It also has a great seasonal flavor and color to add to your meals.

So, what are you doing with pumpkin this season? Roasting? Stewing? Steaming? I found some great online sources to give you (and me!) some additional ideas.

Elisabeth says she prefers butternut squash and sweet potatoes to pumpkin, but she has it on her menu this week anyway. She’s making Pumpkin Ice Cream, Shirley’s Crustless Pumpkin Pie, and Pumpkin Waffles. For dinner this week, she’s making Spaghetti and Meatballs, Veggie Soup, Vegan Nachos, Smoothie and Popcorn, Sweet Potato and Bean Enchiladas, and Pizza.

GFFennelFennel is the theme for the Gluten-Free Menu Swap this week. Fennel is new to me. Well, not exactly new. I’m familiar with the mild licorice or anise flavor. And, I’m not new to using Fennel Seed in recipes. But, I can’t recall ever buying fresh fennel. So, I figured it was about time I tried it.

I went looking for some inspirational gluten-free recipes, and I found plenty of them online. Some of the recipes I found call for fresh fennel, and some call for using fennel seeds. I even found some recipes that were a a little surprising. I’m looking forward to trying some of them this week and throughout the season.

Melissa has a delicious menu lined up for this week. She’s starting the week with Smoky Chipotle Chili Cheese Mac, Mongolian Beef, and a Rice Bake. She’ll continue the week with Bean and Cheese Enchiladas, Salmon Patties, Honey Lime Chicken Tacos, and a warming Loaded Baked Potato Soup.

Elisabeth says she doesn’t use fresh fennel, but has used fennel seed to season sausage. For dinners this week, she’ll be making Paleo Pumpkin Waffles, Easy Clam Chowder, Sweet Potato and Bean Enchiladas,  Chipotle Copy Cat Beans and Rice, and Pizza.

Mom’s Plans: Gluten-Free, Dairy-Free, and Corn-Free
Melissa is working with a tight grocery budget, but still manages to come up with tasty, filling meals. This week it will be Rustic Bacon and Pumpkin Soup, Slow-Cooker Sloppy Joe’s, Chicken Pot Pie, Paleo Chili, Slow Cooker Pumpkin Chili, and Tuna Noodle Casserole.

ApplesThe cool fall weather blew in this weekend at my house, and all I can think of is warm, comfort foods. Fortunately, with Apples as the theme for the Gluten-Free Menu Swap this week, that fits right into my menu plan.

This week I’ll be eating raw apples for snacks and salads this week, but I’m also cooking it up — Sautéed Spinach with Apples and Onions, Chicken and Apple Sausage, Pork and Apple Curry, and Honey Apple Cider Glazed Salmon. Yum!

SweetPotatoesThis month at the Gluten-Free Menu Swap, we’re discovering old and new ways to enjoy Fall Produce. This week, we’re exploring ways to add Sweet Potatoes to our meals.

What variety of Sweet Potato do you buy and eat?
I usually buy the standard Sweet Potatoes (rosy skin color, orange flesh), but I’ve been intrigued by the Golden Sweet Potatoes and Garnet Red Sweet Potatoes I’ve been finding at the stores and the farmers’ markets. I’ve been told that the darker skin colors are sweeter, and the lighter skin colors are more mild. I may have to do a taste test this week and see for myself.

Nutritionally, Sweet Potatoes are packed with good stuff. They are an excellent source of Vitamin A and Beta Carotene, as well as a good source of Vitamin C, Vitamins B, Manganese, Copper, Potassium, and fiber. So eat it up this fall!

GFWorldChinaAnother Monday, another Gluten-Free Menu Swap with plenty of tempting gluten-free meals. Chinese Food is the last theme of Tastes of the World this month. 

When eating Chinese food, there are a few common things you need to check for gluten. First, and most common problem is soy sauce. Yes, most soy sauce is made with wheat. Fortunately, there are several brands of gluten-free Soy Sauce alternatives:

Crispy Fried Entrees, Tempura
Most of these meals are battered, which means flour and gluten. To make your own, use cornstarch and egg whites.

WonTons, Dumplings, Egg Rolls, Spring Rolls, etc.
The wrappers used to make these are made with flour (gluten). To make your own, try Spring Roll Rice Paper Wrappers like I do for Gluten-Free Egg Rolls.

Try P.F. Chang’s and Pei Wei restaurants. Both have menus with many gluten-free options.

No Chinese food on Melissa’s plan this week. Instead, her family will be eating a couple slow cooker meals — Slow Cooker Pumpkin Chili and Beef and Cabbage Soup. They will also be enjoying Tuna Noodle Casserole, BLTs, Roasted Chicken, Salmon, and a Foil Dinner with Hamburger, Potatoes, and Carrots. Elisabeth says she uses the Coconut Aminos to replace soy sauce at her house. And, I have to say that it is well-received at my house, too. Elisabeth also found frozen gluten-free Egg Rolls and Dumplings made by Feel Good Foods to purchase. Looks like the company is coming out with frozen gluten-free Asian meals, too. Can’t wait to give them a try! For dinners this week, Elisabeth’s family will be eating French Toast Roll-Ups, Chipotle Beans and Rice, Butternut Squash Smoothie, Tomato Soup, Stuffed Squash, and Pizza.

The Peaceful Mom: Simple Gluten-Free Menu
Kimberlee isn’t planning any Chinese meals this week. She does have some Tex-Mex meals on her menu: Black Bean Chicken Chili, Chicken Enchiladas, and Spicy Black Beans. Her family will also be eating BBQ Pork Sliders, Pizza, BBQ Pepper Jack Bacon Burgers, and Bacon and Eggs for dinners this week.

The Gluten Free Week: Gluten-Free
Lori isn’t limiting herself to Chinese food this week. She’s including all types of Asian food, including Vietnamese and Thai food, too. Lori reminds us to be careful about eating imitation crab and fish in prepared sushi because some of it contains gluten. Lori enjoys making Asian Peanut PastaChicken Stir FryAsian Beef SkewersBok Choy Stir Fry, and Chicken Pho. To fill in her week’s menu, she’s also planning for Gluten-Free Apple Sausages, Veggie-Packed Pizza Wraps, and Turkey Burgers.
