I think I overindulged on the fat and sugar, so it&#8217;s time to get back to my daily smoothies. I&#8217;ve got a big bunch of spinach just staring at me, daring me to put it into my <a href="http://celiacfamily.com/menu-plan-january-16-smoothies/" target="_blank">smoothies</a>. I know a lot of you frequently drink <a href="http://pinterest.com/celiacfamily/green-smoothies/" target="_blank">green smoothies</a>. I did it for a while, then got lazy and just used fruit, no leafy greens to boost the nutritional value. And, lately my daily fruit smoothie has evolved into my weekly smoothie. So I&#8217;m going to get back to it this week.</p>
<p>Have you seen what just a cup of spinach can add to your diet? <a href="http://www.whfoods.com/genpage.php?tname=foodspice&amp;dbid=43" target="_blank">Whfoods.com</a> sums it up by saying &#8220;Calorie for calorie, leafy green vegetables like spinach with its delicate texture and jade green color provide more nutrients than any other food.&#8221; Add to that that its qualities of being an anti-inflammatory and anti-oxidant, and I&#8217;d call it a <strong>superfood</strong>. So, I went searching for some new ideas for adding it into our meals. Here are just some of the yummy-looking recipes I found on the web:</p>

They eat spinach in many ways: fresh or cooked in salads, sautéed, in smoothies, and in sandwiches. I&#8217;ll bet it&#8217;s in her salads and in the Chicken Sandwich Wraps she&#8217;s planning this week. She&#8217;s also making Roast Chicken, <a href="http://angelaskitchen.com/2007/02/19/menu-plan-monday-12/" target="_blank">Calico Beans</a> and <a href="http://angelaskitchen.com/2007/01/10/what-we-are-eating-this-week-2/" target="_blank">Corn Bread</a>, and <a href="http://angelaskitchen.com/2007/05/10/slow-cooking-thursday-turkey-meatloaf/" target="_blank">Slow Cooker Turkey Meatloaf</a>.</p>
<p style="padding-left: 30px;"><strong>Paige at <a href="http://notmissingathing.blogspot.com/2012/05/meal-plan-monday-may-14-2012.html" target="_blank">Not Missing a Thing!</a></strong> is celebrating her daughter&#8217;s birthday this week with <a href="http://www.notmissingathing.blogspot.com/2011/08/pizza-one-for-tonight-three-for-later.html" target="_blank">Pizza</a> and Clams. I would suggest adding some spinach to the pizza, but that may not be the birthday girl&#8217;s favorite. <p>For this week&#8217;s mushroom theme, I&#8217;m going to try a new recipe I found from Silvana Nardone that looks really good: <a href="Roasted Mushroom-stuffed Chicken Roll-ups" target="_blank">Roasted Mushroom-Stuffed Chicken Roll-ups</a>. Can&#8217;t wait to give it a try. Also this week, I&#8217;m adding mushrooms to a pizza and a quinoa dish, and maybe the egg and hash brown casserole, too.</p>

<p>Looks like it&#8217;s going to be plenty warm for grilling outdoors this week. And, if the rain rolls in, I&#8217;ll pull out my <a href="http://www.amazon.com/gp/product/B00008GKDQ/ref=as_li_ss_tl?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B00008GKDQ">Cast-Iron Grill Pan</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B00008GKDQ" alt="" width="1" height="1" border="0" /> to grill on the cook top. Most of the meals I grill are pretty simple: <a title="Better Burgers Gluten Free" href="http://celiacfamily.com/better-burgers-gluten-free/" target="_blank">Burgers</a>, steaks, <a title="Marinated Flank Steak" href="http://celiacfamily.com/marinated-flank-steak/" target="_blank">marinated flank steak</a>, chicken breasts, potato slices, corn on the cob, etc. I&#8217;ll be checking out ideas from everyone else just to change things up a bit.</p>

This month has been a mix of hot days, cool days, rainy days, and then warm days again. My plants are loving it! The kids and I have scattered flower seeds that have begun sprouting. And the mint&#8230;well, mint comes back strong every spring, and this is no different. The kids are already anxious to cut off some mint leaves to put into our tea and lemonade. My husband has even started making refreshing mojitos.</p>
<p><strong>This week&#8217;s theme for the Gluten-Free Menu Swap is Mint.</strong> I&#8217;m adding some fresh mint to my <a title="Berry Good Summertime Salad" href="http://celiacfamily.com/berry-good-summertime-salad/" target="_blank">Berry Fruit Salad</a> this week, as well as making <a href="http://www.gfgoodness.com/2009/07/11/2056/" target="_blank">Cheryl&#8217;s Lemony Mint Quinoa</a>. I&#8217;m anxious to hear how others use mint in their recipes. Other than the fresh mint I&#8217;m getting out of my garden, my monther-in-law started me on a love affair with Andes mint chips. She made some gluten-free brownies that she topped with <a href="http://www.amazon.com/gp/product/B0065MVDF8/ref=as_li_ss_tl?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0065MVDF8">Andes Chocolate Mint Baking Chips</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B0065MVDF8" alt="" width="1" height="1" border="0" /> that she let melt on top of the brownies. We had a fun Easter celebration with family, a good spring break, and now are ready to get back to our regular schedule. Well&#8230;I am ready to get back to it. And I&#8217;m starting with a menu plan.</p>
<p><strong>This week&#8217;s theme for the Gluten-Free Menu Swap is Avocado.</strong> Since taking dairy out of my diet, I seem to be using avocado more often. I find that avocado slices can be a good substitute for cheese when I feel like my sandwich or salad is missing a little flavor. And apparently, I&#8217;m not the only one: I found this great <a href="http://www.avocado.org/nutrition/" target="_blank">nutritional comparison</a> of a few slices of avocado with a couple TBSP of butter and a slice of cheddar. The <a href="http://www.avocado.org/recipes/" target="_blank">California Avocados website</a> also has some <a href="http://www.avocado.org/recipes/" target="_blank">interesting recipes</a>, including desserts which I&#8217;ve never really considered for avocados.</p>
<p>Thinking about all the hard-boiled, and colored Easter eggs I have in my refrigerator, I&#8217;m planning on making <a title="Heather’s Favorite Egg Salad" href="http://celiacfamily.com/heathers-favorite-egg-salad/" target="_blank">egg salad</a> sandwiches with slices of avocado this week. I also like to make up <a title="Quick &amp; Easy Meals" href="http://celiacfamily.com/quick-easy-meals/" target="_blank">guacamole</a> frequently. I may spread it on sandwiches or add it to a plate of chips with tomatoes and refried beans. Can I call that nachos if it doesn&#8217;t have cheese on it? <a title="Mexican Pizza" href="http://celiacfamily.com/mexican-pizza/" target="_blank">Pizza</a> with fresh slices of avocado, <a title="Avocado Salsa" href="http://celiacfamily.com/avocado-salsa/" target="_blank">Avocado Salsa</a>, or just half an avocado with a scoop of salsa in the middle&#8230;it all sounds good to me. <strong>For more ideas of including avocados in your meals, check out the roundup of gluten-free menus below.</strong></p>

<p style="padding-left: 30px;"><strong>Wendy and her family at <a href="http://celiacsinthehouse.com/2012/04/gluten-free-menu-swap-avocados.html" target="_blank">Celiacs in the House</a></strong> indulged in avocados over the last few weeks when she found them on sale. She made lots of guacamole that she added to tacos, omelets, and salads, including an Avocado and Grapefruit Salad from <a href="http://celiacsinthehouse.com/2012/03/dinner-with-elizabeth-barbone.html" target="_blank">Elizabeth Barbone&#8217;s new cookbook</a>. Wendy even made a raw chocolate pudding with avocados! <a href="http://celiacsinthehouse.com/2012/04/gluten-free-menu-swap-avocados.html" target="_blank">This week, her menu</a> includes Stuffed Baked Potatoes, Grilled Chicken Thighs, Beef and Black Bean Tacos, Turkey Meatloaf, and more.</p>
<p style="padding-left: 30px;"><strong>Renee at <a href="http://beyondriceandtofu.com/2012/04/09/meal-plan-monday-april-9-2012/" target="_blank">Beyond Rice and Tofu</a></strong> says she didn&#8217;t grow up eating avocados, but has learned to love them as an adult. She likes to eat them mashed and spread on a piece of toast or in a wrap with a little balsamic dressing. <a href="http://beyondriceandtofu.com/2012/04/09/meal-plan-monday-april-9-2012/" target="_blank">This week</a>, she&#8217;ll be eating avocados with Savory Pinto Beans. Also on <a href="http://beyondriceandtofu.com/2012/04/09/meal-plan-monday-april-9-2012/" target="_blank">her menu this week</a> is Chickpea Picatta, Curried Tofu, Creamy and Light Macaroni and Cheese, and Curried Lentils with Paneer.</p>
<p style="padding-left: 30px;"><strong>Samantha at <a href="http://sosimplygood.com/2012/04/09/menu-plan-monday-04-09-12/" target="_blank">So Simply Good</a></strong> is another fan of avocados. She likes to eat it diced with chicken salad, sliced on burgers, blended into smoothies, mashed in guacamole, or just raw with salt and pepper. On <a href="http://sosimplygood.com/2012/04/09/menu-plan-monday-04-09-12/" target="_blank">her menu this week</a> is Kale, Olive and Ham frittata from <a href="http://sosimplygood.com/2012/04/06/five-for-friday-you-need-to-eat-like-a-dinosaur/" target="_blank">Eat Like a Dinosaur</a>, Balsamic and Onion Pot Roast, Pork and Cabbage Stir Fry, Primal Chicken Tikka Masala, and even more yummy meals.</p>
<p style="padding-left: 30px;"><strong>Angela at <a href="http://angelaskitchen.com/2012/04/09/menu-plan-monday-april-9-2012/" target="_blank">Angela&#8217;s Kitchen</a></strong> also finds the creaminess of avocados to be a good substitute for cheese, sour cream, and other dairy products. Like Wendy, Angela likes to use avocado in chocolate pudding. On <a href="http://angelaskitchen.com/2012/04/09/menu-plan-monday-april-9-2012/" target="_blank">her menu this week</a> is Glazed Chicken Breasts, Pizza, GF Wrap Sandwiches, Nachos, and Hamburgers.</p>
<p style="padding-left: 30px;"><strong>Emily at <a href="http://ourfrugalhappylife.blogspot.com/2012/04/menu-plan-48-carnitas-cheeseburger.html" target="_blank">Our Frugal Happy Life</a></strong> isn&#8217;t eating avocados this week. However, her meal plan does have some tasty gluten-free meals planned:  Carnitas, Cheeseburger Meatloaf, <a href="http://ourfrugalhappylife.blogspot.com/2010/09/easy-roasted-potatoes.html" target="_blank">Roasted Potatoes</a>, and Baked Creamy Chicken Taquitos.</p>
<p style="padding-left: 30px;"><strong>Debbi at <a href="http://debbidoesdinnerhealthy.blogspot.com/2012/04/menu-plan-monday-april-9-april-15-2012.html" target="_blank">Debbi Does Dinner&#8230;Healthy and Low Calorie</a></strong> has a flavorful <a href="http://debbidoesdinnerhealthy.blogspot.com/2012/04/menu-plan-monday-april-9-april-15-2012.html" target="_blank">menu planned this week</a>. I don&#8217;t see avocado on the menu, but you could easily add it to her <a href="http://debbidoesdinnerhealthy.blogspot.com/2009/11/asian-turkey-broccoli-slaw-teriyaki.html" target="_blank">Asian Broccoli Slaw Turkey Wrap</a> or the Chickpea Salad Wrap on her menu. She will also be making Garlic Cheddar Chicken, Bacon Butternut Risotto, slow-cooked Orange Chicken, and more.</p>

I&#8217;ve chosen a spring vegetable for the <strong>theme for this week&#8217;s Gluten-Free Menu Swap &#8211; Artichokes</strong>. Artichokes can be a nice way to slow down your meal. You know&#8230;<a href="http://www.oceanmist.com/products/how-to-prepare/how-to-steam-an-artichoke.aspx" target="_blank">steam it fresh</a>, <a href="http://www.oceanmist.com/products/how-to-prepare/how-to-eat-an-artichoke.aspx" target="_blank">peel and eat each leaf one at a time</a>. It&#8217;s kind of fun. Of course, most of us don&#8217;t have time to do that with our busy schedules. We&#8217;re rushing around and grabbing the can of artichoke hearts or maybe the jar of marinated artichoke hearts. And that&#8217;s good for me, too. I love to add the hearts to a salad or casserole.</p>
<p>According to <a href="http://www.oceanmist.com/health/vitamin.aspx" target="_blank">Ocean Mist Farms</a>, artichokes are a good source of Potassium, Magnesium, Vitamin C, Fiber, and Antioxidants. <p style="padding-left: 30px;">With the warm weather sending all the neighborhood kids outside to play,<strong> Paige at <a href="http://notmissingathing.blogspot.com/2012/03/meal-plan-monday-march-26-2012.html" target="_blank">Not Missing a Thing!</a></strong> has had to figure out how to get a few extra servings from her meals for the visiting neighborhood kids. It sounds like summer already at her house. Well, I don&#8217;t know if she&#8217;s planning for it this week, but her meals of <a href="http://notmissingathing.blogspot.com/2011/09/meatballs-gluten-dairy-and-egg-free.html" target="_blank">Meatloaf</a> and Taco Soup with Cornbread seem like good choices for stretching the meals to add an extra guest. She&#8217;s also celebrating her daughter&#8217;s birthday with a Seafood Sampler on <a href="http://notmissingathing.blogspot.com/2012/03/meal-plan-monday-march-26-2012.html" target="_blank">her menu this week</a>.</p>

She&#8217;s making Roasted Tofu with Braised Brussels Sprouts, Chana Dal with Indian Spiced Roasted Cauliflower, Tofu Curry, and Mujadara with Kale Salad.</p>

Rachel loves casseroles, and is making two chicken casseroles this week: Chicken Cordon Bleu and Buffalo Chicken. Then, it&#8217;s Nachos, Pizza and Wings for the kids. And there are some recipes that definitely inspire you to create your own versions: The Deliciously Sophisticated Omelet, Egg Muffins and Vegetable Fried Rice. Using simple ingredients, you can easily make these dishes your family&#8217;s favorites by mixing in what your family likes best. For the Egg Muffins, Hasselbeck even suggests letting each family member or guest add their favorite ingredients to the muffin cups before baking. Sounds like a great way to get my kids involved in the process.</p>

What&#8217;s really great about this cookbook is that the recipes are dairy-free. (My intolerance for dairy seems to have reached levels that seem to indicate an allergy, so I&#8217;ve been removing dairy from our meals and recipes.) This cookbook also has several recipes that would be easy to make your own just by changing out a few ingredients: Crab and Artichoke Frittata, Shepherd&#8217;s Pie, Pizza recipes for both a crispy and traditional crust, and Coconut Ice Cream. I&#8217;m planning on trying the Frittata, but I think I&#8217;ll try it with ham or prosciutto instead of crab. And, I&#8217;m really looking forward to trying the Coconut Ice Cream. I have some Andes chocolate mint chips that I think would be a great addition to it.</p>

I sat down more than once this past weekend to write this week&#8217;s menu plan and each time I didn&#8217;t get very far. Each time I wrote, it was a few sentences about something different. There are lots of distractions going on for me and my family right now. Some good, some bad, and some just part of being a wife, mother, daughter, daughter-in-law, aunt, home-owner, volunteer, neighbor, blogger, etc. I&#8217;m sure you all know what I&#8217;m talking about.</p>
<p>Rather than show you the jumbled mess that I tried to write on several different occasions, let me just say that the <strong>theme for this week&#8217;s Gluten-Free Menu Swap is Eggs</strong>. I chose Eggs as the theme because I guess I&#8217;m already thinking about Easter. And&#8230;well, it&#8217;s getting to be the season for eggs. Yup, chickens will lay eggs more frequently during the seasons with more sunlight. (Of course, eggs are available year-round at the grocery stores because the chickens are exposed to artificial light to keep them laying.)</p>
<p>Breakfast seems to be the common meal of the day for eggs, but don&#8217;t forget about other meals, too. Egg salad, sliced hard-boiled eggs added to salads, quiche, frittatas, etc. are all good options for lunch and dinner, too! We recently ate at <a href="http://www.austingrill.com/content/locations.html" target="_blank">Austin&#8217;s Grill</a>, where I found their Migas Plate (on their <a href="http://www.austingrill.com/images/website/1049/files/glutenbrunch_138.pdf" target="_blank">gluten-free menu</a>) to be just what I needed to give me a boost of protein and energy. <p style="padding-left: 30px;"><strong>Paige at <a href="http://notmissingathing.blogspot.com/2012/03/meal-plan-monday-mar-12-2012.html" target="_blank">Not Missing a Thing!</a></strong> cooks gluten-free, dairy-free, and egg-free, so no egg dishes in her menu this week. But don&#8217;t let that stop you from checking out <a href="http://notmissingathing.blogspot.com/2012/03/meal-plan-monday-mar-12-2012.html" target="_blank">her menu this week</a>. She&#8217;s trying my <a title="Quinoa Indian Chicken aka Confusion Chicken" href="http://celiacfamily.com/quinoa-indian-chicken/" target="_blank">Quinoa Indian Chicken</a> and Paula Deen&#8217;s Swiss Steak in the crockpot. She also has a dairy-free <a href="http://notmissingathing.blogspot.com/2012/03/cream-of-potato-soup-gluten-dairy-and.html" target="_blank">Cream of Potato Soup</a> that looks great. Her family will be celebrating St. Pat&#8217;s Day with Corned Beef and Roast Potatoes on Friday and Turkey and Mashed Potatoes on Saturday.</p>
<p style="padding-left: 30px;"><strong>Rachel at <a href="http://gabbys-mom21cooks.blogspot.com/2012/03/menu-plan-monday-31212.html" target="_blank">Rachel Cooks</a></strong> is trying some new gluten-free <a href="http://gabbys-mom21cooks.blogspot.com/2012/03/menu-plan-monday-31212.html" target="_blank">meals this week</a>. She&#8217;s starting her week with Seafood Alfredo, trying Schwann&#8217;s Fire Grilled Italian Cod, and is going to try making homemade Chicken Noodle Soup. She also has Burgers, Tacos and Herbed Pork Roast on the menu. She has a Breakfast night planned, too, and says she might make eggs, but I bet her son will be able to convince her to make <a title="Today is Pancake Day!" href="http://celiacfamily.com/today-is-pancake-day/" target="_blank">Pamela&#8217;s pancakes</a> instead. <img src='http://celiacfamily.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p style="padding-left: 30px;"><strong>Wendy at <a href="http://celiacsinthehouse.com/2012/03/gluten-free-menu-plan-march-12-eggs.html" target="_blank">Celiacs in the House</a></strong> was fortunate to have her daughter home from college last week cooking and baking up lots of yummy things. <a href="http://celiacsinthehouse.com/2012/03/gluten-free-menu-plan-march-12-eggs.html" target="_blank">This week</a>, however, Wendy is cooking some recipes from some new gluten-free cookbooks. Kale, Bacon, and Black Olive Egg Pie sounds deliciously healthy! She also has on the menu Homemade Chipotle Chicken Rice Bowls, Vegetable Soup with flatbread, and <a href="http://celiacsinthehouse.com/2012/01/salmon-cakes-with-quinoa-and-kale.html" target="_blank">Salmon and Quinoa Cakes</a>. And check out her photo of tempting Turkey Burgers on waffle buns.</p>
<p style="padding-left: 30px;"><strong>My Big Apology.</strong> I thought I was distracted this week? Well, I must have been even crazier last week, because I completely missed two menu plans that were linked in last week&#8217;s comments.
