It is officially Fall, and time for autumn harvest. At the Gluten-Free Menu Swap this week, we are sharing ideas for using Cauliflower in your meals. 

There are a lot of healthy reasons to eat cauliflower, but perhaps it is the anti-inflammatory benefit that have made it so popular in recent times. These days, you can find recipes for a variety of ways to eat it: Cauliflower Rice, Mashed Cauliflower, Cauliflower Pizza Crust. You can even find Cauliflower Rice already prepared for you — both in the produce and the freezer sections of grocery stores.

For the last week of September, we’re sharing recipes and ideas for using parsley in our meals. Whether it’s curly or flat parsley, it will add a little vibrance to your meals…and a little nutrition, too! It isn’t just a pretty garnish to put on your plate, it contains healthy vitamins A, C, and K, as well as iron and folic acid.

We’re cooking with Fresh Herbs at the Gluten-Free Menu Swap this month. This week, we’re sharing recipe links and ideas for using Fresh Mint. 

Mint is the easiest herb for me to grow. In fact, once it gets in the garden, it’s hard to control. I’ve grown it in pots both outside and inside with good results.

There are some great benefits to eating mint. Anyone with a sensitive tummy should know that mint is great for digestion and is known to relieve gas and bloating. I always have mint tea at our house. Some people also believe that mint can increase mental alertness. So you might want to keep some mint gum or candy at hand in the car, desk at work, or maybe in your school backpack. 🙂

We’re cooking with Fresh Herbs at the Gluten-Free Menu Swap this month. This week, we’re sharing recipe links and ideas for using fresh Cilantro (also known as Coriander). 

I love Cilantro. I wasn’t sure when I first tasted it in salsa many years ago, but I quickly learned to appreciate the fresh aroma and flavor it adds to dishes. I know, however, that there is a considerable number of people who have a strong dislike of cilantro and actually find it to taste like soap or some other inedible item. Some people even have an allergy to it.

If you don’t like cilantro or can’t safely eat it, you may want to consider replacing it in these recipes with your favorite herb. Perhaps Basil or a flat parsley?

I love all the fresh herbs available during the summer, and the basil is still plentiful at the markets. It’s always nice to add fresh basil to pasta salads (or any salad), but I found a wide variety of gluten-free recipes that use basil.
