Beef – Menu Plan February 4

BeefBeef is the theme for this week’s Gluten-Free Menu Swap. I’m often trying to find a theme for the menu swap that we haven’t chosen before. And this seems to be the first time for beef. Other than the few recipes I’ve linked in our menu below, you may be interested in Beef Kabobs and my review of Gluten-Free Gobsmacked’s recipe for Cheese Bread, which I have used for hamburger buns.

Gluten Free Menu Swap Roundup

Angela’s Kitchen: Gluten-Free and Dairy-Free Meals
Last month, Angela’s Family purchased over 100 lbs of grass-fed beef. Fortunately, she has plenty of freezer and beef recipes to make good use of it. You may want to consider trying Beef Empanadas, Enchilada Meatballs, or Korean-style Shredded Beef Tacos. This week, her family will get to enjoy Beef and Butternut Squash Stew, Mexican Cornbread Casserole, as well as Homemade Beef Sausage, Chicken White Bean and Kale Soup, and Swedish Meatballs.

The Peaceful Mom: Simple Gluten-Free Menu
Kimberlee is preparing London Broil for her family this week. She also has Chicken Enchiladas, Fresh Tomato Cucumber Salad, Black Bean Chicken Chili, and Chicken Wings on the dinner menu. You will also find breakfast and lunch recipes/ideas on her menu this week.

Beyond Rice and Tofu: Gluten-Free and Vegetarian Meals
Renee doesn’t often eat beef, or meat of any kind, at her house. But she does have plenty of tasty meals on her menu this week: Cauliflower Crust Pizza, Sweet Potato Black Bean and Kale Tacos, Vindaloo Vegetables with Rice, Potatoes and Peas in Red Curry, and Roasted Tofu with Brussels Sprouts.

Awkward Girl Gets Fit: Gluten-Free, Grain-Free, Refined Sugar-Free Meals
Samantha has beef on her menu this week with Flank Steak Fajitas, Pot Roast, and Tri-tip. She is also planning for Grilled Chicken, Roasted Broccoli and Garlic, Chicken and Vegetable Lo Mein, and Zucchini Paleo Alfredo-ish. This week, she’s also starting a Sugar-detox program, so stop by to check it out or follow her progress this month.

Our Frugal Happy Life: Gluten-Free Menu
Emily has ground beef on her menu this week: Cheeseburger Meatloaf, Cheeseburger Rice, and Hamburger Gravy over Mashed Potatoes. She’ll also be cooking Chicken Enchilada Dip,  Garlic Parmesan Chicken, and Homemade Chicken Nuggets.

Mom’s Plans: Gluten-Free Menu Plan for the family and Paleo Auto-Immune Rotation Plan for Melissa
You’ll find beef in Melissa’s menu plan for her family (Enchilada Pie, Beef Stew, and Taco Casserole) and for herself (Ribeye Steak and Meatball Soup). Also on her menus this week is Tortilla Soup, Chicken Pesto Soup, Roasted Butternut Squash with Cinnamon, Cod Fish, and Turkey patties.

SnowBerriesHard to believe January is over. I missed having my monthly menu plan last month to help me get my Mondays started. So, I’m back to it this month. I will update it, as necessary, with my weekly menu plans posted on Mondays.

Cabbage – Menu Plan Jan. 28

I don’t get very excited about cabbage, and I’ve probably gone overboard with all the cabbage in our menu this week. But, since I’ve got a red and green head of it in my frig, I guess I’d better use it. So, I’ll be using it this week in side salads and egg rolls this week.

Lemon – Menu Plan Jan. 21

LemonsLemon is the theme for this week’s Gluten-Free Menu Swap.
We know that lemon can provide a nice punch of flavor to dishes. The zest and citric juice provide a tart but pleasing acid to your dressings, sauces, and baked goods. But lemons can also be a good immune-booster, which sounds good to me with all the flus and viruses going around right now. Lemons contain vitamin C, have anti-bacterial qualities, and help aid in digestion. So, I’m boosting my use of lemons this season.

This month I’ve been making lemon water with my Infusion Pitcher, to try to stay away from the sugary drinks. I like to use the lemon water to make iced tea, too. This week, I’ll be using fresh lemon juice and/or zest in Indian Chicken, Sautéed Spinach, Red Potato and Green Bean Salad, a Lemon Meringue Pie, Salmon with Lemon and Dill, and Roasted Asparagus with a Lemon Vinaigrette. In the past, I’ve also made Cilantro Lime Shrimp using Basil and Lemon instead. It was delicious. I may need to try that with Cilantro Lime Rice, too.

Gluten Free Menu Swap Roundup

Angela’s Kitchen: Gluten-Free,  Dairy-Free Menu
Angela is having the cold weather we had last week, so she’s staying inside and baking and cooking warm meals. She has lots of meals with lemon to share, too: Grilled Lemon Angel Food Cake, Lemon Poppy Seed Waffles, Lemon & Spinach Stuffed Chicken, Tilapia with Lemony Spinach and Mushrooms, Lemon Berry Donut Holes, and still more! You need to check them all out. To keep her family warm this week, she will be using the slow-cooker to make Black Bean Salsa Chicken, Pork Chops with Apple Cranberry Sauce, and Beef and Sweet Potato StewLemon Chicken and Veggies with Capers and Gingerbread Pumpkin Waffles round out their meals this week. Be sure to check out her freezer cooking plan, as well as plans for breakfast and lunch this week, too.

The Peaceful Mom: Simple Gluten-Free Menu
Kimberlee has a great way to make Gluten-free Lasagna for one. What a fun way to let everyone make their own some night. Might be a perfect solution for families who have to manage multiple food allergies. Also on her menu this week is Chicken and Black Bean Chili, Rosemary Roasted Chicken, Cheeseburgers, Greek Pasta Salad, and Baked Chicken. Kimberlee also has breakfast and lunch plans on her menu.

Awkward Girl Gets Fit: Grain Free, Gluten Free, Refined Sugar Free Menu
Samantha’s menu is full meals that work for anyone on a Paleo or Primal diet. She’s starting the week with Blackened Chicken and Avocado Sauce and Shredded Beef Taco Roast. Then finishes the week with Crockpot Chicken and Gravy, Grilled Tri Tip, Chocolate Chili and Omelettes. If you’re interested in how Sam plans her meals, check back with her on Wednesday when she’ll talk about her meal planning process. Then, on Thursday she’ll share how using Pinterest has also inspired her meal plans.

Mom’s Plan: Gluten-Free Menu for the family and Paleo Auto Immune Menu Plan for Melissa
Melissa shares a detailed breakfast, lunch, and dinner menu plan for herself. She is on a strict Paleo rotation diet due to a variety of food intolerances. But don’t let that make you think she’s not eating well! She has Flounder, Bison Patties, Pork Chops, White Fish, Pork Tenderloin, and plenty of fruit and vegetables to keep her going. Her family has lots of warm soups on the menu this week:  Beef and Cabbage Soup, White Bean Chicken and Pesto Soup, Taco Soup, and Black Eyed Pea Soup. Roasted Chicken and Meatloaf round out the meals for the family this week.

Our Frugal Happy Life: Gluten-Free Menu Plan
Emily is making Tacos this week using a recipe for a homemade taco seasoning mix. She’s also planning on Monterey Chicken, Pizza Pie, and Taco Dip. She also plans on celebrating her anniversary a little early by eating out this week.

Menu Plan Jan. 14 – Hazelnuts

hazelnutsCheryl is hosting the Gluten-Free Menu Swap roundup this week with the theme of Hazelnuts at Gluten Free Goodness

I don’t typically use hazelnuts in my cooking. In fact, when I think of hazelnuts, I think of chocolate. Is that bad? I obviously need to think about using them in other ways. Maybe I can find a way to add them to my salads this week. Or perhaps consider using a hazelnut meal to coat fish. But, for now, I’m just thinking about making Elana’s Flourless Chocolate Hazelnut Cupcakes. :) For more variety of ideas using hazelnuts, check out Cheryl’s roundup at Gluten Free Goodness.
