ChocolateIt’s Chocolate Week at the Gluten-Free Menu Swap. My birthday is later this month, and for some reason when I think of my birthday, I think of chocolate. :) When I looked back at the last time we had chocolate as the theme for the menu swap, I saw that I had chosen it for my birthday then, too. I guess I have always thought of chocolate as the ultimate choice for treats, desserts, and celebrations.

Whether it’s brownies, cake, flourless chocolate torte, chocolate fondue, etc., I am of the opinion that the richer it is, the better. And, recent health studies agree.  One article and video at Medical News Today explains that chocolate with a high percentage of cocoa is good for you to eat. FitDay lists 6 health benefits of eating dark chocolate: Lower Blood Pressure, Helps Control Blood Sugar, Helps Prevent Cancer and Signs of Aging, A Cough Suppressant (really?), High in Vitamins and Minerals, and makes you Feel Happy. :) Wow, that’s a lot of good excuses to eat chocolate, right?

The Gluten Free Week: Gluten-Free
Lori says she has family birthdays this month, too. But, she’s not making desserts, yet. This week she has two meals with chocolate: Cincinnati Chili and Chicken with Mole Sauce. This week, her family will also be enjoying Chicken Marsala, Lentil Soup, Baked Salmon, and Tacos.

Mom’s Plans: Gluten-Free and Dairy-Free, and Paleo AIP Candida
Melissa says she can’t tolerate chocolate, so instead enjoys carob as a replacement. Another busy week for Melissa means a simple, but tasty, menu this week: Taco Salad, Pork Roast, Pumpkin Chili, Sloppy Joes, and Pasta with Ground Turkey.

The Girl Who Couldn’t Eat Anything: eating without Gluten, Dairy, Peanuts, Oats, or Meat
Elisabeth is a chocolate lover, like me! I like how she says that her “favorite chocolate is the kind with little sugar so you can really taste the chocolate.” This week, she’ll be making Lighter Chocolate Muffins, Triple Chocolate MilkshakeBittersweet Chocolate SyrupChocolate Chip LarabarsChocolate Almond Butter Banana Bread, and Paleo Chocolate Breakfast Cookies. Mmmm mmmm, that’s a lot of yummy chocolate! Her dinners this week include Pancakes, Hot Dogs and Beans, Tomato Cucumber Sandwiches, Chef Salad, Crockpot Sweet Potato Basil Soup, Pizza, and Fish.

SpringIt’s Coconut Week at the Gluten-Free Menu Swap. The roundup of menus is posted at GlutenFreeWeek, where Lori shares some recipes and lots of good information about coconut.

I’m not a big fan of coconut, so I don’t buy fresh coconut. I do, however, buy and use a variety of coconut products. I use Coconut Flour in baked goods, Coconut Oil for cooking and for making chocolate coating, Coconut Milk for making whipped cream, and Coconut Nectar and Coconut Crystals to replace sugar/honey. I even purchase, on occasion, So Delicious coconut milk yogurt and ice cream for a dairy-free treat.

SpinachIt’s Spinach Week at the Gluten-Free Menu Swap. I may be overdoing it a little, but I’m going to consume spinach every day this week. I have been doing really well lately to avoiding sugar and extra carbs. That is, until the Easter Bunny paid us a visit. ;) I’m hoping the spinach helps me feel a little more energized by the end of the week. I don’t have spinach planned for every dinner this week, but I will be adding it daily to smoothies for breakfast and in salads for lunch.

I’ve heard that because Kale has become the trendy green to eat these days, the market is experiencing a shortage this year. The price of Kale is also expected to rise, so don’t forget about spinach! It is full of good nutrition, too. It is very high in vitamins A, K, and C, as well as folate and manganese. I actually prefer spinach over kale to put in smoothies and salads. The tougher texture of kale, however, makes it a good choice  for cooking — sautéing, and adding to soups and casseroles. Whichever one you choose, you’ll be doing your body good by adding it to your menus.

Eggs — Gluten-Free Menu Plan April 14

EggsSince Easter is this Sunday, Eggs seemed like a fitting theme for this week’s Gluten-Free Menu Swap. Although eggs is one of the top eight allergens identified by the FDA, I’m happy to say that our family does not have a problem eating them (at least not that we’ve discovered, yet!).

I like to hard-boil eggs and keep them in the refrigerator for a quick way to add protein to breakfast or lunch. For all those hard-boiled, decorated Easter eggs you may have left after the holiday, you may want to consider making Creamed Eggs for breakfast or My Favorite Egg Salad for lunch.

We also use eggs in most of our baked products: Cornbread, Banana Coffee CakeChocolate Chip Banana Mini-MuffinsCinnamon RollsKing Cake, etc. For other treats, I like to use egg whites to make Meringue Tarts and  Cookies and egg yolks to make Chocolate Creme Brulee.

For dinner this week, she’ll be having Pancakes, Tacos, Tuna Fish and Apple Salad, Cauliflower Alfredo, Pizza, and Pink Panther Smoothie.

Beets — Gluten-Free Menu Plan April 7

SpringThis week’s theme for the Gluten-Free Menu Swap is Beets. 

I don’t eat beets. I’ve tried them a couple times, but was never really motivated to eat more. It did, however, get my attention at the market last week. I’ve heard people rave about eating them roasted or pickled, and even grilled. So, I thought I should take another look at this root vegetable.

According to this article at Mercola, beets have numerous health benefits:  They can help lower blood pressure, increase stamina, fight inflammation,  support detoxification, and more. So, I went looking for some new recipes and methods for cooking beets.

In addition to those this week, she’ll be having Sirloin Steaks, Chicken Pho, Beef Stir-Fry, Black Bean Soup, Baked Potatoes, and Fish Sticks.

The Peaceful Mom: Simple Gluten-Free Menu
No beets in Kimberlee’s menu this week. She’ll be making Southwest Chicken Chili, Baked Potatoes, Baked Spicy Chicken Thighs, Fettuccine Alfredo, Taco Bowls, and Hot Dogs.

Mom’s Plans: Gluten-Free and Dairy-Free, and Paleo AIP Candida
No beets for Melissa this week either. Instead, she’s planning for Beef Roast with Potatoes, Pumpkin Chili with Turkey, Chicken Apple Sausage with Kale and Rice, Hamburgers, and Tuna Noodle Casserole.
