I hope everyone had a nice weekend. We had a fun Easter celebration with family, a good spring break, and now are ready to get back to our regular schedule. Well…I am ready to get back to it. And I’m starting with a menu plan.
This week’s theme for the Gluten-Free Menu Swap is Avocado. Since taking dairy out of my diet, I seem to be using avocado more often. I find that avocado slices can be a good substitute for cheese when I feel like my sandwich or salad is missing a little flavor. And apparently, I’m not the only one: I found this great nutritional comparison of a few slices of avocado with a couple TBSP of butter and a slice of cheddar. The California Avocados website also has some interesting recipes, including desserts which I’ve never really considered for avocados.
Thinking about all the hard-boiled, and colored Easter eggs I have in my refrigerator, I’m planning on making egg salad sandwiches with slices of avocado this week. I also like to make up guacamole frequently. I may spread it on sandwiches or add it to a plate of chips with tomatoes and refried beans. Can I call that nachos if it doesn’t have cheese on it? Pizza with fresh slices of avocado, Avocado Salsa, or just half an avocado with a scoop of salsa in the middle…it all sounds good to me. Celiac Family’s Menu This Week:
Monday - Starting out this week with Easter meal leftovers! Ham, Potato and Green Bean Salad, etc.
Tuesday – Beef and Broccoli Stir-Fry. We didn’t get to eat this last week, so I’ll try again this week.
Wednesday - Egg Salad Sandwiches with avocado slices served with a fresh Berry Salad
Thursday – California Chicken (grilled chicken breasts with slices of Monterey cheese (for some) and avocado) served with twice-baked potatoes
Friday - Chicken Taquitos (with slow-cooked shredded chicken) served with a Corn and Black Bean Salad and Guacamole
Saturday - Baked Chicken Nuggets, steamed green beans, and French fries
Sunday – Leftover Buffet
Gluten Free Menu Swap Roundup
Wendy and her family at Celiacs in the House indulged in avocados over the last few weeks when she found them on sale. She made lots of guacamole that she added to tacos, omelets, and salads, including an Avocado and Grapefruit Salad from Elizabeth Barbone’s new cookbook. Wendy even made a raw chocolate pudding with avocados! This week, her menu includes Stuffed Baked Potatoes, Grilled Chicken Thighs, Beef and Black Bean Tacos, Turkey Meatloaf, and more.
Renee at Beyond Rice and Tofu says she didn’t grow up eating avocados, but has learned to love them as an adult. She likes to eat them mashed and spread on a piece of toast or in a wrap with a little balsamic dressing. This week, she’ll be eating avocados with Savory Pinto Beans. Also on her menu this week is Chickpea Picatta, Curried Tofu, Creamy and Light Macaroni and Cheese, and Curried Lentils with Paneer.
Samantha at So Simply Good is another fan of avocados. She likes to eat it diced with chicken salad, sliced on burgers, blended into smoothies, mashed in guacamole, or just raw with salt and pepper. On her menu this week is Kale, Olive and Ham frittata from Eat Like a Dinosaur, Balsamic and Onion Pot Roast, Pork and Cabbage Stir Fry, Primal Chicken Tikka Masala, and even more yummy meals.
Angela at Angela’s Kitchen also finds the creaminess of avocados to be a good substitute for cheese, sour cream, and other dairy products. Like Wendy, Angela likes to use avocado in chocolate pudding. On her menu this week is Glazed Chicken Breasts, Pizza, GF Wrap Sandwiches, Nachos, and Hamburgers.
Emily at Our Frugal Happy Life isn’t eating avocados this week. However, her meal plan does have some tasty gluten-free meals planned: Carnitas, Cheeseburger Meatloaf, Roasted Potatoes, and Baked Creamy Chicken Taquitos.
Debbi at Debbi Does Dinner…Healthy and Low Calorie has a flavorful menu planned this week. I don’t see avocado on the menu, but you could easily add it to her Asian Broccoli Slaw Turkey Wrap or the Chickpea Salad Wrap on her menu. She will also be making Garlic Cheddar Chicken, Bacon Butternut Risotto, slow-cooked Orange Chicken, and more.

It’s Spring Break at my house this week. The kids are out of school and my husband is home, too! It’s busy, busy, busy, so let me get right to it. The theme for this week’s Gluten-Free Menu Swap is Easter, and it’s being hosted by Angela at Angela’s Kitchen.
I’m looking forward to hosting the Easter meal and celebration at my house this week. We’ll have an egg hunt for the kids and a holiday meal that will probably have more food than we can eat at one meal. For the meal, we’ll have a HoneyBaked Ham, Red Potato and Green Bean Salad, Carrot Cupcakes with Cream Cheese Frosting, and Chocolate Chip Cookie Baskets with Chocolate Eggs. Other family members joining us will fill in the menu with appetizers, salads, and some additional favorite dishes. Even though last week’s weather almost felt more like summer, it is officially spring! I’ve chosen a spring vegetable for the theme for this week’s Gluten-Free Menu Swap – Artichokes. Artichokes can be a nice way to slow down your meal. You know…steam it fresh, peel and eat each leaf one at a time. It’s kind of fun. Of course, most of us don’t have time to do that with our busy schedules. We’re rushing around and grabbing the can of artichoke hearts or maybe the jar of marinated artichoke hearts. And that’s good for me, too. I love to add the hearts to a salad or casserole.
According to Ocean Mist Farms, artichokes are a good source of Potassium, Magnesium, Vitamin C, Fiber, and Antioxidants. Wednesday - This busy night is going to be an easy soup and sandwich night.

Friday - Pizza using Bob’s Red Mill Mix, served with a Spinach Salad

Gluten Free Menu Swap Roundup
With the warm weather sending all the neighborhood kids outside to play, Paige at Not Missing a Thing! has had to figure out how to get a few extra servings from her meals for the visiting neighborhood kids. It sounds like summer already at her house. Well, I don’t know if she’s planning for it this week, but her meals of Meatloaf and Taco Soup with Cornbread seem like good choices for stretching the meals to add an extra guest. She’s also celebrating her daughter’s birthday with a Seafood Sampler on her menu this week.
Samantha at So Simply Good is trying some recipes from the new cookbook Eat Like a Dinosaur. I’ve been really intrigued by the book, and was hoping to take the kids to the book signing this weekend, but just couldn’t fit it into our schedule. On Samantha’s menu this week is Chicken Nuggets with Zucchini Latkes, 50/50 Burgers, Shakey Pork BBQ with Apple Bacon Slaw, Rat on a Stick, and so much more!
Wendy at Celiacs in the House is not a fan of artichokes, so you won’t find any in her menu this week. Like Samantha, Wendy is also cooking from Eat Like a Dinosaur this week. Her family really enjoys the Bacon, Kale and Black Olive Egg Pie. Also on Wendy’s menu this week, is Salmon Cakes, Soup or Chili with Slaw, and Soft Tacos.
Renee at Beyond Rice and Tofu is continuing with the Cookbook Inspiration theme from last week. She shares her list of favorites as well as a couple new ones that she’s using for this week’s menu. She’s making Roasted Tofu with Braised Brussels Sprouts, Chana Dal with Indian Spiced Roasted Cauliflower, Tofu Curry, and Mujadara with Kale Salad.
Rachel at Rachel Cooks has lots of hearty, family favorite meals on her menu this week. Rachel loves casseroles, and is making two chicken casseroles this week: Chicken Cordon Bleu and Buffalo Chicken. Then, it’s Nachos, Pizza and Wings for the kids. And for her husband, it’s Chili, Brats and Mashed Potatoes.

Good Morning, and welcome back to the Gluten-Free Menu Swap. This week’s roundup is being hosted by Wendy at Celiacs in the House. I have many cookbooks, some are dedicated to being gluten free, and some are not. The two latest additions to my library of cookbooks are Elisabeth Hasselbeck’s Deliciously G-Free and Denise Jardine’s The Dairy-Free & Gluten-Free Kitchen
.
A lot of Hasselbeck’s recipes
are similar to the foods I make at home – classic favorites and family-friendly. And there are some recipes that definitely inspire you to create your own versions: The Deliciously Sophisticated Omelet, Egg Muffins and Vegetable Fried Rice. Using simple ingredients, you can easily make these dishes your family’s favorites by mixing in what your family likes best. For the Egg Muffins, Hasselbeck even suggests letting each family member or guest add their favorite ingredients to the muffin cups before baking. Sounds like a great way to get my kids involved in the process.
There are many recipes in Jardine’s cookbook
that are new to me – new combinations, new ingredients, new ways to prepare dishes, etc. I found it to be a little intimidating because of that, but it’s also exciting to try something new. What’s really great about this cookbook is that the recipes are dairy-free. (My intolerance for dairy seems to have reached levels that seem to indicate an allergy, so I’ve been removing dairy from our meals and recipes.) This cookbook also has several recipes that would be easy to make your own just by changing out a few ingredients: Crab and Artichoke Frittata, Shepherd’s Pie, Pizza recipes for both a crispy and traditional crust, and Coconut Ice Cream. I’m planning on trying the Frittata, but I think I’ll try it with ham or prosciutto instead of crab. And, I’m really looking forward to trying the Coconut Ice Cream. I have some Andes chocolate mint chips that I think would be a great addition to it.

Sorry for the delay today. I sat down more than once this past weekend to write this week’s menu plan and each time I didn’t get very far. Each time I wrote, it was a few sentences about something different. There are lots of distractions going on for me and my family right now. Some good, some bad, and some just part of being a wife, mother, daughter, daughter-in-law, aunt, home-owner, volunteer, neighbor, blogger, etc. I’m sure you all know what I’m talking about.
Rather than show you the jumbled mess that I tried to write on several different occasions, let me just say that the theme for this week’s Gluten-Free Menu Swap is Eggs. I chose Eggs as the theme because I guess I’m already thinking about Easter. And…well, it’s getting to be the season for eggs. Yup, chickens will lay eggs more frequently during the seasons with more sunlight. (Of course, eggs are available year-round at the grocery stores because the chickens are exposed to artificial light to keep them laying.)
Breakfast seems to be the common meal of the day for eggs, but don’t forget about other meals, too. Egg salad, sliced hard-boiled eggs added to salads, quiche, frittatas, etc. are all good options for lunch and dinner, too! We recently ate at Austin’s Grill, where I found their Migas Plate (on their gluten-free menu) to be just what I needed to give me a boost of protein and energy. Does your family eat eggs? Gluten Free Menu Swap Roundup
Paige at Not Missing a Thing! cooks gluten-free, dairy-free, and egg-free, so no egg dishes in her menu this week. But don’t let that stop you from checking out her menu this week. She’s trying my Quinoa Indian Chicken and Paula Deen’s Swiss Steak in the crockpot. She also has a dairy-free Cream of Potato Soup that looks great. Her family will be celebrating St. Pat’s Day with Corned Beef and Roast Potatoes on Friday and Turkey and Mashed Potatoes on Saturday.
Rachel at Rachel Cooks is trying some new gluten-free meals this week. She’s starting her week with Seafood Alfredo, trying Schwann’s Fire Grilled Italian Cod, and is going to try making homemade Chicken Noodle Soup. She also has Burgers, Tacos and Herbed Pork Roast on the menu. She has a Breakfast night planned, too, and says she might make eggs, but I bet her son will be able to convince her to make Pamela’s pancakes instead.
Wendy at Celiacs in the House was fortunate to have her daughter home from college last week cooking and baking up lots of yummy things. This week, however, Wendy is cooking some recipes from some new gluten-free cookbooks. Kale, Bacon, and Black Olive Egg Pie sounds deliciously healthy! She also has on the menu Homemade Chipotle Chicken Rice Bowls, Vegetable Soup with flatbread, and Salmon and Quinoa Cakes. And check out her photo of tempting Turkey Burgers on waffle buns.
My Big Apology. I thought I was distracted this week? Well, I must have been even crazier last week, because I completely missed two menu plans that were linked in last week’s comments.
