There is so much you can do with them. They are naturally gluten-free and dairy-free. Perfect for most of us. (Of course, if you have a problem with eggs, this isn&#8217;t the cookie for you.) They are light and airy, crispy on the outside, a little chewy inside, and oh so yummy.</p>
<p>I&#8217;ve already shared the <a href="http://celiacfamily.com/baby-shower-recipes/" target="_blank">rubber duckies</a> and <a href="http://celiacfamily.com/menu-plan-october-24-spooky-delights/" target="_blank">ghosts</a> I&#8217;ve made in the past. Now, I&#8217;m sharing some that are more appropriate for this season: Snowmen and Christmas Trees!</p>
<h4>Basic Meringue Cookie Recipe</h4>
<p><strong><a href="http://celiacfamily.com/wp-content/uploads/2011/12/snowman.jpg"><img class="alignright size-medium wp-image-5809" title="snowman" src="http://celiacfamily.com/wp-content/uploads/2011/12/snowman-300x219.jpg" alt="" width="300" height="219" /></a>Ingredients:</strong></p>
<p style="padding-left: 30px;">2 large egg whites (at room temperature)<br />
1/4 tsp cream of tartar<br />
1/4 tsp almond extract (optional)<br />
food coloring (optional)<br />
1/2 Cup superfine sugar<br />
candy for decorating (optional)</p>
<p><strong>Directions:</strong></p>
<ol>
<li>Preheat the oven to 200° F. Line two cookie sheets with parchment paper.</li>
<li>In a medium glass or metal bowl, beat the egg whites until they become foamy little bubbles. Add the cream of tartar, almond extract, and food coloring. Continue beating at medium speed until soft peaks form. Gradually add in the sugar while beating until smooth and glossy and stiff peaks form.</li>
<li>Fill a piping bag with open or large round tip. (I used Wilton <a style="&amp;quot;border: none;" href="<a href=&quot;http://www.amazon.com/gp/product/B0000CFMLT?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000CFMLT&quot;>Wilton Disposable 12 Inch Decorating Bags, Pack Of 24</a><img src=" target=" mce_src=">disposable decorating bags</a>.) If you don&#8217;t have these, you can simply use a zip-style plastic bag and cut the tip off a corner to squeeze out the meringue.</li>
<li>Next add candy to finish the look.</li>
<li>Place in the oven and bake for 2-3 hours. (Smaller, thinner cookies will bake/dry out in 2 hours. Larger, fluffier cookies will need more time or they will be sticky on the bottom.)</li>
<li>Let them cool on the cookie sheets.</li>
<li>Place them on a plate to serve, or store in an airtight container.</li>
</ol>
<p><strong>Snowman Notes:</strong></p>

<li>I used <a href="http://www.amazon.com/gp/product/B000HDJZWO/ref=as_li_ss_tl?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B000HDJZWO">Enjoy Life Mini Chocolate Chips</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B000HDJZWO" alt="" width="1" height="1" border="0" /> for the eyes and buttons, and cut up <a href="http://www.amazon.com/gp/product/B0000DD8Y6/ref=as_li_ss_tl?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000DD8Y6">Tootsie Roll Midgees</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B0000DD8Y6" alt="" width="1" height="1" border="0" /> for the boots. I&#8217;m thinking now that I should&#8217;ve cut out some hats, too. <li>For the &#8220;carrot&#8221; nose on the snowmen, I used orange colored <a href="http://www.amazon.com/gp/product/B00006FMLY/ref=as_li_ss_tl?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B00006FMLY">Jimmies</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B00006FMLY" alt="" width="1" height="1" border="0" />.</li>
<li>I was able to make 15 snowmen from one recipe.</li>
</ul>
<p><strong>Christmas Tree Notes:</strong></p>
<ul>

Then, I made diagonal zigzags to finish the shape.</li>

I think I like them best plain.</li>
<li>For the star/diamond on the top of the tree, I didn&#8217;t have any star-shaped candies or sprinkles. Instead I cut mini marshmallows into thirds then covered with yellow sugar for the star/diamond on the tree. I gave the ends a little squeeze to make them diamond-shaped.</li>
<li>My kids thought the trees needed trunks, so I cut up Tootsie Roll Midgees into quarters.</li>
<li>I was able to make 20 Christmas Trees from one recipe.</li>
</ul>
<p>**Be creative and use whatever extra candy you have. These <a href="http://www.amazon.com/gp/product/B000OSGGTC/ref=as_li_ss_tl?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B000OSGGTC">Jumbo Star Sprinkles</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B000OSGGTC" alt="" width="1" height="1" border="0" /> would be great to use for stars on top of the tree. You could also use mini M&amp;Ms for the snowman buttons, or large ornaments on the trees.</p>

I always enjoy sweet potato casserole for the holidays. I usually prefer a crunchy pecan and brown sugar topping, but decided to change it up a little this year. I know some people always look forward to the toasted marshmallows on top. So, this year, I did both. This is now my favorite way to eat them. I&#8217;d like to think of this as a vegetable side dish, but really it&#8217;s sweet enough to call it dessert. This is the picture I took before baking. Sorry, I forgot to take the &#8220;after&#8221; shot.</p>
<h4>Gluten-Free Sweet Potato Casserole Recipe</h4>
<p><strong>Ingredients:</strong></p>
<p style="padding-left: 30px;"><span style="text-decoration: underline;">Main Ingredients:</span><br />
4 large Sweet Potatoes or Yams, peeled, cooked and mashed (about 4 lbs or 8 cups)<br />
3 Eggs, lightly beaten<br />
3/4 Cup Brown Sugar<br />
1/2 Cup Butter, softened<br />
1 TBSP Maple Syrup<br />
3/4 Cup Almond Milk (I used vanilla flavored.)</p>
<p style="padding-left: 30px;"><span style="text-decoration: underline;">Topping Ingredients:</span><br />
1 Cup Chopped Pecans<br />
1/2 Cup Brown Sugar<br />
1/4 Cup Brown Rice Flour<br />
1/3 Cup Butter, melted<br />
1 Cup Small Marshmallows</p>
<p><strong>Directions:</strong></p>
<ol>
<li>Cook and peel the sweet potatoes, or yams. I like to score the skin on the yams both around the middle and lengthwise. Then I put them into boiling water and simmer until they are fork tender (about 20-30 min.).</li>
<li>While the yams are cooking, combine the first four topping ingredients with a fork and set aside.</li>
<li>When the yams are done, remove them from the heat and drain the water. Cover with  cold water to cool down. If the skin hasn&#8217;t come off already, gently  pull the skin off.</li>
<li>Mash the yams and add the rest of the main ingredients. Combine thoroughly. You may want to beat the ingredients together for a smoother, fluffier texture.</li>
<li>Spread the yams/sweet potato mixture into a 9 x 13 baking dish. (You can cover with plastic wrap and place in the refrigerator at this point, if you are saving for the next day.)</li>
<li>Then top the yams with the mini marshmallows and pecan mixture in alternating diagonal stripes.</li>
<li>Bake at 350° F for 30-40 minutes, or until the yams are bubbly hot and the marshmallows are lightly browned.</li>
</ol>
<p><strong>Additional Notes:</strong></p>

<li>To make ahead: I made this the day before Thanksgiving, skipping step 2 and ending at step 5 the first day. On the morning of Thanksgiving, I took the dish out of the refrigerator and let set on the counter while I worked on step 2 of the directions and preheated the oven. I then finished the baking with steps 6 and 7.</li>
<li>If the marshmallows don&#8217;t brown after 40 minutes, put it under the broiler for a few minutes. But watch it carefully so it doesn&#8217;t burn.</li>

Most years, each person has already had a birthday cake to celebrate on their special day. So, when we finally all get together with aunts, uncles, cousins and grandparents, we often do something other than birthday cake for the dessert. Last year, we had chocolate fondue for dessert. This year, I decided to make a dessert pizza with fresh fruit.</p>
<p>It was a busy weekend for us, and I actually decided last minute what I was making, so I took a short cut and used <a href="http://www.amazon.com/gp/product/B000FPDYRQ?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B000FPDYRQ">Cherrybrook Kitchen Gluten Free Sugar Cookie Mix</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B000FPDYRQ" border="0" alt="" width="1" height="1" /> for the crust. (FYI: The mix can be made egg-free, dairy-free, and peanut-free.) I combined two mixes to make a 16&#8243; pizza crust. Then, I made a simple cream cheese spread to cover the huge sugar cookie crust, and topped it with slices of fresh fruit. It&#8217;s a simple and easy dessert, but very satisfying and pretty. You can use whatever fruit you have available. Make a design with the fruit, like I did, or simply pile it all on.</p>
<h4>Gluten-Free Fruit Pizza Dessert</h4>
<p><strong>Ingredients:</strong></p>
<p style="padding-left: 30px;">Sugar Cookie Dough (2 Cherrybrook Kitchen mixes, 1 Cup margarine, 1/2 Cup rice milk, 5 tsp vanilla)<br />
8 oz. cream cheese<br />
1/2 Cup powdered sugar, sifted<br />
Variety of fruit, sliced (I used 3 kiwis, a pint of strawberries and a handful of blueberries.)</p>
<p><strong>Directions:</strong></p>

Then roll, or press, out the dough to a 16&#8243; round. Remove the plastic wrap and slide the parchment paper with dough onto a <a href="http://www.amazon.com/gp/product/B0009EYIWI?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0009EYIWI">Pizza Pan</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B0009EYIWI" border="0" alt="" width="1" height="1" /> or cookie sheet.</li>
<li>Place the large cookie dough into the oven, and bake for 25-30 minutes, or until it starts to brown around the edges.</li>
<li>Remove the pizza crust from the oven and let it cool completely on a wire rack. The parchment paper will make it easy to slide the crust off the cookie sheet and onto the wire rack.</li>
<li>Mix up the cream cheese spread by thoroughly mixing together the cream cheese and powdered sugar.</li>
<li>Once the crust is completely cooled, spread the cream cheese/sugar mixture evenly over the top of the crust.</li>
<li>Now add the sliced fruit to the pizza. If you are going to make a fun design, I suggest you start in the middle and work your way out to the edges.</li>
<li>Cover with plastic wrap and chill in the refrigerator until time to serve.</li>

<li>Feel free to use any variety of fruit: berries, peaches, nectarines, mango, cherries, etc. You can also use bananas, but remember they will brown so add them right before you serve it.</li>
<li>Want more fruit? Cut thick slices, overlap the fruit, or just pile it all on. Get creative and have fun!</li>
<li>You can also use canned fruit, but be sure to drain any sauce or liquid completely from it, so it doesn&#8217;t make the pizza soggy.</li>
<li>Some of our family members added a scoop of vanilla ice cream to top their pizza slice. I don&#8217;t think it needs any topping, but if it sounds good to you, you may also consider topping with whipped cream, chocolate sauce, or a simple glaze.</li>
<li>You don&#8217;t have to make this as a round pizza. Use a baking sheet/jelly roll pan for the crust. Then, cut into squares for serving. Or, halve the recipe, press it into a 9&#215;13 pan, and bake it for about 15-20 minutes.</li>
<li>This is such an easy dessert to make, it would be a great project for the kids to make.</li>

Since we had the time, I decided to make the brownies into a fun flower bouquet.  I thought they turned out so cute, I might just use the idea for a teacher gift at the end of the year.</p>

<p><strong>Directions:</strong></p>
<ol>
<li>Mix the brownie batter according to the package or recipe instructions.</li>
<li>Lightly spray the pan with oil. Then, fill the pan cavities 3/4 full and bake at the recipe/package recommended temperature.</li>
<li>Bake for 25-30 minutes, or until done.</li>
<li>While the brownies are baking, prepare a vase for the brownie pops. I filled a ceramic vase with floral foam to hold the pops in place. You can cover the foam with tissue paper or wrapping paper to make it look prettier.</li>
<li>Cut the cupcake papers to make flower petals. Fold the paper liner in half twice, and cut the bottom out. <li>When the brownies are done, gently remove them from the pan and let them cool on a rack.<a href="http://celiacfamily.com/wp-content/uploads/2010/05/IMG_5852x.jpg"><img class="alignright size-thumbnail  wp-image-3708" title="IMG_5852x" src="http://celiacfamily.com/wp-content/uploads/2010/05/IMG_5852x-150x150.jpg" alt="" width="150" height="150" /></a></li>
<li>When the brownies have cooled slightly, slide a pop stick into each of the brownies.</li>
<li>If desired, dip the brownies into melted chocolate or candy and let  dry completely before putting on the paper petal ring.</li>
<li>If you&#8217;re not dipping the brownies into melted candy, simply slide the paper petal ring over the brownie pop and slide a pop stick into one side of the brownies. The stick will help keep the petals in place.</li>
<li>I made 16 brownie pops with one brownie recipe.</li>
</ol>
<p><strong>Additional Notes:</strong></p>
<p>You can really use your imagination to come up with more ideas on this one.</p>
<ul>
<li>I cut the edges of the paper liners on some of these to make more-defined flower petals. You could also cut petals out of construction paper or wrapping paper for brighter colors.</li>
<li>You can dip the brownie pops into a variety of colored candy melts, for a more vibrantly colored flower. Add sprinkles or sugar while the candy is still wet so it sticks.</li>
<li>Insert the pop sticks into the brownies at various angles, to give the bouquet some variety.</li>
<li>If you don&#8217;t have the pop sticks, try <a onmouseover="window.status='http://www.discountschoolsupply.com';return true;" onmouseout="window.status=' ';return true;" href="http://www.jdoqocy.com/click-3401003-10651292?url=http%3A%2F%2Fwww.discountschoolsupply.com%2FProduct%2FProductDetail.aspx%3Fproduct%3D325&amp;cjsku=325" target="_blank">Craft Sticks</a><img src="http://www.tqlkg.com/image-3401003-10651292" border="0" alt="" width="1" height="1" /> or chop sticks.</li>
<li>You can also make these without the sticks. Scallop the edges of the cupcake papers to look like a flower, but don&#8217;t cut out the bottom. Then, just place the brownie bites, flat side down, into the cupcake papers. A plate of these brownie flowers would be a great way to offer a treat at a party. And thanks to the papers, no plates or napkins would be needed.</li>
<li>These would make a great gift for teacher appreciation, mother&#8217;s day, or a flower theme party.</li>

It was so good, I just had to try to recreate it! I thought I did a pretty good job of coming up with a good recipe, though I don&#8217;t put in the Grand Marnier that I suspect the restaurant does. It does taste really good, but I find that an hour after eating it, I don&#8217;t feel so good. Too much dairy left me feeling bloated and lethargic.</p>
<p>So, when I read that Amy (of <a href="http://www.simplysugarandglutenfree.com/" target="_blank">Simply Sugar &amp; Gluten Free</a>) was hosting this month&#8217;s roundup for <a href="http://www.simplysugarandglutenfree.com/go-ahead-honey-its-gluten-free-guiltless-pleasures/" target="_blank">&#8216;Go, Ahead Honey, It&#8217;s Gluten Free&#8217; with a theme of Guiltless Pleasures</a>, I knew what I wanted to submit: A Gluten-Free and Dairy-Free Chocolate Creme Brulee recipe.</p>
<p>So, I started re-working my recipe to use coconut milk instead of milk or cream. Creating baked recipes is never easy for me because I am always distracted or interrupted by the phone, kids, schedules, etc. That means that measurements and directions often get messed up &#8212; like when I forgot to put the vanilla in, or when I put in whole eggs, instead of separating them like I intended to do. So, a few trials and errors later, I finally got it done.</p>
<p>It has a rich chocolate flavor and is quite satisfying. It is not as smooth and creamy as the original recipe with cream, but this delightful dessert is definitely a guiltless pleasure for me! I haven&#8217;t submitted a recipe for &#8216;Go Ahead Honey, It&#8217;s Gluten Free&#8217; before, but I am happy to present this recipe as my new Guiltless Pleasure. It&#8217;s not exactly an everyday recipe, but one that is easy to prepare, easier on the tummy, and oh so yummy.</p>
<h4>Gluten-Free/Dairy-Free Chocolate Crème Brûlée</h4>
<p><strong>Ingredients:</strong></p>
<h4><a href="http://celiacfamily.com/wp-content/uploads/2010/03/IMG_5495x.jpg"><img class="alignright size-medium wp-image-3482" title="IMG_5495x" src="http://celiacfamily.com/wp-content/uploads/2010/03/IMG_5495x-300x225.jpg" alt="" width="240" height="180" /></a></h4>
<p style="padding-left: 30px;">1 (15 oz.-can) Coconut milk (Don&#8217;t use the &#8220;lite&#8221; variety.)<br />
3.5 oz. of chocolate (I used a dark bar of 70% cocoa.); finely chopped<br />
5 Egg yolks<br />
1/3 Cup sugar<br />
1-1/2 tsp vanilla</p>
<p style="padding-left: 30px;">For sugar topping: 2 Tbsp sugar + 2 Tbsp brown sugar</p>
<p><strong>Directions:</strong></p>
<ol>
<li>Preheat oven to 300° F. Position oven rack in the middle.</li>
<li>Shake up a can of coconut milk. Then pour it into a saucepan and bring it to a simmer over medium heat. (If shaking the can of coconut milk didn&#8217;t blend the cream and liquid, be sure to whisk together until evenly blended.) Once the milk is simmering, remove it from the heat and pour in the chopped chocolate. Stir until the chocolate is completely melted and blended well with the coconut milk.</li>
<li>In a medium bowl, whisk together the egg yolks and sugar. Pour a  small amount of the hot chocolate mixture into the yolks and  thoroughly  whisk together. Then, slowly whisk in the rest of the  hot  chocolate mixture. Continue to whisk together until smooth. (It&#8217;s   important to do this slowly so you don&#8217;t cook the egg yolks with the hot   chocolate mixture.)</li>
<li>Whisk in the vanilla, and set aside to cool.</li>
<li><a href="http://celiacfamily.com/wp-content/uploads/2010/03/IMG_5479x.jpg"><img class="alignright size-medium wp-image-3483" title="IMG_5479x" src="http://celiacfamily.com/wp-content/uploads/2010/03/IMG_5479x-300x225.jpg" alt="" width="240" height="180" /></a>Place four 6-ounce <a href="&quot;http://www.amazon.com/gp/product/B00061N0QO?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B00061N0QO&quot;">ramekins</a> or custard cups in a baking pan. Fill the ramekins with the chocolate  mixture. Then fill the baking pan with water so it comes halfway up the  sides of the ramekins. Bake for 50-60 minutes, or until the custard is set.  Carefully remove the custards from the water and cool on wire racks.  Refrigerate the custards for 6 hours or overnight.</li>
<li>Preheat the broiler. In a small bowl, thoroughly combine 2 TBSP  sugar with 2 TBSP brown sugar, breaking up any clumps. Sprinkle the  sugar mixture evenly over the tops of the custards.</li>
<li>Broil the custards 2 inches from the heat source for 2-3 minutes to  melt the sugar. Watch the custards carefully so that the sugar melts and  lightly caramelizes but doesn&#8217;t burn. Let it stand for 5 minutes before  serving.</li>

I think it makes just the right shape for the basket.</p>

<h4>Chocolate Eggs in a Cookie Basket</h4>
<p><strong>Ingredients:</strong></p>
<p style="padding-left: 30px;">Chocolate Chip Cookie dough (I used <a href="http://astore.amazon.com/celifami-20/detail/B000EDBQ4M" target="_blank">Bob&#8217;s Red Mill Gluten-Free Chocolate Chip Cookie Mix</a>.)<br />
Candy-coated chocolate eggs (I used <a name="evtst|a|B0013KC21Q" href="http://www.amazon.com/Cadbury-Mini-Easter-Chocolate-Ounce/dp/B0013KC21Q%3FSubscriptionId%3D02E5W5871AJF7PMMMS82%26tag%3Dcelifami-20%26linkCode%3Dxm2%26camp%3D2025%26creative%3D165953%26creativeASIN%3DB0013KC21Q">Cadbury Mini Eggs</a><span>, but you can use M&amp;M&#8217;s Chocolate Eggs, too</span>.)</p>
<p><strong>Directions:</strong></p>
<ol>
<li><a href="http://celiacfamily.com/wp-content/uploads/2009/03/img_1985xx.jpg"><img class="alignright size-thumbnail wp-image-639" title="img_1985xx" src="http://celiacfamily.com/wp-content/uploads/2009/03/img_1985xx-150x150.jpg" alt="img_1985xx" width="150" height="150" /></a>Mix up chocolate chip cookie dough according to directions, and drop a large mounded tablespoon of dough into each tart impression in the pan.</li>
<li>Bake cookies in the tart pan according to the recipe directions.</li>
<li>When cooking is done, remove pan of cookies from the oven and press chocolate eggs into the center of each cookie tart. Leave in the pan for 5 minutes.</li>
<li>After 5 minutes, gently remove the cookies from the pan by grabbing the edges of the cookies and pulling out with a slight twisting motion. The pan will still be hot, so be careful not to touch it with your fingers!</li>
</ol>
<p><strong>Additional Notes:</strong></p>
<ul>
<li>If the cookies start to come apart while trying to remove, they are probably too soft and warm. Let them cool down for a few more minutes. If the cookies won&#8217;t move at all, they are probably too cool. Set them back in the oven for a couple minutes to warm them up. They should now release easily from the pan. (I&#8217;ve never had to spray my non-stick pan, but if yours isn&#8217;t a non-stick type, you may want to use a non-stick spray before dropping the cookie dough onto the pan.)</li>
<li>If you can&#8217;t get the chocolate eggs, or want to make these for another occasion, try using a different chocolate candy. These are really good with Reese&#8217;s Miniature Peanut Butter Cups or Hershey&#8217;s Kisses, too!</li>
<li>One batch makes about 24.</li>

And, although I haven&#8217;t spent a lot of time in New Orleans, I was reminded of the fun times and good food I&#8217;ve had there in the past. In the movie, there were scenes where Tiana (&#8220;the princess&#8221;) makes or powders beignets (pronounced ben-YAYs), a kind of doughnut that was made famous by <a href="http://www.cafedumonde.com/" target="_blank">Cafe du Monde</a> in New Orleans. While watching the scenes, I wondered about making these gluten free. Of course, I couldn&#8217;t find a gluten-free recipe, so I had to come up with my own.</p>
<p>I am so excited to share this recipe with you. I&#8217;ve never actually eaten a lot of beignets &#8211; only when I&#8217;ve been at the French Quarter in New Orleans. They really are a delicious treat. If you&#8217;re not familiar with them, I would describe them as a square doughnut, or bread dough deep fried into little square pillows, and topped with powdered sugar. They are so yummy! If you aren&#8217;t celebrating Mardi Gras with a <a href="http://celiacfamily.com/gluten-free-king-cake/" target="_blank">Gluten-Free King Cake</a> this year, then you should definitely indulge in these little gems.</p>
<h4>Gluten-Free Beignet Recipe</h4>
<p><strong>Ingredients:</strong></p>
<p style="padding-left: 30px;">1/2 Cup warm water<br />
1/4 Cup sugar<br />
2 tsp yeast<br />
3/4 Cup almond milk (Regular milk should work, too.)<br />
1/2 Cup butter, melted<br />
2 eggs, lightly beaten<br />
2 Cups brown rice flour (I use <a href="http://astore.amazon.com/celifami-20/detail/B00021639Y" target="_blank">Authentic Foods</a> finely ground.)<br />
1 Cup potato starch<br />
1/2 Cup <a href="http://astore.amazon.com/celifami-20/detail/B000216AEC" target="_blank">sweet rice flour</a><br />
1 Tbsp <a href="http://astore.amazon.com/celifami-20/detail/B000EDK7ZQ" target="_blank">xanthan gum</a><br />
1/2 tsp salt<br />
1 liter vegetable oil for frying beignets<br />
powdered sugar for dusting the beignets after cooking</p>
<p><strong>Directions:</strong></p>
<ol>
<li><a href="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5347x.jpg"><img class="alignright size-medium wp-image-3268" title="IMG_5347x" src="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5347x-300x225.jpg" alt="" width="210" height="158" /></a>You&#8217;ll need a large pot of vegetable oil to fry the beignets. Electric deep fryers are great for keeping the temperature consistent. However, you can use a pot of oil on the stove top, but you&#8217;ll need to watch the temperature closely. You should fry the beignets between 360° - 380° F.</li>
<li>Start by combining the yeast with the sugar and the warm water (110° - 115° F is recommended but I don&#8217;t usually check the temperature.) in a small bowl. Set it aside.</li>
<li><img class="alignright size-medium wp-image-3269" title="IMG_5348x" src="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5348x-300x225.jpg" alt="" width="210" height="158" />In a large bowl, mix together the brown rice flour, potato starch, sweet rice flour, xanthan gum, and salt. Add in the melted butter, milk, and eggs and mix thoroughly.</li>
<li>Now stir the yeast mixture into the flour mixture. The dough should start to pull together into a soft ball.</li>
<li>Turn the dough out onto a sheet of parchment paper and top with plastic wrap. Using a rolling pin, roll out the dough until it&#8217;s about 1/8&#8243; thick.</li>
<li>Using a pizza cutter, cut the beignets into 2-1/2&#8243; squares.<img class="alignright size-medium wp-image-3270" title="IMG_5349x" src="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5349x-300x225.jpg" alt="" width="210" height="158" /> You should be able to make 24 &#8211; 30 beignets.</li>
<li>Fry the dough in the heated oil 1 &#8211; 3 beignets at a time. Don&#8217;t fry too many at once, as it can lower the temperature of the oil too fast. Thus, inhibiting the beignets to puff up like they should. Once the beignets start to brown, flip them over using a slotted spoon or tongs. Once the beignets have been lightly browned on both sides, carefully remove them from the oil and place on paper towels to absorb extra oil. The beignets should only take one or two minutes to brown on each side.</li>
<li>Generously top each beignet with powdered sugar and serve while warm.</li>
</ol>
<p><strong>Additional Notes:</strong></p>
<ul>
<li>These aren&#8217;t terribly sweet. Most of the sweetness comes from the powdered sugar, so you can easily adjust it to your liking. You can even drizzle a little honey on it, like my husband did,  if you have a sweet tooth.</li>
<li>In case you&#8217;re wondering: I didn&#8217;t find it necessary to wait and allow the dough to rise. I simply cut them out and fried them up.</li>
<li>This dough wasn&#8217;t very sticky, so you might be able to roll out the dough without using the parchment paper and plastic wrap, but I find it convenient. A little dusting of potato starch on the counter and rolling pin should work fine.</li>
<li>Just roll out the dough once. I tried to re-roll the dough (balled it up and rolled it out again) to cut perfect squares. As a result, the dough fried up flat and a little tougher.</li>
<li>Watch the temperature of the oil while frying. If it&#8217;s too low, the beignets won&#8217;t puff up. If it&#8217;s too high, the center won&#8217;t cook through and will be a little gummy. If you&#8217;re having trouble, try putting two pieces of dough into the oil at a time when it&#8217;s at 380° F.</li>
<li>Although I don&#8217;t believe it&#8217;s traditional, I think these would be nice with a little cinnamon mixed into the dough. I might try that next time.</li>
<li>In order to save time for breakfast, the traditional meal time to eat these, make up the dough the night before and keep the dough in the refrigerator. In the morning, roll it out, cut it and fry.</li>

<p><strong>Directions:</strong></p>
<ol>
<li><strong><a href="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5118x.jpg"><img class="alignright size-medium wp-image-3222" title="IMG_5118x" src="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5118x-300x225.jpg" alt="" width="300" height="225" /></a></strong>Melt chocolate candy melts in the microwave. Start by melting at half power for about two minutes. Then, put in for another minute at a time to finish melting.</li>
<li>Fill about a third of each candy truffle mold with the melted chocolate. Push a nut into the melted chocolate in the mold. Then, finish filling the candy mold with more melted chocolate. Tap the mold on the counter to release any air bubbles.</li>
<li>Place the mold in the refrigerator for at least 30 minutes. Then, pull it out of the refrigerator, turn it upside down and pop the candies out.</li>
</ol>
<p><strong>Additional Notes:</strong></p>
<ul>
<li>The candy melts are so easy to work with, and they make very pretty, shiny candies. However, it isn&#8217;t as tasty as using good chocolate. (That doesn&#8217;t mean they didn&#8217;t disappear as quickly as I made them.)</li>
<li>For melting the candy melt discs, I used a <a href="http://www.amazon.com/gp/product/B0000VMBF6?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000VMBF6">plastic squeeze bottle</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B0000VMBF6" border="0" alt="" width="1" height="1" />.  It made it easy to melt the candy  and fill the candy mold. You can keep the bottle in a bowl of warm water to keep the chocolate warm while you&#8217;re filling the candy molds with nuts. Or, just pop it back into the microwave for a minute or two, if necessary.</li>
<li>You can, of course, melt the chocolate on the stove with a double boiler. Just be careful not to get any water into the chocolate, as it can make the chocolate seize.</li>

<h4>Delicious Chocolate-Covered Macadamia Nuts</h4>

<p>For an even better tasting candy, instead of raw macadamia nuts, I used Elana&#8217;s recipe for <a href="http://www.elanaspantry.com/candied-macadamia-nuts/" target="_blank">candied macadamia nuts</a> at Elana&#8217;s Pantry. It&#8217;s a pretty quick and easy recipe, and is a very tasty treat by itself. But, the sweetness of the agave nectar combined with the salt, and then roasted in the oven gives this chocolate candy another tasty layer which is delicious!</p>

<h4>Best Tasting, Addictive Chocolate-Covered Macadamia Nuts</h4>
<p>For the best tasting chocolate covered macadamia nuts, use the candied macadamia nuts and use real dark chocolate! Using real chocolate just makes these even better. In order to get the best looking results, too, you&#8217;ll have to temper your chocolate. I&#8217;m still trying to perfect the tempering process, but even if it doesn&#8217;t work for you it will be delicious! It just may not be as pretty. Un-tempered chocolate also has a tendency to bloom at room temperature. So, if you don&#8217;t temper your chocolate, eat them right away or store in the refrigerator.</p>
<p><strong>Valentine&#8217;s Day Treats</strong><br />

Just look at how quick and easy it is to have a chocolate dessert or snack ready.</p>
<p>I made these Chocolate Mini-Muffins for my daughter to take to school to share with her classmates. I  intended to make banana muffins, but didn&#8217;t have any ripe bananas. So, this is what I came up with at the last minute. I guess I should call them cupcakes because that&#8217;s really what they are. But, I didn&#8217;t frost them like cupcakes. I was trying to keep them from being too sweet. It didn&#8217;t matter to anyone in our house that they weren&#8217;t frosted, the muffins disappeared very fast! I did, however, manage to save a few of them to see how they would last. Thanks to the pumpkin, they were still moist after sitting on the counter (in a sealed container) for a few days.</p>
<p>I&#8217;m linking this to <a href="http://www.simplysugarandglutenfree.com/slightly-indulgent-tuesday-12809/" target="_blank">Slightly Indulgent Tuesdays</a> this week because the pumpkin adds to this treat a good amount of vitamin A, but adds no saturated fat or trans fat. And, no egg, oil or milk is needed to bake these; the pumpkin provides all the moisture needed. That&#8217;s good news for our friends with additional food allergies, too.</p>
<h4>Chocolate Pumpkin Mini-Muffins made with Betty Crocker&#8217;s Gluten-Free Chocolate Cake Mix</h4>

<p><strong>Ingredients: </strong></p>

<li>1 box <a href="http://celiacfamily.com/betty-crocker-mixes-giveaway/" target="_blank">Betty Crocker Gluten-Free Chocolate (Devil&#8217;s Food) Cake Mix</a></li>
<li>1-1/3 Cups of pumpkin (about 12 oz.)</li>
<li>1/2 Cup mini chocolate chips (optional)</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>Combine the ingredients and mix thoroughly.</li>
<li>Scoop batter into a <a href="http://www.amazon.com/gp/product/B00091PNE8?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B00091PNE8">Mini-Muffin Pan</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B00091PNE8" border="0" alt="" width="1" height="1" /> with <a href="http://www.amazon.com/gp/product/B0000AE61X?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000AE61X">paper liners</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B0000AE61X" border="0" alt="" width="1" height="1" /> or lightly sprayed with oil. You can also bake these on a flat baking sheet. Just place scoops of batter onto a baking sheet lightly greased or lined with parchment paper.</li>
<li>Bake in the oven for 10-12 minutes at 350° F.</li>
</ol>
<p><strong>Additional Notes:</strong></p>
<ul>
<li>Makes about 36 mini muffins.</li>
<li>No need to add egg, milk, oil, or anything else.</li>
<li>I used 1-1/3 cups pumpkin because I had it leftover from a pumpkin pie I made. You could probably use 1 Cup, but I wouldn&#8217;t try a whole can (15 oz.) of pumpkin.</li>
<li>The batter is very thick, so you can&#8217;t pour it into the muffin pans. I used a <a href="http://www.amazon.com/gp/product/B00004UE85?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B00004UE85">small cookie scoop</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B00004UE85" border="0" alt="" width="1" height="1" />, which gave it a round shape. Baking it did not make it spread. It actually kept its shape on a flat baking sheet.</li>
<li>Please note that these do not have a strong pumpkin flavor. I used the canned, plain, solid pack 100% pumpkin. I also didn&#8217;t add any pumpkin pie spices. You could certainly do that if you&#8217;re wanting more of that flavor. But, if you do want a pumpkin-flavored muffin, I would try it with Betty Crocker&#8217;s Gluten-Free Yellow Cake Mix and add in some pumpkin pie spices.</li>
<li>When I make these with chocolate chips, my kids think they taste like brownies.</li>

Although the poppy seed bread is cooked in a small loaf pan, it is really a cake. In my mind it&#8217;s too sweet and fine-textured to be considered a bread. But, we slice it like bread, and tradition says we call it bread.</p>
<p>Every year, my mom makes Poppy Seed Bread to give to friends and co-workers for the holidays. I, too, have continued this tradition. This year, rather than making it from scratch, I decided to take the easy way and use Betty Crocker&#8217;s Gluten-Free Yellow Cake Mix. I was a little concerned about the amounts, but was pleasantly surprised at how well it turned out. I added some flavorings and poppy seeds to the mix, as well as eggs, milk and oil. It made a very nice poppy seed cake that I then covered with a thin, sweet glaze.</p>
<p>These cakes can be made up in advance and frozen until time to give them away for the holidays. Once I&#8217;ve made the cakes and let them cool completely, I wrap each one individually with plastic wrap. Then, I place them in a zip-style plastic bag. Sealed like this, you can keep them in the refrigerator for at least a week, or in the freezer for several weeks. They will defrost quite quickly at room temperature. Or, defrost them in the refrigerator overnight.</p>
<h4>Poppy Seed Bread Made With Betty Crocker&#8217;s Gluten Free Yellow Cake Mix</h4>
<p><strong>Ingredients:</strong></p>
<p style="padding-left: 30px;"><span style="text-decoration: underline;">For the Cake:</span><br />
1 box Betty Crocker Gluten Free Yellow Cake Mix<br />
3 eggs<br />
2/3 Cup milk<br />
1/2 Cup vegetable oil<br />
1 TBSP poppy seeds<br />
1 tsp vanilla extract<br />
1 tsp butter flavoring<br />
1 tsp almond flavoring</p>
<p style="padding-left: 30px;"><span style="text-decoration: underline;">For the Glaze:</span><br />
1/2 Cup powdered sugar<br />
1/4 Cup granulated sugar<br />
1/4 Cup orange juice<br />
1 tsp vanilla extract<br />
1 tsp butter flavoring<br />
1 tsp almond flavoring</p>
<p><strong>Directions:</strong></p>
<ol>
<li><span style="text-decoration: underline;"><a href="http://celiacfamily.com/wp-content/uploads/2009/11/IMG_4813x.jpg"><img class="size-thumbnail wp-image-2724 alignright" title="IMG_4813x" src="http://celiacfamily.com/wp-content/uploads/2009/11/IMG_4813x-150x150.jpg" alt="IMG_4813x" width="150" height="150" /></a></span>In a medium mixing bowl, lightly beat the eggs. Then add in the remaining cake ingredients (cake mix, milk, oil, poppy seeds, vanilla extract, butter flavoring and almond flavoring). Mix until thoroughly blended.</li>
<li>Pour into greased, small/mini loaf pans. (I use an oil spray, but you can use butter or shortening.)</li>
<li>Bake for 40-50 minutes at 350° F.</li>
<li>Once baked, remove from the oven and cool in the pans on a cooling rack for 5 minutes.</li>
<li><span style="text-decoration: underline;"><a href="http://celiacfamily.com/wp-content/uploads/2009/11/IMG_4815x.jpg"><img class="alignright size-thumbnail wp-image-2726" title="IMG_4815x" src="http://celiacfamily.com/wp-content/uploads/2009/11/IMG_4815x-150x150.jpg" alt="IMG_4815x" width="150" height="150" /></a></span>While the cakes are cooling, make the glaze. Combine all the glaze ingredients and mix well.</li>
<li>Pour the glaze over each cake (still warm in the pan). Let it sit for 5 minutes, then remove and let it cool completely on racks.</li>
</ol>
<p><strong>Additional Notes:</strong></p>
<ul>
<li>I made three small loaves with this recipe, but probably could&#8217;ve made two slightly larger loaves. This recipe will also make one full-size loaf.</li>

I&#8217;ve used them over and over, washing each time in the dishwasher. If you&#8217;re wanting a more permanent solution, try these <a href="http://www.amazon.com/gp/product/B0000VLH06?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000VLH06">Mini Loaf Pans</a><img style="border:none !important; margin:0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B0000VLH06" border="0" alt="" width="1" height="1" />.</li>
<li>For presenting these as gifts, I usually keep the bread wrapped in plastic wrap and then tie it with a nice festive ribbon. For more color, you can use colored plastic wrap that is easy to find during the holidays. Sometimes I will also put the bread in a clear plastic gift bag, or treat bag and then tie with a nice ribbon. You can also use colored cellophane to wrap it, and tie with ribbon at both ends. It all just depends on how and when you want to present it.</li>
<li>If not giving these away as gifts, put them in the freezer. Then the night before Thanksgiving or Christmas, put them into the refrigerator to defrost overnight. By morning it will be a nice treat to eat for breakfast, or maybe a snack while opening stockings, with a cup of tea.</li>
