			<content:encoded><![CDATA[<p><a href="http://celiacfamily.com/wp-content/uploads/2011/12/cookielineup.jpg"><img class="aligncenter size-full wp-image-5805" title="cookielineup" src="http://celiacfamily.com/wp-content/uploads/2011/12/cookielineup.jpg" alt="" width="598" height="135" /></a>I&#8217;ve had so much fun making meringue cookies. There is so much you can do with them. They are naturally gluten-free and dairy-free. Perfect for most of us. (Of course, if you have a problem with eggs, this isn&#8217;t the cookie for you.) They are light and airy, crispy on the outside, a little chewy inside, and oh so yummy.</p>
<p>I&#8217;ve already shared the <a href="http://celiacfamily.com/baby-shower-recipes/" target="_blank">rubber duckies</a> and <a href="http://celiacfamily.com/menu-plan-october-24-spooky-delights/" target="_blank">ghosts</a> I&#8217;ve made in the past. Now, I&#8217;m sharing some that are more appropriate for this season: Snowmen and Christmas Trees!</p>
<h4>Basic Meringue Cookie Recipe</h4>
<p><strong><a href="http://celiacfamily.com/wp-content/uploads/2011/12/snowman.jpg"><img class="alignright size-medium wp-image-5809" title="snowman" src="http://celiacfamily.com/wp-content/uploads/2011/12/snowman-300x219.jpg" alt="" width="300" height="219" /></a>Ingredients:</strong></p>
<p style="padding-left: 30px;">2 large egg whites (at room temperature)<br />
1/4 tsp cream of tartar<br />
1/4 tsp almond extract (optional)<br />
food coloring (optional)<br />
1/2 Cup superfine sugar<br />
candy for decorating (optional)</p>
<p><strong>Directions:</strong></p>
<ol>
<li>Preheat the oven to 200° F. Line two cookie sheets with parchment paper.</li>
<li>In a medium glass or metal bowl, beat the egg whites until they become foamy little bubbles. Add the cream of tartar, almond extract, and food coloring. Continue beating at medium speed until soft peaks form. Gradually add in the sugar while beating until smooth and glossy and stiff peaks form.</li>
<li>Fill a piping bag with open or large round tip. (I used Wilton <a style="&amp;quot;border: none;" href="<a href=&quot;http://www.amazon.com/gp/product/B0000CFMLT?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000CFMLT&quot;>Wilton Disposable 12 Inch Decorating Bags, Pack Of 24</a><img src=" target=" mce_src=">disposable decorating bags</a>.) If you don&#8217;t have these, you can simply use a zip-style plastic bag and cut the tip off a corner to squeeze out the meringue.</li>
<li>Next add candy to finish the look.</li>
<li>Place in the oven and bake for 2-3 hours. (Smaller, thinner cookies will bake/dry out in 2 hours. Larger, fluffier cookies will need more time or they will be sticky on the bottom.)</li>
<li>Let them cool on the cookie sheets.</li>
<li>Place them on a plate to serve, or store in an airtight container.</li>
</ol>
<p><strong>Snowman Notes:</strong></p>
<ul>
<li><img class="alignright size-medium wp-image-5806" title="SnowmanCk" src="http://celiacfamily.com/wp-content/uploads/2011/12/SnowmanCk-300x225.jpg" alt="" width="300" height="225" />For the snowmen, I started by squeezing out a round shape of meringue for the head then moved to the middle and bottom to finish it.</li>
<li>I used <a href="http://www.amazon.com/gp/product/B000HDJZWO/ref=as_li_ss_tl?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B000HDJZWO">Enjoy Life Mini Chocolate Chips</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B000HDJZWO" alt="" width="1" height="1" border="0" /> for the eyes and buttons, and cut up <a href="http://www.amazon.com/gp/product/B0000DD8Y6/ref=as_li_ss_tl?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000DD8Y6">Tootsie Roll Midgees</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B0000DD8Y6" alt="" width="1" height="1" border="0" /> for the boots. I&#8217;m thinking now that I should&#8217;ve cut out some hats, too. What would Frosty be without a hat? <img src='http://celiacfamily.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </li>
<li>For the &#8220;carrot&#8221; nose on the snowmen, I used orange colored <a href="http://www.amazon.com/gp/product/B00006FMLY/ref=as_li_ss_tl?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B00006FMLY">Jimmies</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B00006FMLY" alt="" width="1" height="1" border="0" />.</li>
<li>I was able to make 15 snowmen from one recipe.</li>
</ul>
<p><strong>Christmas Tree Notes:</strong></p>
<ul>
<li><img class="alignright size-medium wp-image-5807" title="XmasTreesCk" src="http://celiacfamily.com/wp-content/uploads/2011/12/XmasTreesCk-300x225.jpg" alt="" width="300" height="225" />For the Christmas Trees, I started squeezing out the meringue at the top of the tree. Then, I made diagonal zigzags to finish the shape.</li>
<li>I tried two different sprinkles for the ornaments/lights on the trees &#8211; <a href="http://www.amazon.com/gp/product/B001K7Q5PQ/ref=as_li_ss_tl?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B001K7Q5PQ">Rainbow Sprinkles</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B001K7Q5PQ" alt="" width="1" height="1" border="0" /> and <a href="http://www.amazon.com/mn/search?_encoding=UTF8&amp;keywords=rainbow%20sparkling%20sugar&amp;tag=celifami-20&amp;ie=UTF8&amp;linkCode=ur2&amp;qid=1323046384&amp;camp=1789&amp;creative=390957&amp;rh=k%3Arainbow%20sparkling%20sugar%2Ci%3Agarden%23" target="_blank">Rainbow Sparkling Sugar</a><img style="border: none !important; margin: 0px !important;" src="https://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=ur2&amp;o=1" alt="" width="1" height="1" border="0" />. I think I like them best plain.</li>
<li>For the star/diamond on the top of the tree, I didn&#8217;t have any star-shaped candies or sprinkles. Instead I cut mini marshmallows into thirds then covered with yellow sugar for the star/diamond on the tree. I gave the ends a little squeeze to make them diamond-shaped.</li>
<li>My kids thought the trees needed trunks, so I cut up Tootsie Roll Midgees into quarters.</li>
<li>I was able to make 20 Christmas Trees from one recipe.</li>
</ul>
<p>**Be creative and use whatever extra candy you have. These <a href="http://www.amazon.com/gp/product/B000OSGGTC/ref=as_li_ss_tl?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B000OSGGTC">Jumbo Star Sprinkles</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B000OSGGTC" alt="" width="1" height="1" border="0" /> would be great to use for stars on top of the tree. You could also use mini M&amp;Ms for the snowman buttons, or large ornaments on the trees.</p>

			<content:encoded><![CDATA[<p><strong></strong><a href="http://celiacfamily.com/wp-content/uploads/2011/11/Thanksgiving-AM-300x215.png"><img class="alignright size-full wp-image-5741" title="Thanksgiving-AM-300x215" src="http://celiacfamily.com/wp-content/uploads/2011/11/Thanksgiving-AM-300x215.png" alt="" width="300" height="215" /></a>So how are you doing with Thanksgiving plans this year? Everyone has a different approach to managing a gluten-free diet during this festival of eating. Some people do all the cooking themselves and invite the family to their house. Some people go to another house, but take their own gluten-free meal with them. We usually do something in between and this year is going to be fairly simple for us.</p>
<p>My brother-in-law is hosting Thanksgiving at his house this year. So, for me, that means no extra housecleaning to do and no tables to set before the festive occasion. We will contribute to the feast, however, because we all like to bring something to help with the meal. I&#8217;ve confirmed that the turkey will be gluten free, but I know that not all the food will be gluten-free.</p>
<p>I do know that what we&#8217;ll be taking will be gluten free. We&#8217;ll take a raw <strong>vegetable platter with hummus</strong> that can double as an appetizer and as a vegetable side dish if necessary. My husband will be making a big pot of his famous <strong>garlic mashed potatoes</strong> to take. And, I&#8217;ll be making desserts to share with everyone. I&#8217;m going to make my grandmother&#8217;s recipe for <strong>pumpkin pie</strong> using <a href="http://www.amazon.com/gp/product/1572840994/ref=as_li_ss_tl?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=217145&amp;creative=399369&amp;creativeASIN=1572840994">Annalise Roberts&#8217;s recipe</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=1572840994&amp;camp=217145&amp;creative=399369" alt="" width="1" height="1" border="0" /> for gluten-free crust. I&#8217;m also going to make a dairy-free <strong>chocolate cream pie</strong>. I&#8217;ve seen two recipes recently that got my attention: Carol&#8217;s recipe at <a href="http://simplygluten-free.com/blog/2011/09/gluten-free-dairy-free-chocolate-cream-pie-recipe.html" target="_blank">Simply&#8230;Gluten-Free</a> and Shirley&#8217;s recipe at <a href="http://glutenfreeeasily.com/chocolate-silk-pie-recipe-gluten-free-dairy-free/" target="_blank">Gluten Free Easily</a>. I think I&#8217;ll also make some <strong>mini pumpkin muffins with a cream cheese frosting</strong> for the kids.</p>
<p>So that&#8217;s how we&#8217;ll be managing our Thanksgiving feast with friends and family. Gluten-free turkey, mashed potatoes, raw vegetables, and desserts will be plenty to fill us up. There will probably be other dishes we can eat as well, but as long as I know we have the basics covered, all will be good. We can feel comfortable knowing that we&#8217;re eating safely and just be thankful to enjoy the company of good friends and family.</p>

			<content:encoded><![CDATA[<p>Updated Feb. 2, 2011</p>
<p><a href="http://celiacfamily.com/wp-content/uploads/2010/01/IMG_6890x.jpg"><img class="alignleft size-medium wp-image-4957" title="IMG_6890x" src="http://celiacfamily.com/wp-content/uploads/2010/01/IMG_6890x-300x225.jpg" alt="" width="300" height="225" /></a>I’ve updated the Valentine Candy List. I made some <strong>changes to the list</strong>, as I did to the <a href="http://celiacfamily.com/gluten-free-halloween-candy/" target="_blank">Halloween Candy list</a> last October.</p>
<p><strong>How I created my list.</strong> First of all, you should know that the category I put the candy in is determined by me, a concerned parent, based on reading the ingredients, allergy statements, and cross-contamination warnings on candy packages I find in the stores in our area. I also review websites for product information and contact companies if necessary. If you see a date after the product, then that is the last date I actually read the label. If there is no date, then I reviewed and/or updated the information last month. If you see any statements in quotation marks, that means I have taken the wording directly from the packaging. If, while I’m shopping, I read allergy statements that refer to other allergens, I may include them in my list for people avoiding them. But, since I am concerned solely with gluten, I don’t always list all of the allergens. It&#8217;s always best if you can check the ingredients of the candy yourself because it can vary if they were packaged or manufactured in different facilities or on different dates. But let’s face it, there is a lot of different candy out there. So, I hope this helps some of you.</p>
<p><strong>I’ve reorganized the Valentine Candy List like the <a href="http://celiacfamily.com/gluten-free-halloween-candy/" target="_blank">Halloween Candy List</a>.</strong> The <strong>first, green section is candy that I believe to be safe</strong> for people avoiding gluten. I didn’t find any questionable ingredients on the labels, nor did I find cross-contamination warnings. Or, I was able to confirm with the company through their website or emails that the candy is safe. <strong>The second section I created is for questionable candies.</strong> These are candies that appear to have no gluten in the ingredients. However, I feel uncertain about its gluten status, or the candy packaging may include a statement that warns of possible cross-contamination with gluten. Whatever the case, I have listed the reason for being in this section so you can determine what you are comfortable eating. I personally do not eat any candy unless it is in the safe, green section. <strong>The last, red section is for the Unsafe Candy.</strong> This is the candy that I would tell anyone on a gluten-free diet to avoid. The packaging labels clearly state that the candy has gluten in the ingredients.</p>
<p>Now, my <strong>disclosure statement</strong>: I’m not a doctor, nor an expert about candy or gluten. I’m simply someone who has been trying to keep gluten out of my family’s diet for 5+ years. I hope that the information I’ve provided helps other families, too. If you find additions or corrections to make to the list, please put them in the comments so that others may benefit from the information. Thanks. Enjoy your <strong>Valentine’s Day Candy</strong>!</p>

<p><strong>Didn’t find a candy on the list?</strong> I can&#8217;t possibly be prepared to know the gluten content for every candy my kids might get. When something new comes home with no ingredient label, I go to the Internet and try to <strong>look up the manufacturer online</strong>. Many will list the ingredients of their products online. But if you can&#8217;t find the list of ingredients, be sure to <strong>check out their FAQ&#8217;s</strong> (frequently asked questions) page. I often find that companies will address the gluten-free question there. And, if you’re lucky enough to have a phone number for the company, give them a call. If they can’t answer your question, then don’t eat it. Better safe than sorry, don’t you think?</p>
<p><strong>Try my lists for <a href="http://celiacfamily.com/gluten-free-halloween-candy/" target="_blank">Halloween Candy</a> or <a href="http://celiacfamily.com/easter-candy/" target="_blank">Easter Candy</a>.</strong></p>

I always enjoy sweet potato casserole for the holidays. I usually prefer a crunchy pecan and brown sugar topping, but decided to change it up a little this year. I know some people always look forward to the toasted marshmallows on top. So, this year, I did both. This is now my favorite way to eat them. I&#8217;d like to think of this as a vegetable side dish, but really it&#8217;s sweet enough to call it dessert. This is the picture I took before baking. Sorry, I forgot to take the &#8220;after&#8221; shot.</p>
<h4>Gluten-Free Sweet Potato Casserole Recipe</h4>
<p><strong>Ingredients:</strong></p>
<p style="padding-left: 30px;"><span style="text-decoration: underline;">Main Ingredients:</span><br />
4 large Sweet Potatoes or Yams, peeled, cooked and mashed (about 4 lbs or 8 cups)<br />
3 Eggs, lightly beaten<br />
3/4 Cup Brown Sugar<br />
1/2 Cup Butter, softened<br />
1 TBSP Maple Syrup<br />
3/4 Cup Almond Milk (I used vanilla flavored.)</p>
<p style="padding-left: 30px;"><span style="text-decoration: underline;">Topping Ingredients:</span><br />
1 Cup Chopped Pecans<br />
1/2 Cup Brown Sugar<br />
1/4 Cup Brown Rice Flour<br />
1/3 Cup Butter, melted<br />
1 Cup Small Marshmallows</p>
<p><strong>Directions:</strong></p>
<ol>
<li>Cook and peel the sweet potatoes, or yams. I like to score the skin on the yams both around the middle and lengthwise. Then I put them into boiling water and simmer until they are fork tender (about 20-30 min.).</li>
<li>While the yams are cooking, combine the first four topping ingredients with a fork and set aside.</li>
<li>When the yams are done, remove them from the heat and drain the water. Cover with cold water to cool down. If the skin hasn&#8217;t come off already, gently pull the skin off.</li>
<li>Mash the yams and add the rest of the main ingredients. Combine thoroughly. You may want to beat the ingredients together for a smoother, fluffier texture.</li>
<li>Spread the yams/sweet potato mixture into a 9 x 13 baking dish. (You can cover with plastic wrap and place in the refrigerator at this point, if you are saving for the next day.)</li>
<li>Then top the yams with the mini marshmallows and pecan mixture in alternating diagonal stripes.</li>
<li>Bake at 350° F for 30-40 minutes, or until the yams are bubbly hot and the marshmallows are lightly browned.</li>
</ol>
<p><strong>Additional Notes:</strong></p>
<ul>
<li>To make ahead: I made this the day before Thanksgiving, skipping step 2 and ending at step 5 the first day. On the morning of Thanksgiving, I took the dish out of the refrigerator and let set on the counter while I worked on step 2 of the directions and preheated the oven. I then finished the baking with steps 6 and 7.</li>
<li>If the marshmallows don&#8217;t brown after 40 minutes, put it under the broiler for a few minutes. But watch it carefully so it doesn&#8217;t burn.</li>

The theme this month is <strong>Breakfast In Bed</strong>. How appropriate. It&#8217;s just in time to find some great ideas for <a href="http://en.wikipedia.org/wiki/Mother%27s_Day_%28United_States%29" target="_blank">Mother&#8217;s Day</a> (<a href="http://www.mothersdaycentral.com/when/" target="_blank">May 9th in the US this year</a>). I&#8217;m not exactly a &#8220;Breakfast in Bed&#8221; kind of girl, but I did think of a new recipe to share for breakfast. My mom made a great punch to go with our Easter brunch this year, and my dad decided to add it to some champagne. It was so wonderful, it inspired me to create my own champagne punch.</p>
<p>I knew I&#8217;d have to modify my mom&#8217;s recipe because I didn&#8217;t want a whole punch bowl filled with enough to serve a large party. (Without the champagne, this recipe makes a tropical juice punch that fills a 2-quart pitcher.) And while I was changing the recipe, I decided to change up some of the flavors, too. I think I&#8217;ll serve these Tropical Mimosas with my Banana Coffee Cake (<a href="http://celiacfamily.com/banana-coffee-cake/" target="_blank">regular</a> and <a href="http://celiacfamily.com/banana-coffee-cake-revised/" target="_blank">dairy-free</a>) and <a href="http://celiacfamily.com/berry-good-summertime-salad/" target="_blank">Berry Fruit Salad</a>. What an exquisite way to start the morning on Mother&#8217;s Day!</p>
<h4>Tropical Mimosas</h4>
<p><strong>Ingredients:</strong></p>
<p style="padding-left: 30px;">2 very ripe bananas<br />
24 oz. (3 Cups) <a href="http://www.amazon.com/gp/product/B001M1DTYU?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B001M1DTYU">pineapple juice</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B001M1DTYU" border="0" alt="" width="1" height="1" /><br />
16 oz. (2 Cups) orange juice<br />
12 oz. (1-1/2 Cups) <a href="http://www.amazon.com/gp/product/B001O2DJ4M?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B001O2DJ4M">mango nectar/juice</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B001O2DJ4M" border="0" alt="" width="1" height="1" /><br />
2 bottles of champagne or sparkling wine, chilled</p>
<p><strong>Directions:</strong></p>
<ol>
<li>Add all of the ingredients, except the champagne, to a 2-quart pitcher. Using an <a href="http://www.amazon.com/gp/redirect.html?ie=UTF8&amp;location=http%3A%2F%2Fwww.amazon.com%2Fs%3Fie%3DUTF8%26x%3D0%26ref_%3Dnb%5Fsb%5Fss%5Fi%5F1%5F10%26y%3D0%26field-keywords%3Dimmersible%2520blender%26url%3Dsearch-alias%253Daps%26sprefix%3Dimmersible&amp;tag=celifami-20&amp;linkCode=ur2&amp;camp=1789&amp;creative=390957">immersible blender</a><img style="border: none !important; margin: 0px !important;" src="https://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=ur2&amp;o=1" border="0" alt="" width="1" height="1" />, thoroughly blend the bananas and juice until frothy. (If you don&#8217;t have an immersible blender, just pour it all into a regular blender to mix it.)</li>
<li>Fill a <a href="http://www.amazon.com/gp/redirect.html?ie=UTF8&amp;location=http%3A%2F%2Fwww.amazon.com%2Fs%3Fie%3DUTF8%26x%3D0%26ref_%3Dnb%5Fsb%5Fss%5Fi%5F0%5F7%26y%3D0%26field-keywords%3Dchampagne%2520flutes%26url%3Dsearch-alias%253Daps%26sprefix%3Dchampag&amp;tag=celifami-20&amp;linkCode=ur2&amp;camp=1789&amp;creative=390957">champagne flute</a><img style="border: none !important; margin: 0px !important;" src="https://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=ur2&amp;o=1" border="0" alt="" width="1" height="1" /> half-way with champagne, then top with the juice.</li>
<li>To garnish, try a fresh pineapple or mango slice. Enjoy!</li>
</ol>
<p><strong>Additional Notes:</strong></p>
<ul>
<li>For a non-alcoholic version, add the punch to Ginger Ale instead of champagne.</li>
<li>Or, for a smoothie, add a cup of yogurt to the juice and give it a whirl in the blender.</li>

OK, it&#8217;s really a treat for me, but don&#8217;t tell them that. <img src='http://celiacfamily.com/wp-includes/images/smilies/icon_surprised.gif' alt=':o' class='wp-smiley' /> ) Chocolate eggs in a &#8220;basket&#8221; made of chocolate chip cookie dough &#8212; what could be better? You will need an <a href="http://www.amazon.com/gp/product/B002ANH0DK?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B002ANH0DK">Individual Tart Baking Pan</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B002ANH0DK" border="0" alt="" width="1" height="1" /> (also known as a tartlette pan). You may also be able to use a <a href="http://www.amazon.com/gp/product/B00091PNE8?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B00091PNE8">Mini Muffin Pan</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B00091PNE8" border="0" alt="" width="1" height="1" /> or muffin-top pan, but I&#8217;ve always used my non-stick tart baking pan. I think it makes just the right shape for the basket.</p>
<p><span style="color: #ffffff;">.</span></p>
<h4>Chocolate Eggs in a Cookie Basket</h4>
<p><strong>Ingredients:</strong></p>
<p style="padding-left: 30px;">Chocolate Chip Cookie dough (I used <a href="http://astore.amazon.com/celifami-20/detail/B000EDBQ4M" target="_blank">Bob&#8217;s Red Mill Gluten-Free Chocolate Chip Cookie Mix</a>.)<br />
Candy-coated chocolate eggs (I used <a name="evtst|a|B0013KC21Q" href="http://www.amazon.com/Cadbury-Mini-Easter-Chocolate-Ounce/dp/B0013KC21Q%3FSubscriptionId%3D02E5W5871AJF7PMMMS82%26tag%3Dcelifami-20%26linkCode%3Dxm2%26camp%3D2025%26creative%3D165953%26creativeASIN%3DB0013KC21Q">Cadbury Mini Eggs</a><span>, but you can use M&amp;M&#8217;s Chocolate Eggs, too</span>.)</p>
<p><strong>Directions:</strong></p>
<ol>
<li><a href="http://celiacfamily.com/wp-content/uploads/2009/03/img_1985xx.jpg"><img class="alignright size-thumbnail wp-image-639" title="img_1985xx" src="http://celiacfamily.com/wp-content/uploads/2009/03/img_1985xx-150x150.jpg" alt="img_1985xx" width="150" height="150" /></a>Mix up chocolate chip cookie dough according to directions, and drop a large mounded tablespoon of dough into each tart impression in the pan.</li>
<li>Bake cookies in the tart pan according to the recipe directions.</li>
<li>When cooking is done, remove pan of cookies from the oven and press chocolate eggs into the center of each cookie tart. Leave in the pan for 5 minutes.</li>
<li>After 5 minutes, gently remove the cookies from the pan by grabbing the edges of the cookies and pulling out with a slight twisting motion. The pan will still be hot, so be careful not to touch it with your fingers!</li>
</ol>
<p><strong>Additional Notes:</strong></p>
<ul>
<li>If the cookies start to come apart while trying to remove, they are probably too soft and warm. Let them cool down for a few more minutes. If the cookies won&#8217;t move at all, they are probably too cool. Set them back in the oven for a couple minutes to warm them up. They should now release easily from the pan. (I&#8217;ve never had to spray my non-stick pan, but if yours isn&#8217;t a non-stick type, you may want to use a non-stick spray before dropping the cookie dough onto the pan.)</li>
<li>If you can&#8217;t get the chocolate eggs, or want to make these for another occasion, try using a different chocolate candy. These are really good with Reese&#8217;s Miniature Peanut Butter Cups or Hershey&#8217;s Kisses, too!</li>
<li>One batch makes about 24.</li>

I've added quite a few this year. I even added a category for pre-filled plastic eggs. </span></p>
<p><span style="color: #800080;">Some items to note: 1) Cadbury's Creme Eggs don't have gluten listed in their ingredients this year. Yay! 2) The original Reese's peanut butter eggs and even the small size do not have gluten in the ingredients. However, there is wheat flour in the the Reese's miniature candies that are foil-wrapped, including the mini Reester Bunnies. Boo!</span></p>
<p><span style="color: #800080;">I've done my best to make accurate updates, and will continue to do so as I find more this month. If you happen to find a mistake, or question the gluten safety of the candy, please add a comment below so everyone can read and benefit from the discussion. Thanks, and have a Happy Easter!]</span></p>
<p>So I&#8217;ve been shopping at our local discount and grocery stores for gluten-free Easter candy. You&#8217;ll find my list of Safe and Unsafe Candy below. My determination of &#8220;Safe Gluten-Free Candy&#8221; and &#8220;Unsafe Candy&#8221; is based solely on me reading package labels at the stores in my area. After each &#8220;unsafe&#8221; candy, I have noted why I chose to consider it unsafe. Whether it has gluten in the ingredients or the possibility of trace amounts due to cross-contamination,  you can decide for yourself. Please keep in mind that products do vary their packaging and labeling, so it&#8217;s always best if you read the labels yourself. However, I know sometimes that isn&#8217;t always possible, especially this time of year when our kids are going to community egg hunts. So, here&#8217;s what I found in our stores. I hope it helps and gives you peace of mind while you enjoy the &#8220;Safe&#8221; Easter candies.<br />

And, although I haven&#8217;t spent a lot of time in New Orleans, I was reminded of the fun times and good food I&#8217;ve had there in the past. In the movie, there were scenes where Tiana (&#8220;the princess&#8221;) makes or powders beignets (pronounced ben-YAYs), a kind of doughnut that was made famous by <a href="http://www.cafedumonde.com/" target="_blank">Cafe du Monde</a> in New Orleans. While watching the scenes, I wondered about making these gluten free. Of course, I couldn&#8217;t find a gluten-free recipe, so I had to come up with my own.</p>
<p>I am so excited to share this recipe with you. I&#8217;ve never actually eaten a lot of beignets &#8211; only when I&#8217;ve been at the French Quarter in New Orleans. They really are a delicious treat. If you&#8217;re not familiar with them, I would describe them as a square doughnut, or bread dough deep fried into little square pillows, and topped with powdered sugar. They are so yummy! If you aren&#8217;t celebrating Mardi Gras with a <a href="http://celiacfamily.com/gluten-free-king-cake/" target="_blank">Gluten-Free King Cake</a> this year, then you should definitely indulge in these little gems.</p>
<h4>Gluten-Free Beignet Recipe</h4>
<p><strong>Ingredients:</strong></p>
<p style="padding-left: 30px;">1/2 Cup warm water<br />
1/4 Cup sugar<br />
2 tsp yeast<br />
3/4 Cup almond milk (Regular milk should work, too.)<br />
1/2 Cup butter, melted<br />
2 eggs, lightly beaten<br />
2 Cups brown rice flour (I use <a href="http://astore.amazon.com/celifami-20/detail/B00021639Y" target="_blank">Authentic Foods</a> finely ground.)<br />
1 Cup potato starch<br />
1/2 Cup <a href="http://astore.amazon.com/celifami-20/detail/B000216AEC" target="_blank">sweet rice flour</a><br />
1 Tbsp <a href="http://astore.amazon.com/celifami-20/detail/B000EDK7ZQ" target="_blank">xanthan gum</a><br />
1/2 tsp salt<br />
1 liter vegetable oil for frying beignets<br />
powdered sugar for dusting the beignets after cooking</p>
<p><strong>Directions:</strong></p>
<ol>
<li><a href="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5347x.jpg"><img class="alignright size-medium wp-image-3268" title="IMG_5347x" src="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5347x-300x225.jpg" alt="" width="210" height="158" /></a>You&#8217;ll need a large pot of vegetable oil to fry the beignets. Electric deep fryers are great for keeping the temperature consistent. However, you can use a pot of oil on the stove top, but you&#8217;ll need to watch the temperature closely. You should fry the beignets between 360° - 380° F.</li>
<li>Start by combining the yeast with the sugar and the warm water (110° - 115° F is recommended but I don&#8217;t usually check the temperature.) in a small bowl. Set it aside.</li>
<li><img class="alignright size-medium wp-image-3269" title="IMG_5348x" src="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5348x-300x225.jpg" alt="" width="210" height="158" />In a large bowl, mix together the brown rice flour, potato starch, sweet rice flour, xanthan gum, and salt. Add in the melted butter, milk, and eggs and mix thoroughly.</li>
<li>Now stir the yeast mixture into the flour mixture. The dough should start to pull together into a soft ball.</li>
<li>Turn the dough out onto a sheet of parchment paper and top with plastic wrap. Using a rolling pin, roll out the dough until it&#8217;s about 1/8&#8243; thick.</li>
<li>Using a pizza cutter, cut the beignets into 2-1/2&#8243; squares.<img class="alignright size-medium wp-image-3270" title="IMG_5349x" src="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5349x-300x225.jpg" alt="" width="210" height="158" /> You should be able to make 24 &#8211; 30 beignets.</li>
<li>Fry the dough in the heated oil 1 &#8211; 3 beignets at a time. Don&#8217;t fry too many at once, as it can lower the temperature of the oil too fast. Thus, inhibiting the beignets to puff up like they should. Once the beignets start to brown, flip them over using a slotted spoon or tongs. Once the beignets have been lightly browned on both sides, carefully remove them from the oil and place on paper towels to absorb extra oil. The beignets should only take one or two minutes to brown on each side.</li>
<li>Generously top each beignet with powdered sugar and serve while warm.</li>
</ol>
<p><strong>Additional Notes:</strong></p>
<ul>
<li>These aren&#8217;t terribly sweet. Most of the sweetness comes from the powdered sugar, so you can easily adjust it to your liking. You can even drizzle a little honey on it, like my husband did,  if you have a sweet tooth.</li>
<li>In case you&#8217;re wondering: I didn&#8217;t find it necessary to wait and allow the dough to rise. I simply cut them out and fried them up.</li>
<li>This dough wasn&#8217;t very sticky, so you might be able to roll out the dough without using the parchment paper and plastic wrap, but I find it convenient. A little dusting of potato starch on the counter and rolling pin should work fine.</li>
<li>Just roll out the dough once. I tried to re-roll the dough (balled it up and rolled it out again) to cut perfect squares. As a result, the dough fried up flat and a little tougher.</li>
<li>Watch the temperature of the oil while frying. If it&#8217;s too low, the beignets won&#8217;t puff up. If it&#8217;s too high, the center won&#8217;t cook through and will be a little gummy. If you&#8217;re having trouble, try putting two pieces of dough into the oil at a time when it&#8217;s at 380° F.</li>
<li>Although I don&#8217;t believe it&#8217;s traditional, I think these would be nice with a little cinnamon mixed into the dough. I might try that next time.</li>
<li>In order to save time for breakfast, the traditional meal time to eat these, make up the dough the night before and keep the dough in the refrigerator. In the morning, roll it out, cut it and fry.</li>

I made three different versions: Easy, Delicious, and Addictive! Plus, some heart-shaped ones for Valentine&#8217;s Day. Let me start with the easy recipe:</p>
<h4>Easy Chocolate-Covered Macadamia Nuts</h4>
<p><strong>Ingredients: </strong></p>
<p style="padding-left: 30px;">Whole Raw Macadamia Nuts<br />
<a href="http://www.amazon.com/gp/product/B00266PS0I?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B00266PS0I">Dark Cocoa Candy Melts</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B00266PS0I" border="0" alt="" width="1" height="1" /></p>
<p style="padding-left: 30px;">You&#8217;ll also need a <a href="http://www.amazon.com/gp/product/B0000CFO6Y?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000CFO6Y">Truffles Candy Mold</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B0000CFO6Y" border="0" alt="" width="1" height="1" />.</p>
<p><strong>Directions:</strong></p>
<ol>
<li><strong><a href="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5118x.jpg"><img class="alignright size-medium wp-image-3222" title="IMG_5118x" src="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5118x-300x225.jpg" alt="" width="300" height="225" /></a></strong>Melt chocolate candy melts in the microwave. Start by melting at half power for about two minutes. Then, put in for another minute at a time to finish melting.</li>
<li>Fill about a third of each candy truffle mold with the melted chocolate. Push a nut into the melted chocolate in the mold. Then, finish filling the candy mold with more melted chocolate. Tap the mold on the counter to release any air bubbles.</li>
<li>Place the mold in the refrigerator for at least 30 minutes. Then, pull it out of the refrigerator, turn it upside down and pop the candies out.</li>
</ol>
<p><strong>Additional Notes:</strong></p>
<ul>
<li>The candy melts are so easy to work with, and they make very pretty, shiny candies. However, it isn&#8217;t as tasty as using good chocolate. (That doesn&#8217;t mean they didn&#8217;t disappear as quickly as I made them.)</li>
<li>For melting the candy melt discs, I used a <a href="http://www.amazon.com/gp/product/B0000VMBF6?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000VMBF6">plastic squeeze bottle</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B0000VMBF6" border="0" alt="" width="1" height="1" />.  It made it easy to melt the candy  and fill the candy mold. You can keep the bottle in a bowl of warm water to keep the chocolate warm while you&#8217;re filling the candy molds with nuts. Or, just pop it back into the microwave for a minute or two, if necessary.</li>
<li>You can, of course, melt the chocolate on the stove with a double boiler. Just be careful not to get any water into the chocolate, as it can make the chocolate seize.</li>
</ul>
<p><span style="color: #ffffff;">.</span></p>
<h4>Delicious Chocolate-Covered Macadamia Nuts</h4>
<h4><a href="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5123x.jpg"><img class="alignright size-medium wp-image-3223" title="IMG_5123x" src="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5123x-300x225.jpg" alt="" width="300" height="225" /></a></h4>
<p>For an even better tasting candy, instead of raw macadamia nuts, I used Elana&#8217;s recipe for <a href="http://www.elanaspantry.com/candied-macadamia-nuts/" target="_blank">candied macadamia nuts</a> at Elana&#8217;s Pantry. It&#8217;s a pretty quick and easy recipe, and is a very tasty treat by itself. But, the sweetness of the agave nectar combined with the salt, and then roasted in the oven gives this chocolate candy another tasty layer which is delicious!</p>
<h4><span style="color: #ffffff;">..</span></h4>
<p><span style="color: #ffffff;">.<br />
</span></p>
<h4>Best Tasting, Addictive Chocolate-Covered Macadamia Nuts</h4>
<p>For the best tasting chocolate covered macadamia nuts, use the candied macadamia nuts and use real dark chocolate! Using real chocolate just makes these even better. In order to get the best looking results, too, you&#8217;ll have to temper your chocolate. I&#8217;m still trying to perfect the tempering process, but even if it doesn&#8217;t work for you it will be delicious! It just may not be as pretty. Un-tempered chocolate also has a tendency to bloom at room temperature. So, if you don&#8217;t temper your chocolate, eat them right away or store in the refrigerator.</p>
<p><strong>Valentine&#8217;s Day Treats</strong><br />
<a href="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5305x.jpg"><img class="alignleft size-medium wp-image-3224" title="IMG_5305x" src="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5305x-300x207.jpg" alt="" width="180" height="130" /></a><a href="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5298x.jpg"><img class="alignleft size-medium wp-image-3225" title="IMG_5298x" src="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5298x-300x225.jpg" alt="" width="180" height="130" /></a><a href="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5320x.jpg"><img class="alignleft size-medium wp-image-3226" title="IMG_5320x" src="http://celiacfamily.com/wp-content/uploads/2010/02/IMG_5320x-300x215.jpg" alt="" width="180" height="130" /></a>So, for Valentine&#8217;s Day, I made some of these with heart-shaped molds. I couldn&#8217;t find any candy molds that were deep enough to accommodate the macadamia nuts, so I used these <a href="http://www.amazon.com/gp/product/B002DM74BQ?ie=UTF8&amp;tag=celifami-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B002DM74BQ">silicone gelatin/ice cube molds</a><img src="http://www.assoc-amazon.com/e/ir?t=celifami-20&amp;l=as2&amp;o=1&amp;a=B002DM74BQ" border="0" alt="" width="1" height="1" /> I found at the dollar store.</p>
