Melissa is making blueberry pie and dairy-free cheesecake for Thanksgiving dessert this week. She has a traditional meal of Turkey, potatoes and gravy, sweet potatoes, and green beans planned for Thanksgiving dinner. For the rest of the week, her family will also be enjoying Chuck Roast, Hamburger Soup, Savory Southwestern Soup, Spaghetti, and Turkey Pot Pie.

ThanksGravyThe theme for the Gluten-Free Menu Swap this week is another important item to make sure is gluten-free at your Thanksgiving dinner:  Gravy and Sauces. 

Last week, we gave you some ideas about choosing a Gluten-Free Turkey, but now we need to make sure the gravy is gluten-free, too! It’s not as difficult as you may think.

Bon Apetit’s Test Kitchen has a great article online called How to Make Gluten-Free Gravy Taste Good. The article lists three different methods for making gravy. I make gravy at our house using the first option of using a cornstarch slurry instead of flour for thickening. That works good for us. The article also lists Arrowroot and King Arthur’s gluten-free flour as alternative options.

Need a gluten-free gravy recipe? Try one of these:

  • Gravy recipe at Nourishing Meals uses sweet rice flour or arrowroot powder.
  • Gravy recipe at Simply Gluten Free uses starch, stock, wine, heavy cream, etc.
  • Mushroom Gravy recipe at The Splendid Table  uses olive oil, mushrooms, cornstarch, etc.
  • Sausage Gravy recipe at Gluten-Free Homemaker uses bulk sausage, sweet rice flour, almond milk, etc.
  • Turkey Gravy recipe at Chef Janet uses rice flour, stock, herbs, etc.
  • Turkey Gravy recipe at Gluten-Free on a Shoestring uses a mix of flours (without xanthan gum), butter, etc.

Want to purchase a gluten-free mix to help you along the way?

You can even buy gluten-free prepared gravies and sauces. Imagine makes Turkey, Beef, and Vegetarian Wild Mushroom Gravies, as well as simmer sauces, that are all gluten-free.

Celiac Family’s Menu This Week:
For our menu plan this week, I’ll be using a cornstarch slurry to thicken the Teriyaki sauce, the Gumbo, and the gravy for chicken-fried steak and mashed potatoes.

Tuesday – Gumbo, Schar Ciabatta Rolls

Wednesday – Hamburgers, Sweet Potato fries, Yellow Squash

Thursday – Rotisserie Chicken, Daiya Cheezy Mac with Veggies

Friday – Chicken Chili with Avocado and Corn Tortillas

Saturday – Chicken Fried Steak with Gravy, Mashed Potatoes, Broccoli

SundayBaked Salmon with a Balsamic Glaze, Quinoa with leftover veggies

Gluten-Free Turkey — Menu Plan Nov. 9

ThanksTurkey1Continuing with Thanksgiving themes… this week’s Gluten-Free Menu Swap theme is Turkey.

Turkey is probably the most commonly served entree at Thanksgiving meals. And, although it may seem unnecessary (because it is), some whole turkeys you buy in the grocery store may contain gluten. This is due to the fact that broth is sometimes added to make turkey juicier and more flavorful. Broth does not necessarily contain wheat, but it could.

Fortunately, most whole turkeys, both frozen and fresh, are labeled to show they are gluten-free. Make sure you read the ingredient label. It’s always good to check for additives, even if you’re only expecting one ingredient: turkey!

Some brands of turkey to look for that claim to be gluten-free:

Butterball says their whole turkeys are gluten-free. “For our products that are packaged with gravy packets, the gravy packets are gluten free as well. The gravy contains rice flour instead of wheat flour and the modified food starch is corn based (as of 2007).”

Empire Kosher provides a long list of turkey products that are gluten-free.

Foster Farms says in FAQs: “Our fresh natural chicken, turkey and individually frozen chicken are gluten-free. Our ground chicken and turkey with natural flavors contain only spice extractives and are also gluten-free.” Check ingredient labels on other products.

HoneyBaked has a great Special Diets Wizard that allows you to check from a long list of potential allergens to find out what is safe for you to eat. Whole Roasted Turkey and Roasted Turkey Breast are listed gluten-free.

Honeysuckle White has many turkey products. Make sure you check the label, they clearly mark their Frozen Whole Turkeys as being Gluten-Free.

Jennie-O website provides a long list of gluten-free turkey products.

Mary’s Free Range Organic Turkeys are gluten-free.

Norbest allergen sheet states no gluten or gluten-derivatives, though the sheet was not available to read on the website when I published this post. Check the ingredient label before purchasing to confirm.

Organic Prairie Whole Young Turkey has one ingredient listed: turkey.

Perdue labels clearly indicate “Gluten Free.”

Plainville Farms FAQs on their website state that their turkeys do not contain gluten. However, their turkey gravy and homestyle dressing do contain wheat, so avoid those.

Shady Brook Farms has many turkey products. Make sure you check the label. They clearly mark their Frozen Whole Turkeys as being Gluten-Free.

Shelton’s has a long list of gluten-free and casein-free products, which includes whole turkeys, turkey chili, and turkey meatballs!

I hope this helps you shop for your Thanksgiving turkey. Once again, make sure you read the labels before purchasing and consuming a turkey to confirm the product is gluten-free.

HalloweenBrewThis week’s Halloween theme for the Gluten-Free Menu Swap is “Witches’ Brew and Cocktail Concoctions.” 

I couldn’t decide what to share this week — soups or drink recipes — so, I found some of each. I think these would all be fun for a Halloween party. And the Soup Shooters, of course, would also make a nice, warm bowl of soup for little ghosts and goblins to eat before a cool evening of trick-or-treating.
