I’ve been noticing “Cucumbers for Pickling” at the Famers’ Market this month. I’ve never made pickles myself, but would love to try making some Sweet Bread and Butter Pickles. I’m hoping to get the kids to help me with this quick and easy recipe at The Smitten Kitchen. If you’ve got a good recipe, send it my way.
Another cucumber delight I’ve been thinking about is Cucumber Sandwiches with a creamy garlic dill spread. I haven’t made them for years, but I’m thinking it is time. I’ll try to get a quick recipe for it posted this week.

Mom’s Plans: Gluten-Free, Dairy-Free Menu
This summer, Melissa’s family is enjoying a bounty of produce from their local CSA. Their menu this week starts with Chicken Tacos, Sauteed Zucchini and Garlic Scapes, Quinoa and Kale Patties, and Meatballs. It continues with Pasta with Asparagus and Cherry Tomatoes, Roasted Radishes, Ham and Roasted Cabbage, and Chicken Soup with Basil Pesto. She’s also planning to use up the excess produce by freezing an Easy Spinach Frittata and Chicken Apple Sausage and Kale Soup.
Angela’s Kitchen: Gluten-Free, Dairy-Free Menu
Angela says she makes pickles with her cucumbers, and adds fresh slices to salads. Dinners at her house this week will be Roasted Fish with Potatoes, Tomatoes and Olives, Beef and Almond Stir Fry, Chicken Breasts with Spicy Honey-Orange Glaze, Black Bean & Veggie Pizza, and Spicy Sweet Grilled Pork Tacos.
The Peaceful Mom: Simple Gluten-Free Menu
Kimberlee has a Fresh Tomato and Cucumber Salad on her menu this week. Also for dinner this week is Ham and Spinach Pasta, Crock Pot Ribs, Loaded Baked Potatoes, London Broil, Cheeseburgers, and BBQ Chicken Nachos.

Cucumbers are making a showing in Lori’s menu this week with Salmon with a Cucumber-Dill Sauce, Chicken Pitas, Quinoa Tabbouleh, and Cucumber Soup. Also on her menu this week is Greek Chicken with Yogurt Sauce and Lamb Burgers.
