The Gluten-Free Menu Swap is being hosted by Angela at Angela’s Kitchen this week. The theme is Ginger. And when you see how many recipes Angela has that use ginger, you will understand that ginger is one of Angela’s favorite flavors! I can personally say that her recipe for Ginger Snaps got rave reviews at my house, and from friends and family, too.
I don’t often buy ginger root for my recipes. Instead, I usually use ground ginger in my meals. I have only a few recipes to share that use ground ginger:
Celiac Family’s Menu This Week:
Monday – Crispy Orange Chicken. I bought some San-J Orange Sauce last week after seeing this quick and easy recipe at Delight Gluten-Free. Serving with jasmine rice and steamed broccoli.
Tuesday – Shirley’s Maple Glazed Pork Tenderloin, Red Potato and Green Bean Salad
Wednesday – Hamburgers, Sweet Potato Fries, Sautéed Spinach with Bacon
Thursday – Bacon-wrapped Chicken Tenders served with Quinoa with Broccoli and Mushrooms
Friday – Tilapia Fish Fry, Roasted Potatoes, Asparagus
Saturday – Rotisserie Chicken, Wild Rice Salad

I find I like ground ginger because it seems easier to spread out in a recipe. Whenever I’ve used fresh, I inevitably end up with a big bite of it and that’s a little bit painful!
Those egg rolls look so great – I’m sure we’ll be trying them soon!

Fresh ginger is so much different than ground ginger to me. I love using fresh ginger on roasted veggies. There’s a recipe from Kalyn’s Kitchen that features green beans, red peppers, garlic, and ginger that we just love!

Shirley – Thanks for your comments and your recommendation for Kalyn’s recipe. Sounds good. Our family does enjoy the maple glaze recipe, although I usually choose to sear the pork tenderloins over the stove and then finish the cooking in the oven.
