The theme at the Gluten-Free Menu Swap this month is Brassica Vegetables. Sometimes known as Cruciferous Vegetables, the brassicas include a large number of vegetables: cabbage, cauliflower, broccoli, Brussels sprouts, kale, arugula, watercress, radish, turnip, and other varieties.

Brassicas contain high amounts of vitamins A, C, and K. They are also good sources of iron, potassium, magnesium, folic acid and fiber. Eaten raw or cooked, there is sure to be a recipe to inspire you to eat more of these healthy veggies.
