Gluten-Free Cinco de Mayo and Spring Veggie Recipe Review — Menu Plan May 1

I’ve got a couple different things going on this week for the Gluten-Free Menu Swap: Cinco de Mayo and a follow-up to last’s month’s Spring Vegetable Theme.

Secondly, I wanted to share my thoughts on the last recipes from April’s spring vegetable theme before moving on to a new theme this month. I tried three more Gluten-Free Veggie Recipes last week with good results. 

I don’t usually like to eat kale raw, but I really liked Amy Green’s Kale-Carrot Slaw. Tearing the kale into small pieces made eating it a little easier. The carrots added a nice crunch, and the cranberries were a sweet punch of flavor. I was pleasantly surprised by the light dressing. I thought the salad was going to need more, but this was just perfect. I didn’t have any powdered stevia, so I used a few drops of the liquid stevia instead. Yummy!

The Basmati Rice with Peas, Mint, and Lemon was very good, but I didn’t execute the recipe as well as I should have. I made a larger batch of rice than I intended, so my proportions of the other ingredients were a little light. It was very tasty, but next time I’ll pay better attention to the recipe. Didn’t matter too much, everyone ate two servings of it anyway. Hard to go wrong with good ingredients, I guess. 🙂

I made the Slow-Cooker Raspberry Pork Stuffed Radicchio Wraps a little bit different from the recipe, too. I didn’t have raspberry juice, so I used pomegranate juice instead. I cooked it in our slow-cooker on high. I was running a little low on time, so I just cooked it on high and gave it a stir every now and then while I prepared the rest of dinner. I thought it had a nice flavor, though it wasn’t a big hit with the kids.

Saturday – Pizza, Rainbow Apple Salad

Sunday – Grilled Chicken with Spinach Salad
