For this month’s Gluten-Free Menu Swap, I’m trying some new recipes from some great gluten-free friendly cookbooks.
Last week, I tried three quick and easy recipes for our busy week with lots of evening activities.
The Beef and Broccoli Stir Fry from Lexi’s Clean Kitchen was a delicious, quick and easy meal to make for dinner. Everyone enjoyed this meal. The only thing I might change is to add more sauce. The kids thought it might be better with more sugar for added sweetness, but it was good the way it was.
Date Caramel and Apple Slices from The Gluten Free Cookbook for Families was a very fast and easy after-school snack to make. It was thicker than I was expecting, perhaps because I used solid coconut oil. I added some extra hot water and warmed it up to thin it out, but it was still like a peanut butter consistency. Honestly, it really didn’t bother us. We loved it with apple slices and pretzels, and I kind of like the idea of spreading it on some cookie wafters, too. 🙂
The Salmon with Tomato and Basil from The Allergy-Free Family Cookbook was a wonderful change to our menu. With all the simple, fresh ingredients, it was really quick to put together. I used parchment paper for the packets, but I’ve also cooked salmon in foil packets in the past. We will definitely make it again, even though not everyone in our family likes to eat salmon.
