For this month’s Gluten-Free Menu Swap, I tried twelve new recipes, each from a different gluten-free friendly cookbook.
Last week, I tried three comfort food recipes and they were all yummy.
The Cake Pops from The Paleo Kids Cookbook were a nice treat, but the chocolate coating was too thin for my liking. Instead of a 1/2 cup of chocolate chips, I used a whole pound of chocolate with the coconut oil. And I still double-dipped, for a nice thick chocolate.
The Chicken Hash Brown Patties from The Healing Kitchen turned out a little different from the recipe because I didn’t have the sweet potatoes needed. I made it using white potatoes. We all enjoyed them, but I topped mine with a slice of bacon, some chopped green onion, and a little mayonnaise.
