Gluten-Free Fresh Summer Produce — Menu Plan July 3

This month at the Gluten-Free Menu Swap, we’re exploring Summer Fruits and Vegetables.

We’ll start the month by enjoying Summer Berries. This is the best time for all kinds of berries: strawberries, raspberries, blueberries, blackberries, etc. I love to eat them raw, add to smoothies and salads, use in sauces and jams, and any other way I can think of. Here are some recipes to get you thinking of ways to enjoy these yummy berries in your meals.

Angela is enjoying the holiday week with some wonderful meals. She’s starting the week with a Mixed Greens Salad with Strawberries and Orange Poppy Seed Dressing and a Strawberry and Blueberry Shortcake. Her dinners for the week will be Calico Beans, Slow-Cooker Carnitas, One-Pan Kielbasa and Noodle Casserole, Chicken Pumpkin Enchilada Casserole, and Garlicky Shrimp Skewers.
