The Gluten-Free Menu Swap theme this month is Salad Dressings. 

It’s that time of year when I start craving salads of all kinds. The produce section is full of fresh leafy greens and other veggies. So this month, I’m going to explore some new salad dressing recipes. Do you have a quick, favorite dressing recipe that you use for your salads? This week I’m trying some oil and vinegar dressings.

Curry Chicken Salad

Baked Chicken Nuggets

Chicken Vindaloo

Monday – Teriyaki Chicken, Mix of Spring Greens and Shredded Carrots with Ginger Dressing

Tuesday – Curry Chicken Salad, Roasted Garlic Cauliflower

Wednesday – Parmesan Chicken Tenders, Strawberry Spinach Salad with Balsamic Vinaigrette

Thursday – Hamburgers, Sweet Potato Fries, Zucchini

Friday – Greek Pasta Salad with Chicken (using spaghetti squash instead of pasta)

Saturday – Chicken Vindaloo, Jasmine Rice

Sunday – Cobb Salad with Maple-Cider Vinaigrette
