Gluten-Free Spring Vegetable Recipes — Menu Plan April 24

The Gluten-Free Menu Swap theme this month is Spring Vegetables. 

The plan this month is: “Each week, I’m going to try a few recipes that feature spring-time vegetables. Then the following week, I’ll write a quick review on each of the recipes I tried.”

The plan worked better than the previous week. I was able to try four new recipes:

  • The Strawberry Arugula Salad with Sweet Cilantro Dressing was really good, but I changed up the dressing a bit. The garlic I had must have been really strong because I only used two cloves, and it was surprisingly strong on the garlic flavor. My husband LOVED it. I also added a little lime juice to the dressing, but only about 3/4 C oil. It makes a lot of dressing. I had plenty leftover for other meals. In fact, I liked the dressing on grilled chicken, too.
  • Turkey Taco Endive Boats was the favorite recipe of the week, although the endive was a little bitter for the kids. I loved the crunch of the endive. It makes a great alternative to tortillas or taco shells.
  • The Spring Detox Smoothie was interesting… kind of like drinking a salad. I guess I’m just so used to drinking fruit smoothies, that I wanted a little sweetness. So, I added a frozen banana and some strawberries. It was great, and I’m glad to know I got all the greens in my diet, too.
  • The Wilted Radicchio, Endive, and Asparagus Salad was very tasty. The balsamic and olive oil dressing was a really nice addition to the endive and radicchio. And the toasted pine nuts and asparagus were a wonderful combination of crunch and flavor. I had two large servings.
