This week’s Gluten-Free Menu Swap theme is Summer Squash. Don’t worry if you don’t have a garden teeming with squash, there is always an abundance at the farmers’ markets and the grocery stores this time of year.
Everyone in my family enjoys yellow squash and zucchini. I don’t usually do anything special to cook it. I slice them and toss them with a little olive oil and sea salt. Then, I either saute it on the stove or roast it in the oven. It’s all pretty quick and easy! This week, I’m going to try a couple new ideas: Stuffed Summer Squash and Grilled Summer Squash with a Mint Vinaigrette.
For more ideas, check out the Zucchini and Summer Squash Recipes I found a couple years ago. Sometimes I’m amazed at what people can do with these vegetables: muffins, bread, frittatas, and even pizza crust!

Lori likes to put zucchini in her Minestrone Soup. You’ll also find it in her Ground Turkey and Squash Pasta, which is on her menu this week. The rest of her menu this week includes Lasagna, Chicken Fried Rice, Lamb Burgers with Yogurt Sauce, Baked Salmon, and Baked Chicken Taquitos.
Angela’s Kitchen: Gluten-Free and Dairy-Free Menu
Angela joins us this week with a plethora of recipes to share: Sweet Bell Pepper Salad, Ground Turkey & Veggie Tortilla Casserole, Pizza Chicken, and Baked Eggplant Zucchini Spaghetti, to name just a few! Also on her menu this week is Zucchini Cake Pancakes, Pineapple Pork Chops, Tex-Mex Chili for the Slow-Cooker, Rainbow Quiche, Sticky Chicken Legs, and Savory Zucchini Pancakes. The Girl Who Couldn’t Eat Anything: eating without Gluten, Dairy, Peanuts, Oats, or Meat
Elisabeth says she prefers winter squash over summer squash. However, she has found some tasty ways to eat zucchini: Zucchini Spaghetti, Grilled Veggie Burritos, Zucchini Potato Bake and Fabulous Zucchini Grinders. She also found a variety of ways to eat zucchini in The Classic Zucchini Cookbook. For dinners this week, Elisabeth’s family will be enjoying Gluten-Free Waffles, Cumin Black Bean Quinoa Salad (adding zucchini), Broccoli Quesadillas, Pizza, and Smoothies.
