Gluten-Free Sweet Potatoes — Menu Plan October 30

The theme this week at the Gluten-Free Menu Swap is Sweet Potatoes. I love to eat sweet potatoes! Actually, I crave them if they don’t make it in to my weekly menus. They are a powerhouse of vitamins and minerals, especially Vitamin A and beta-carotene. Most of the time, I simply oven-roast peeled and chopped sweet potatoes tossed with a little olive oil and salt. At 375° F, the time to cook depends on the size of the pieces and how crispy or soft you want them.

I like to eat leftover sweet potatoes for breakfast. I may eat them warmed and mashed on toast. Sometimes I like to put them in gluten-free oatmeal drizzled with a little maple syrup. I also like to make Chocolate Chip Sweet Potato Muffins. I simply substitute sweet potato puree for the pumpkin. They are simply delicious. I can’t wait to try these recipes. Since my other addiction is chocolate, I’ll probably start with the Chocolate Sweet Potato Donuts and the Sweet Potato Avocado Brownie Bites.
