Gluten-Free Vegetable Dishes — Menu Plan December 18

We’re only a week away from Christmas, and continuing the Happy Healthy Holiday theme for the Gluten-Free Menu Swap. If you missed previous weeks, check out Healthier Gluten-Free Cookies and Healthier Gluten-Free Sweet Treats. This week, we’re sharing ideas for Healthy Holiday Vegetable Dishes. 

You may not think vegetable dishes need to be healthier, but I think there are simple changes to recipes that can improve veggie dishes. Many recipes add lots of unnecessary sugar, salt, cream and butter, which adds fat and calories, masks the natural flavors of the vegetables, and causes bloating and inflammation.  Instead, why not try recipes that include anti-microbial herbs, anti-oxidant fruits, and/or anti-inflammatory spices.

All of the recipes I found are Gluten-Free (GF) and Dairy-Free (DF). Some are also Paleo (P), and/or Vegan (V). Most of these recipes are also free of refined sugar, but that doesn’t mean they aren’t full of delicious flavor. Use these recipes as a guide to good health, and make any ingredient changes that work for you.

Cilantro Rice

Potato & Green Bean Salad

Grilled Flank Steak

Monday – Pizza, Raw Kale and Brussels Sprouts Salad with Tahini Maple Dressing

Tuesday – Taquitos with Mexican Chicken and Cilantro Lime Rice

Wednesday – leftovers

Thursday – Baked Ham, Red Potato and Green Bean Salad

Friday – Eating Out, maybe Chickfila

Saturday – Chili, Corndog Mini-Muffins

Sunday – Flank SteakRoasted Sweet Potatoes and Brussels Sprouts
