My schedule was so busy and hectic last week, that I had trouble following my menu plan. In fact, I had trouble even getting to the grocery store. So, this week, I’ve decided to go back to the quick and easy meals that I know will work for us. Hopefully, that will help me get caught up on all the chores that got neglected last week.
Angela at Angela’s Kitchen is hosting the Gluten Free Menu Swap this week. Her theme is Greens. Spinach has become one of my son’s favorite things to eat. He’ll eat it raw, right out of the fridge. So, greens for our family this week will include a Spinach Salad and Kale Chips. Check out what other gluten-free menu planners are eating this week at Angela’s Kitchen.

Friday – Haddock with a cornmeal breading, French fries and green peas
Saturday – Corned Beef with mashed potatoes and green beans
Sunday – Leftovers!

Sometimes the old reliable ones are the best ways to go. And yet it still looks like a colorful and delicious week. I can’t wait until berries really get into full swing…

I always look at your pictorial menu and think, wow, I wish I was eating at Heather’s house this week! Hope you have a more relaxing one … it can get so busy in our lives sometimes. Woohoo on spinach love and kale chips (although I still haven’t actually tried any)!
