My schedule was so busy and hectic last week, that I had trouble following my menu plan. In fact, I had trouble even getting to the grocery store. So, this week, I’ve decided to go back to the quick and easy meals that I know will work for us. Hopefully, that will help me get caught up on all the chores that got neglected last week.

Angela at Angela’s Kitchen ^[2] is hosting the Gluten Free Menu Swap this week. Her theme is Greens. Spinach has become one of my son’s favorite things to eat. He’ll eat it raw, right out of the fridge. So, greens for our family this week will include a Spinach Salad and Kale Chips.
