Menu Plan April 4 – Citrus

[2]You may think that it’s a little early in the season to be thinking of citrus fruit, but that’s the theme for this week’s Gluten-Free Menu Swap. If you’re like me, you use citrus juices and zest throughout the year to add to recipes. I’ve listed a few that I’ve been thinking about for Easter. I have even more recipes with citrus juices in my menu plan below. And don’t forget to check below my menu for this week’s roundup of other gluten-free menu plans.
Celiac Family’s Menu This Week:

Saturday – We really enjoyed the Socca Pizzas from Amy’s [11] new cookbook: Simply Sugar and Gluten-Free [12]. So, I think we’ll make them again. Pepperoni, Mozzarella and black olives seems to be the family favorite.
Sunday – Gotta love those easy leftover nights.
Gluten Free Menu Swap Roundup
Wendy at Celiacs in the House [13] says she bought a bag of lemons this week to make a lemon garlic dressing for salads. She’s also using lemon juice this week to make homemade ricotta cheese. Wendy has an exciting menu this week [13], starting with the Baked Coconut Curry Chicken and ending with Salmon with Brussels sprouts and caramelized red onion and balsamic vinegar.
There are lots of good ideas at Ginger Lemon Girl [14] this week with a full menu of gluten-free meals, including breakfast and lunch ideas, too. Carrie also offers a list of her Sunday Night Pre-Meal Preparations for the week’s meals, and directions for making a Quick Pantry Casserole. So what else is she eating this week? Roast Chicken, ground Turkey Tacos, ground Turkey Chili [15], Chicken Stir-fry, and more [14].
I’m not the only one thinking about lemons. Angela at Angela’s Kitchen [16] is thinking about them, too. She shares a newsletter link for her recipes for gluten-free Lemon Bars and Chicken with Apricot Sauce. Both look fabulous, but I’m also thinking about the Pork and Pineapple kabobs she has on her menu this week. Spinach burgers and Chicken Thai Pizza rounds out Angela’s menu this week [16].
Like Ginger Lemon Girl, Michelle at Gluten Free Smiles [17] offers lunch and breakfast ideas along with her dinner plan menu. Fresh orange juice, Sweet Lime Hummus, and Wendy’s Kale Pesto and Feta Shells [18] are just a few. For dinners, Michelle’s planning on Kale Avocado Salad over Quinoa, Chicken Fajitas, Steak and Spinach Salad, and more [17].
