Menu Plan August 1

By · Print This Post Print This Post

I needed a break last week, but I’m back with a meal plan this week. When I asked the family if they had any requests this week: I got “pizza” from my son and “something new” from my husband. So, as expected, the kids want the usual, and my husband is getting bored with the usual. So, I’ll try to do a little of both to keep everyone’s taste buds happy.

Cheryl at Gluten Free Goodness is hosting the Gluten Free Menu Swap this week with Peaches as the theme. I was intrigued this morning when I saw a recipe for a Green Bean Salad that includes peaches in it. I think that’s a good start for “something different” for my husband. I saw the recipe in a magazine I was reading at an appointment. I didn’t bother writing down the recipe, because I was sure I could find it online. But, I didn’t. So I may have to make up my own recipe. I believe it had green beans, sweet onions, olive oil, fresh rosemary, and peach slices. I’ll let you know what I come up with.

[…] Heather of Celiac Family is balancing different requests–the usual suspects for the kids, and new tastes for hubby. She even plans to make a green bean dish with peaches, and I hope to hear more! She’s also got peaches planned in an Indian Chicken dish. […]

Yum! Your menu, as always is delicious! I love the idea of peaches with green beans. Anything to get more peaches in. :)

I’m off to check out the pineapple mango salsa. Sounds so good!

The green bean salad turned out really good. I sauteed a sliced, vidalia onion in olive oil for about 5 min., then added fresh green beans, fresh rosemary, minced garlic, and a little salt, covered and cooked for about 10 more minutes. I turned off the heat, and then added 2 nectarines sliced and the juice from one lime. Tossed and covered. I served it warm, but not hot. It turned out better than I thought it would. The onions caramelized nicely, the beans were crisp-tender, and the peaches were soft but not mushy. It took some convincing to get my kids to try it, but they ate it. I may try it next time with lemon juice and basil.
