I needed a break last week, but I’m back with a meal plan this week. When I asked the family if they had any requests this week: I got “pizza” from my son and “something new” from my husband. So, as expected, the kids want the usual, and my husband is getting bored with the usual. So, I’ll try to do a little of both to keep everyone’s taste buds happy.
Cheryl at Gluten Free Goodness is hosting the Gluten Free Menu Swap this week with Peaches as the theme. I was intrigued this morning when I saw a recipe for a Green Bean Salad that includes peaches in it. I think that’s a good start for “something different” for my husband. I saw the recipe in a magazine I was reading at an appointment. I didn’t bother writing down the recipe, because I was sure I could find it online. But, I didn’t. So I may have to make up my own recipe. I believe it had green beans, sweet onions, olive oil, fresh rosemary, and peach slices. I’ll let you know what I come up with.
On Celiac Family’s Menu This Week:
Monday – Pizza. I’m using Bob’s Red Mill Mix tonight for the crust.
Tuesday – Pork Roast served with Green Bean & Peaches Salad.
Wednesday – Spaghetti and Meatballs served with a tossed green salad.
Thursday – Indian-Inspired Chicken Dish with peaches served over quinoa.
Friday – Tilapia with a Pineapple Mango Salsa served with Jasmine Rice and steamed broccoli.
Saturday – Cheeseburgers, steamed broccoli and corn on the cob.
Sunday – leftovers
