Ooooh, the peaches at the farmer’s market are so sweet and juicy right now. I bought so many, I had to make it the theme for the Gluten-Free Menu Swap this week. You need absolutely nothing but to rinse them and take a bite. But since I bought so many, I need a plan to eat them up before they start to rot.
For breakfast, I’ll be adding them into smoothies and making a Peach Compote to top French Toast (yum!). For lunch we’ll be eating juicy slices raw. And for dinners, I’ll be putting fresh peach slices in a spinach salad with a little Poppyseed Dressing. I’ll also be adding diced peaches to our Indian Chicken. Are you eating peaches this week? Saturday - Steak Fajitas with Bell Peppers and Onions served with Corn Tortillas

Gluten Free Menu Swap Roundup
