Back to School is the theme for the Gluten Free Menu Swap this week. Angela is hosting the roundup at Angela’s Kitchen, so be sure to check it out. I know many kids across the country are going back to school this month. My kids have another month to go, but that doesn’t mean I’m not thinking about it.
This will be a busy week for us, so a simple menu with little cooking is what I have planned. I’m putting the slow-cooker back to work with Shredded Mexican Chicken. It’s a popular choice at our house for easy, delicious meals. Perfect for school nights!
On Celiac Family’s Menu This Week:
Monday – Chicken Tacos with shredded chicken, refried beans, lettuce, tomatoes, black olives, and shredded cheese with corn tortillas
Tuesday – Salmon with a Balsamic Glaze served with rice and asparagus
Thursday – Eating Out – not sure where yet.
Friday - Grilled Steaks, mashed potatoes, steamed broccoli
Saturday – Roasted Chicken, spinach salad, corn
Sunday – Pizza. Everyone gets to build their own with their favorite toppings.
