Menu Plan August 8

Back to School is the theme for the Gluten Free Menu Swap this week. Angela is hosting the roundup at Angela’s Kitchen, so be sure to check it out. I know many kids across the country are going back to school this month. My kids have another month to go, but that doesn’t mean I’m not thinking about it.

This will be a busy week for us, so a simple menu with little cooking is what I have planned.  I’m putting the slow-cooker back to work with Shredded Mexican Chicken. It’s a popular choice at our house for easy, delicious meals. Perfect for school nights!

On Celiac Family’s Menu This Week:

Chicken Tacos

Baked Balsamic Salmon

Chicken Pizza

Monday – Chicken Tacos with shredded chicken, refried beans, lettuce, tomatoes, black olives, and shredded cheese with corn tortillas

Tuesday – Salmon with a Balsamic Glaze served with rice and asparagus

Wednesday – Taquitos. Using leftover chicken from Monday to make taquitos. Serving with guacamole and leftover rice from Tuesday.

Thursday – Eating Out – not sure where yet.

Friday – Grilled Steaks, mashed potatoes, steamed broccoli

Saturday – Roasted Chicken, spinach salad, corn

SundayPizza. Everyone gets to build their own with their favorite toppings.

I am really need to try the Mexican Chicken. Yum! My kids would love it! Your menu sounds so good. I better watch it, or my kids will sneak off to eat at your house. LOL!

I think the best thing about winter months is that it’s cool enough for me to break out the slow cooker! Just too hot here in the summer. I can’t wait to make your white chili–but for now, I’ll have to be content with the amazing fruits, veggies and mild nights.
when are your kids back to school?


Reading your menu plan (which is always delighful, of course!) reminds me I have veggies that need to be cooked! Sometimes they get hidden in the fridge. 🙁



Cheryl – We don’t wait for the cold weather to use the slow cooker. However, we certainly don’t use it as much during warmer months. During the school year, it’s so nice to have dinner cooked and ready when we come home from other activities. The kids go back to school right after labor day, so it won’t be long now before cooler weather and increased activity encourage its use.


Shirley – My veggies get hidden, too. I hate having to throw them out! Time for a salad, or maybe a salsa. 🙂
