Lisa - Thanks for your kind words. Have you tried making cheese bread rolls . I actually made them last week for hamburgers and they were so good. They were pretty quick and easy to make, too.

Heather,

My blog should be called confessions of a carb-aholic. I miss sub/hoagie rolls. I miss hamburgers on buns and up until I found Tinkyada pasta, I missed pasta. Sometimes I start to feel sorry for myself. My mom is 100% italian, need I say more? LOL. But then I found your blog and my outlook changed. Thank you for blogging. For me at least, it makes a difference.

Ooh, I love cinnamon. I always put a lot in oatmeal or cold cereal, and there's ample cinnamon in this week's baked oatmeal. My favorite though is cinnamon in savory dishes like a Moroccan chicken stew (recipe later). Here's my menu:

I've been lax on the meal planning for the last few weeks but am back on the wagon. I just posted my menu at http://greenvneck.blogspot.com/2009/12/menu-plan-monday.html. I think there's cinnamon in the Indian carrots and I usually sprinkle some on the sweet potato fries.

Thanks for stopping by, Lisa. Glad you found me.

Well, I guess that's why I post my menu. So others can see that a gluten-free meal can be normal, just without the gluten. :) It doesn't have to be difficult, and it doesn't have to be expensive. I find it's easier (and cheaper) to build your meals with naturally gluten-free foods: meat, vegetables, fruit, dairy, rice, potatoes, etc.

As for the buns, I don't usually bother. We usually just eat burgers as patties, though I sometimes buy GF buns (Kinnikinnick, Glutino or Schar) at the store. I don't bother making buns, though there are some good recipes (like The Gluten-Free Homemaker's) You can wrap burgers with lettuce if you want to eat with your hands, but what's the point when you can just eat them with a fork? My daughter won't eat the bun anyway.

We've tried lots of different things for pizza: made crust, bought crust mixes, bought frozen crusts, bought frozen pizzas, and tried at restaurants (Uno's and zPizza). There are lots of options, just have to find what works for you. And as for pasta... well, my kids don't eat it, so I don't cook it very often. Maybe it's because my son was so young when he was diagnosed, but neither of them will eat it. And, since it isn't necessary to have in their diets, I don't push it.

Like you, I do bake bread twice a week, and buy some gluten-free foods to keep in the pantry (like crackers and cereal). It seems normal to me. Do feel like your GF meals are not normal?

I have been reading your blog for a month now. My Intolerance is only newly discovered but I'm getting along very well. I just wonder, your menu seems so normal. When you say you are having Hamburgers so you not serve with Rolls? I make my own bread and go to the health food store in our small town for the pizza crusts and pasta.
