The Gluten Free Menu Swap is being hosted by Michelle at Gluten-Free Smiles this week. Her chosen ingredient is Chia Seeds. Are you familiar with them? Not the Chia Pets
that grow crazy hair on some terra cotta animal. Although, those are chia seeds, but they are used specifically to grow sprouts. These are either black or white seeds that are often ground up and added to recipes for its nutritional value. I’ve read that you can use them similar to flax seed, as a replacement for eggs and as an additional source of protein and fiber.
I was happy to have the menu swap theme this week as motivation to do something with the white chia seeds I have in my pantry. So, this morning I added a couple tablespoons of ground chia seeds to my bread mix. It turned out great – didn’t seem to change the flavor or texture. So, I think I’ll try adding some to the pizza crust and the pancakes I have planned this week, too. I’m not using them as a replacement of eggs, just as a boost of protein and fiber as well as other proteins and minerals.
Next week, Cheryl is hosting the GF Menu Swap with “food as love” as the theme. Sounds like a good theme for Valentine’s Day.

When I say it looks like a great week of eating at your house, I really mean it. Your new menu with photography is working for me. Such a great idea.

Love the way you’ll be using chia seeds this week, Heather! I use them most often in smoothies at the moment, but I like your ideas. And, folks like them better than flax meal for egg subs, so I’d like to try that some time, too.
