Happy New Year! I know I’m a little late, but I’m finally back. I didn’t intend to take such a long break between posts, but I guess I really needed it. I enjoyed time with family, and managed to get a little rest in between all the holiday activities.
I didn’t want another week to go by without posting a menu plan. But, since I am still trying to get those Christmas decorations put away, I’ve changed this week’s format a little to make it faster for me to post.
Wendy at Celiacs in the House is hosting the Gluten Free Menu Swap this week. She is cooking with lots of Winter Vegetables, so check out her menu plan this week for the roundup of winter vegetable recipes and menu ideas. I think I’m going to have to try Wendy’s tips for roasting root vegetables this week. Saturday – Chicken Tenders
Any easy evening of cooking: I’ll pop Bell & Evans frozen chicken tenders into the oven. I’ll serve them with French fries and steamed broccoli for a kids’ favorite meal.
Sunday – Leftovers!
