Menu Plan January 17

Happy New Year! I know I’m a little late, but I’m finally back. I didn’t intend to take such a long break between posts, but I guess I really needed it. I enjoyed time with family, and managed to get a little rest in between all the holiday activities.

I didn’t want another week to go by without posting a menu plan. But, since I am still trying to get those Christmas decorations put away, I’ve changed this week’s format a little to make it faster for me to post.

Wendy at Celiacs in the House is hosting the Gluten Free Menu Swap this week. She is cooking with lots of Winter Vegetables, so check out her menu plan this week for the roundup of winter vegetable recipes and menu ideas. I think I’m going to have to try Wendy’s tips for roasting root vegetables this week.  Next week, Angela is hosting the GF Menu Swap with slow-cooking as the theme, so be sure to come back next week to see what GF meals we’re cooking in the slow-cookers.

Celiac Family’s Menu This Week:

Monday - Cheeseburgers, Fries, Green Beans

Tuesday - Tilapia Parmesan, Rice, Broccoli

Wednesday - Chicken Enchilada Soup

Thursday - Hot Dogs baked in Pizza Dough, Roasted Veggies

Friday - Saucy Shrimp Dish (Bonefish Grill-style)



Saturday – Chicken Tenders
Any easy evening of cooking: I’ll pop Bell & Evans frozen chicken tenders into the oven. I’ll serve them with French fries and steamed broccoli for a kids’ favorite meal.

Sunday – Leftovers!
Another easy night of cooking. 🙂

Oh, I do love your new format. And kids never seem to outgrow the Bell & Evans chicken tenders. Mine just love those for quick meals when life is hectic.
