Happy New Year! I know I’m a little late, but I’m finally back. I didn’t intend to take such a long break between posts, but I guess I really needed it. I enjoyed time with family, and managed to get a little rest in between all the holiday activities.
I didn’t want another week to go by without posting a menu plan. But, since I am still trying to get those Christmas decorations put away, I’ve changed this week’s format a little to make it faster for me to post.
Wendy at Celiacs in the House is hosting the Gluten Free Menu Swap this week [3]. She is cooking with lots of Winter Vegetables, so check out her menu plan this week for the roundup of winter vegetable [3] recipes and menu ideas. I think I’m going to have to try Wendy’s tips for roasting root vegetables this week. Next week, Angela [4] is hosting the GF Menu Swap with slow-cooking as the theme, so be sure to come back next week to see what GF meals we’re cooking in the slow-cookers.
Celiac Family’s Menu This Week:
[5]Monday - Cheeseburgers, Fries, Green Beans
[6]Tuesday - Tilapia Parmesan, Rice, Broccoli
[7]Wednesday - Chicken Enchilada Soup
[8]Thursday - Hot Dogs baked in Pizza Dough, Roasted Veggies
[9]Friday - Saucy Shrimp Dish (Bonefish Grill-style)

Saturday – Chicken Tenders
Any easy evening of cooking: I’ll pop Bell & Evans frozen chicken tenders [10] into the oven. I’ll serve them with French fries and steamed broccoli for a kids’ favorite meal.
Sunday – Leftovers!
Another easy night of cooking.
