For my menu this week, I’m starting with some typical Celiac Family meals, and then trying three new ones with nuts. It may be a little ambitious trying three new recipes on my kids in one week, but I’m going to give it a try. Thursday – Pistachio Pork Tenderloin
I’ve been wanting to try this amazing recipe for a while now. Carol’s recipe calls for rolling the tenderloin in ground pistachios after stuffing it with a pistachio, cranberry and goat cheese mixture. Can’t wait to give it a try.
Saturday – Grilled Chicken with Cashew Sauce
I got my husband Alton Brown’s book Good Eats 2: The Middle Years for his birthday this month. I’m planning to try the simple recipe for Cashew Sauce to serve over grilled chicken.
Sunday – Leftovers
Gluten Free Menu Swap Roundup
Cheryl at Gluten Free Goodness likes to use nut butters in a lot of her baking and cooking, such as Nanaimo Bars Redux, Banana Mac Chip Cookies, and Sniffle Stew. For dinner this week, she’s having Baked Rosemary Chicken and Sweet & Spicy Moroccan Stew. Check it all out on her menu plan this week.
This week, Michelle at Gluten-Free Smiles shares a recipe for Sour Cherry Fudge with Pecans and Macadamia Yoghurt. She also has some very tempting meals on her menu this week, including Dairy-free Butter Chicken, Rice Wraps with Ginger Peanut Sauce, and Amy’s Turkey Burgers.
Wendy says her family doesn’t eat a lot of nuts at Celiacs in the House. But don’t let that stop you from checking out her menu, which should definitely keep her family warm through the winter storm hitting this week. You’ll find Caribbean Fisherman’s Pie, Winter Vegetable Cobbler, Beef and Black Bean Chili, and more hearty meals.
Angela at Angela’s Kitchen has been busy making gluten-free Girl Scout Cookies – Thin Mints, Trefoils, and Do-Si-Do’s! They look amazing. And she’s now on a quest to make the best flaky biscuits gluten-free and dairy free. Can’t wait to see the results from that. For meals this week, Angela is making Coconut-Spiked Pork with Quinoa and Peanuts, California Turkey Burgers, and more.
