The Gluten Free Menu Swap is here this week, and the theme is pineapple. The fresh pineapples in our local stores have been really good recently. It’s definitely a great time to buy a fresh one and chop it up. Plenty of grocery stores have freshly pre-cut pineapple to purchase, but you will pay a price for it. So, I prefer to cut them myself using a method similar to this one illustrated at Dole Fruit Hawaii.
Last week I enjoyed Nancy’s Tropical Black Bean Salad with pineapple and mango. This week I think I’ll make some Chicken and Pineapple Kabobs. Pineapple is great for Fresh Fruit Kabobs, too. Check the roundup below to see what other bloggers are doing with pineapple.

Gluten Free Menu Swap Roundup
Cheryl at Gluten Free Goodness likes to eat pineapple fresh, but also enjoys it frozen and pureed. What a great idea for the summer! Cheryl has Herb Salad with Salmon, Quinoa with wilted Mache and Kalamata Olives, and Roasted Cauliflower on her menu this week.
At Celiacs in the House, they eat pineapple fresh and frozen in smoothies, too. Wendy says they also dehydrate it for snacks. Another great idea! Her menu this week includes BBQ Chicken, Pizza, Grilled Salmon, and Spinach Feta Turkey Burgers with Sea’s Roasted Veggie and Quinoa Salad.
Renee from Beyond Rice and Tofu is starting her week with a couple Indian Vegetarian meals (Red Kidney Beans with Tomatoes and Chickpeas in Tomato, Ginger and Garlic) that sound very good and healthy. But her Spicy Tofu with Vegetables and Cucumber Salad sounds even better to me. And next week, Renee is hosting the Gluten Free Menu Swap with a theme of Light and Easy Meals for Summer. Kabobs seem like a super simple way to enjoy pineapple … savory or sweet.
We usually prefer the latter, but I don’t think we’d turn down one of your Chicken and Pineapple Kabobs, Heather. Yum!
